1/4 cup sugar
1/8 teaspoon salt
1/4 teaspoon vanilla extract
5 tablespoons coconut flour
1 egg
1/2 cup confectioners' sugar (optional)

Steps:

  • Preheat oven to 350.
  • Grease cookie sheet or line with parchment.
  • Cream butter, sugar, salt, and vanilla.
  • Beat in egg.
  • Stir in coconut flour.
  • Form into 8 balls and bake 15 minutes, until golden.
  • Let cool; sprinkle with powdered sugar.
