GLAZED RASPBERRY CRUMB CAKE

Glazed Raspberry Crumb Cake image

These decadent bars are reminiscent of a treat from your favorite coffee shop, and are good for breakfast or as an afternoon indulgence. If you're not a fan of raspberries, feel free to replace them with blueberries or blackberries. Or use a mix of all three, along with a mixed berry jam.

Provided by Food Network Kitchen

Categories     dessert

Time 1h30m

Yield 12 squares of glazed raspberry crumb cake

Number Of Ingredients 21

1 stick unsalted butter, at room temperature, plus more for the pan
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground ginger
1/2 teaspoon kosher salt
1/2 teaspoon baking soda
1/4 teaspoon freshly grated nutmeg
1 cup granulated sugar
2 large eggs
2 teaspoons pure vanilla extract
1 cup sour cream
2 cups fresh raspberries
1 cup raspberry jam
1 1/4 cups packed light brown sugar
1 cup all-purpose flour
1/2 cup rolled oats
1/2 teaspoon ground ginger
1/4 teaspoon kosher salt
1 stick plus 2 tablespoons unsalted butter, cut into pieces, at room temperature
1 1/2 cups confectioners' sugar, sifted
3 to 4 tablespoons fresh lemon juice

Steps:

  • Make the cake: Preheat the oven to 350˚ F. Butter a 9-by-13-inch baking dish and line with parchment paper, leaving an overhang on the long sides.
  • Whisk the flour, baking powder, ginger, salt, baking soda and nutmeg in a medium bowl. Beat the butter and granulated sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 2 minutes. Add the eggs, one at a time, scraping down the sides of the bowl in between, and beat until combined. Mix in the vanilla. Reduce the mixer speed to low; add the flour mixture in 3 additions, alternating with the sour cream, beginning and ending with the flour. Beat on high speed for a few seconds just until smooth. Spread the batter in the baking dish.
  • Arrange the raspberries evenly over the batter, pressing them in. Dollop the jam in the empty spaces, then gently smooth with a spoon so the surface is evenly covered with jam and raspberries.
  • Make the crumb topping: Stir the brown sugar, flour, oats, ginger and salt in a medium bowl. Add the butter and work it in with your fingers to form a sandy mixture with small to medium clumps. Sprinkle evenly over the raspberry layer. Bake until puffed and set and a toothpick inserted into the center comes out with a few crumbs and a little bit of jam, 50 minutes to 1 hour. Transfer to a rack and let cool completely, at least 1 hour. Remove from the pan and cut into 12 squares.
  • Make the glaze: Put the confectioners' sugar in a medium bowl; add the lemon juice, 1 tablespoon at a time, until the glaze is thin enough to drizzle. Drizzle over the cake and let set.

Provided by Pam - For the Love of Cooking

Categories     Breakfast     Dessert

Time 1h10m

Number Of Ingredients 17

¾ cup flour
⅔ cup brown sugar
2 tsp fresh lemon zest
½ tsp cinnamon
Pinch of salt
5 tbsp unsalted butter, at room temperature, diced
2 cups flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
8 tbsp unsalted butter, room temperature
1 cup white sugar
2 large eggs, room temperature
2 tsp vanilla extract
1 cup sour cream
1 cup fresh blackberries
½ cup fresh raspberries

Steps:

  • Preheat the oven to 350 degrees. Coat an 8-inch baking pan with cooking spray.
  • Make the lemony crumb topping by combining the flour, brown sugar, lemon zest, cinnamon, salt, in a small bowl; toss until well combined. Add the butter and mix thoroughly with a fork or your fingers until coarse crumbs form. Set aside until needed.
  • Make the berry coffee cake by mixing together the flour, baking powder, baking soda, and salt until well combined.
  • Using a mixer or hand mixer, beat together the butter and sugar until light and fluffy, about 3 minutes. Add the eggs one at a time, beating well after each addition. Add the vanilla and beat well.
  • Gradually add the flour mixture in 3 batches, alternating with the sour cream, beginning and ending with the flour. Hand mix until just incorporated.
  • Spoon half of the mixture into the prepared baking pan (the batter will be very thick!) then smooth with a spatula. Sprinkle most of the berries on top of the batter then top with the remaining batter and smooth with a spatula. Press the remaining berries into the batter. Spread the lemony crumb topping evenly over the top.
  • Bake for 55-60 minutes, or until a tester inserted in the center comes out clean. Remove from the oven and allow to cool completely on a wire rack.
  • Make the glaze by combining the powdered sugar, milk, and vanilla together until creamy, smooth, and desired thickness. Drizzle the glaze over the cooled cake and serve. Store any extra cake in an airtight container in the refrigerator. Enjoy.

LEMON BLUEBERRY COFFEE CAKE RECIPE BY TASTY

Lemon Blueberry Coffee Cake Recipe by Tasty image

This bright and fruity coffee cake is bursting with fresh whole blueberries, and lemony accents. A crunchy, buttery streusel serves as the topping, and it's finished with a generous drizzling of lemon-flavored icing.

Provided by Tasty

Categories     Breakfast

Time 1h20m

Yield 6 servings

Number Of Ingredients 20

nonstick cooking spray, for greasing
¼ cup granulated sugar
¼ cup light brown sugar
¼ cup all purpose flour
¼ cup unsalted butter, cut into small pieces, room temperature
1 cup fresh blueberry
1 ½ cups all purpose flour, divided, plus 1 tablespoon
1 ½ teaspoons baking powder
½ teaspoon kosher salt
½ cup unsalted butter, room temperature
¾ cup granulated sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
3 tablespoons fresh lemon juice
1 tablespoon lemon zest
½ cup whole milk, room temperature
1 ½ cups powdered sugar
1 teaspoon lemon zest
2 tablespoons lemon juice
1 tablespoon whole milk, plus more as needed

Steps:

  • Preheat the oven to 350°F (180°C). Grease an 8½ x 4½-inch (20 cm x 11 cm) loaf pan with nonstick spray. Line the pan with a piece of parchment paper so there's overhang on both of the long sides.
  • Make the streusel topping: In a medium bowl, combine the granulated and brown sugars, flour, and butter. Mix together with a fork or with your fingers until crumbly and the butter is broken down into pea-sized pieces, being careful not to overmix. Set aside.
  • Make the coffee cake: Add the blueberries to a medium bowl and toss with 1 tablespoon of flour. This will prevent the blueberries from sinking to the bottom of the pan while baking. Set aside.
  • In a large bowl, whisk together the remaining 1½ cups (155 G) flour, the baking powder, and salt.
  • In a separate large bowl, cream the butter and granulated sugar with an electric hand mixer on medium speed until pale and fluffy, about 4 minutes. Add the eggs, 1 at a time, making sure the first egg is fully incorporated before adding the next. Mix in the vanilla, lemon juice and zest, and milk until fully combined.
  • Add the dry ingredients to the wet ingredients and mix on low speed until fully combined. Add the blueberries to the batter and carefully fold with a rubber spatula to incorporate.
  • Pour the batter into the prepared loaf pan and spread evenly. Sprinkle the streusel topping evenly over the top.
  • Bake the coffee cake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  • While the cake bakes, make the lemon glaze: In a medium bowl, whisk together the powdered sugar, lemon zest, lemon juice, and 1 tablespoon of milk until the sugar is dissolved. Add more milk, 1 tablespoon at a time, until the glaze reaches your desired consistency.
  • Let the cake cool in the pan for 10-15 minutes, then use the parchment sling to remove the cake from the pan. Drizzle the cake with the glaze before slicing with a serrated knife and serving.
  • Enjoy!
