4 ounces bittersweet chocolate (chopped (See Recipe Notes))
6 tablespoons unsalted butter (chopped)
1 1/2 cups all purpose gluten free flour blend ((I used Better Batter; please click thru for full info on appropriate blends))
3/4 teaspoon xanthan gum ((omit if your blend already contains it))
5 tablespoons unsweetened cocoa powder ((See Recipe Notes))
3/4 teaspoon baking powder
1/8 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup granulated sugar
2 eggs (at room temperature, beaten)
2 teaspoons pure vanilla extract
1 cup confectioners' sugar

Steps:

  • Preheat your oven to 325°F. Line rimmed baking sheets with unbleached parchment paper and set them aside.

1 box (4-serving size) gluten free chocolate instant pudding and pie filling mix
1/2 cup butter, melted
1 egg
1/4 cup water
1 teaspoon gluten free vanilla

Steps:

  • Heat oven to 350 degrees F. In large bowl, mix dry cake mix and dry pudding mix. Add melted butter, egg, water and vanilla; stir until soft dough forms. Shape dough into 1 1/4-inch balls; roll in sugar. On ungreased cookie sheets, place balls about 2 inches apart; flatten slightly. Bake 8 to 10 minutes or until set. Cool 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 20 minutes. Store tightly covered.

Steps:

  • In large bowl, mix oil, chocolate, sugar and vanilla. Stir in eggs, one at a time. Stir in Bisquick mix until dough forms. Cover; refrigerate at least 3 hours.
  • Heat oven to 350°F. Grease cookie sheets with shortening or cooking spray. Drop dough by teaspoonfuls into powdered sugar; roll around to coat and shape into balls. Place about 2 inches apart on cookie sheets.
  • Bake 10 to 12 minutes or until almost no imprint remains when touched lightly in center. Immediately remove from cookie sheets to cooling racks.

1 cup sugar
1 teaspoon vanilla extract
2 large eggs, room temperature
2 cups superfine almond flour
1/2 cup baking cocoa
1/4 cup coconut flour
1/4 teaspoon baking soda
1/8 teaspoon salt
1/4 cup confectioners' sugar

Steps:

  • Preheat the oven to 350°. In a large bowl, cream butter, sugar, and vanilla until light and fluffy, 5-7 minutes. Beat in eggs, 1 at a time. In another bowl, whisk almond flour, baking cocoa, coconut flour, baking soda, and salt; gradually beat into creamed mixture., Shape dough into 1-in. balls. Roll in confectioners' sugar. 1/2 cup salted butter, softened
1 cup firmly packed brown sugar
1/4 cup white sugar
1/3 cup molasses
1 tablespoon molasses
1 1/4 cups soy flour
1 cup buckwheat flour
2 tablespoons xanthan gum
2 teaspoons ground cinnamon
3/4 teaspoon ground cloves
2 teaspoons ground ginger
granulated sugar, to roll the cookies in before baking

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Combine all the dry ingredients together: sugar, brown sugar, soy glour, xanthan gum, cinnamon, cloves, ginger. Run through a flour sifter to remove any large pieces of brown sugar.
  • Mix well.
  • Add in the eggs, softened butter and molasses.
  • Mix well, dough should be firm enough to roll into balls.
  • Roll dough into spoon size balls and then roll in sugar.
  • Put on a baking sheet and bake for 13-15 minutes.
  • Remove from baking sheet and enjoy with a glass of milk.
