GLUTEN-FREE APPLE TART
This delicious apple tart features an easy crust made with almond and oat flour. It's gluten free and easily made vegan/dairy free, too (just use coconut oil instead of butter). Recipe yields one 9-inch tart, enough for 6 to 8 slices.

- To prepare the crust: Preheat the oven to 350 degrees Fahrenheit and lightly grease a 9″ tart pan (even if your pan is non-stick). In a medium mixing bowl, combine the almond flour, oat flour and salt, and stir to combine. Drizzle in the butter and maple syrup, and stir until the mixture is moistened throughout.
- Dump the mixture onto the prepared tart pan. Press the mixture evenly across the base, then use the heel of your palm to press it up the sides as well. Use your fingers to try to make the dough along the sides even in height and depth (see photo). Prick the base of the crust all over with a fork to prevent it from bubbling up. Bake for 10 to 12 minutes, until it's lightly firm to the touch and just starting to turn golden at the edges. Set aside.
- Meanwhile, to prepare the filling: Peel the apples and cut them into slices 1/8 to 1/4″ thick. Transfer the slices to a medium mixing bowl and add just 1 tablespoon of the maple syrup, and the lemon juice and cinnamon. Toss until the mixture is evenly distributed.
- Arrange the apple slices across the base however you'd like, overlapping them as much as possible (I tried to arrange mine like a rose and had a few apple slices left over). Reserve the maple syrup/lemon mixture at the bottom of the bowl for brushing the apples later.
- Bake the tart for 25 minutes, then pull it out of the oven and gently brush the remaining maple syrup/lemon mixture over the apples (it's fine if you push some of the slices down in the process). Return the tart to the oven and bake for another 15 to 20 minutes, until the apples are very tender and the crust is deeply golden around the edges. While the tart is still hot, gently brush the remaining 2 tablespoons maple syrup over the apples.
- Let the tart cool for at least 15 minutes. If you'd like, sift or sprinkle a little extra cinnamon over the top. If you used a tart pan with a removable bottom, remove the sides. Use a sharp chef's nice to slice the tart into even wedges and serve.

GLUTEN-FREE EUROPEAN APPLE CAKE
My Romanian family all make some version of this dense apple walnut cake every autumn. I think it's common to Germans, Austrians, and Hungarians too. I'm so pleased that I could almost replicate the taste and texture without wheat! Coconut flour can be substituted for almond flour. Makes a 9x13-inch pan. When cool, you can dust with confectioners' sugar if desired.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan; lightly flour with gluten-free flour.
- Whisk sorghum flour, almond flour, rice flour, tapioca flour, xanthan gum, cinnamon, baking soda, baking powder, and salt together in a bowl.

GLUTEN FREE FRENCH APPLE CAKE

- Preheat oven to 350 degrees F.
- Butter a 9 inch springform pan.
- In a large bowl, sift together the flour, sugar, baking powder, baking soda and salt. In a separate bowl, whisk the milk, butter, vanilla and eggs. Beat using a handheld electric beater until smooth. Add the flour mixture and stir to incorporate. Pour the batter in the prepared pan.
- In a large bowl combine the apples, cinnamon and ¼ cup sugar. Arrange the apple slices overlapping from the outer to the center of the cake. Dot with butter and place on a baking pan lined with aluminum foil to catch any drippings. Bake from 45 to 50 minutes or until cook through. Ready!
FRENCH APPLE CAKE

- In small bowl, melt butter and set aside to cool.
- Peel, core and cut apples (preferably a variety of 4) into 1" chunks.
- Preheat oven to 350 degrees. Generously butter and grease the bottom of an 8" springform pan. Place on baking sheet with parchment or silicone mat underneath.
- In a small bowl, combine flour, baking powder and salt.
- In a medium / large bowl, whisk eggs until foamy. Add white and brown sugars and whisk until fully incorporated. Next, whisk in rum and vanilla.
- In alternating portions, whisk in flour blend and melted butter. Repeat until all ingredients are mixed together.
- Add apple chunks and use rubber scraper to stir them and coat liberally with the batter. Pour batter into greased springform pan and bake 50-60 minutes.

- Preheat oven to 350 degrees.
- Spray either a 9 inch cake pan or a pan with 6 three inch cake sections with coconut oil.
- Cut parchment paper to line the bottom of the pan(s) and spray bottom with coconut oil.
- In a small sauce pan, cook butter on low heat until slightly browned. (About 5 minutes) Stir often.
- Remove from heat and allow to cool for 10 minutes.
- In a small sauce pan, add two inches of water and apple slices. Cook apple slices on low heat until they soften. Keep an eye on them so they don't get mushy.
- Drain water from apples, toss with 1 tablespoon of the dark rum and lemon juice, and let cool.
- In a large mixing bowl, whisk together gluten free flour, xanthan gum, baking powder, and sugar.
- In a medium mixing bowl, whisk together eggs, milk, browned butter, vanilla, and remaining three tablespoons of dark rum.
- Pour wet ingredients into the dry ingredients and blend carefully.
- Gently fold in apples.
- Pour into pan(s).
- Sprinkle 1/2 teaspoon of sugar onto each mini cake (or 1 tablespoon of sugar onto a whole cake.)
- Bake for 30-45 minutes, depending on pan size. Less time is needed if you are baking 6 three inch cakes.
- Remove from oven and let cakes cool on a cooling rack.
- Enjoy while warm.
- Reheat if having it later.

- Preaheat oven to 350F.
- Prepare a 8" or 9" spring form pan by placing a parchment paper on the bottom, and greasing the side. Alternatiely, you can grease the whole pan.
- Chop two apples of your choice into cubes, and set aside.
- Start by whisking together your eggs and sugar. Once combined well, then add your vanilla and oil.
- Measure one cup King Arthur Gluten Free Baking Mix, and add 1/2 teaspoon salt. If using a gluten free flour that does not have baking powder, be sure to add 1 Teaspoon baking powder.
- Slowly whisk the dry ingredients into the wet ingredients, 1/3 at a time.
- The batter will be very thick once all of the flour has been whisked in. Switch to a spatula, and add the chopped apples.
- Combine batter and chopped apples, until they are evenly coated.
- Place apple batter into the prepared pan, and smooth out the top. You may need to spread it to distribute it evenly.
- Bake a 350F for about 35 minutes, until an inserted toothpick comes out cleanly.
- Allow to sit for 10 minutes. Remove spring form portion of the pan and enjoy!
