CALABRIAN MOJITO

Steps:
- For the infused rum: Place the chile flakes in the bottle of rum, seal and allow to steep for 24 hours, inverting the bottle every so often to agitate the chiles. Strain out the chile flakes and store the rum in an airtight bottle.
- For the mojito: In a cocktail shaker or mixing glass, lightly bruise the mint leaves with a muddler. Add the lime juice and sugar, and stir to dissolve. Add 1 cup of the infused rum and a few ice cubes; stir to combine (about 30 stirs). Top off with club soda and stir 3 times. Divide the cocktail among 4 glasses. Garnish with a mint sprig and serve with a straw.
MOJITOS BY THE PITCHER
I have served this to people who have sworn that they dislike mojitos and they love it. I believe it is the fresh ingredients and the use of sugar, instead of simple syrup, muddled together that makes this cocktail refreshing and delicious. It takes a little bit of work but the results are well worth it. Serve over ice.

- Muddle sugar and mint leaves together in pitcher until leaves are well broken down. Add limes and muddle until limes are juiced. Stir rum into sugar mixture; add club soda and stir until sugar is dissolved.

- Combine rum, sugar, and water in a larger container or 3-gallon cooler or drink dispenser until sugar is dissolved. Add mint, lemons, limes, and oranges and mix well. Allow flavors to combine for about 30 minutes. Pour lemon-lime beverage into rum-fruit mixture and stir to combine.

EASY MOJITOS
It's hard to find mojitos at any of the restaurants in the small town I'm stationed in, and when I tried to make my own using club soda, they never seemed to turn out right. Using lemon-lime soda also cuts down on the amount of sugar usually used.

MANGO MOJITOS
This recipe was a total accident. Never thought when I asked for light rum that I would be given mango-flavored rum, but it turned out wonderfully. Nice and tropical, yet has that cool, minty flavor.

Steps:
- Place mint leaves in a large drinking glass. Add 1 lime wedge; crush together with a muddler to extract juices. Add 1 more lime wedge and sugar; mix with the muddler until sugar is dissolved. Remove lime peels from the glass.
- Stir lemon-lime soda, club soda, and mango-flavored rum together in a measuring cup. Pour soda mixture over the mint mixture in the glass. Mix in ice. Garnish with 1 lime wedge.
