GLUTEN FREE HOLIDAY RUM BALLS
I was missing one of my favorite Holiday treats due to it usually being made with vanilla wafers which contain Gluten and I can't have that so I tinkered around with my recipe and came up with these. They taste wonderful and none of my family guessed they were Gluten Free! Just make sure you add the Rum a little at a time, you don't want your dough to be too runny. I'm going to try dipping some in chocolate too.

Steps:
- Melt semisweet chips along with canned milk in the microwave on low-med or setting 5 for approximately 45 seconds or until chips can be gently stirred into the milk. set aside.
- Mix all the dry ingredients together well.
- add the rum a little at a time until everything makes a stiff dough.
- You may need more rum, just add until it's the right consistency. Like play dough.
- Add melted chocolate mixture and rum extract and mix well.
- Rum Ball dough should be stiff yet pliable.
- Roll into teaspoon sized balls and coat with powdered sugar. put into small papers and store covered in the fridge for at least 3 days to let flavors mellow, then just before serving, roll in more powdered sugar.
- These freeze well. Just freeze on a cookie sheet and store in a freezer bag for up to 4 weeks.

HOLIDAY RUM BALLS

Steps:
- Place crumbled brownies in a bowl. Pour rum over brownies, let soak for 1 minute; stir until mixture forms a paste-like consistency.
- Using a 1-inch sorbet scoop or melon baller, scoop out balls of chocolate-rum mixture and transfer each to the plate lined with plastic wrap. Place the plate with chocolate balls in freezer for 15 to 20 minutes, or until firm enough to roll. Remove from freezer, roll each into a smooth ball; return plate to freezer.
- Melt 3 ounces chocolate in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Remove from heat. Add remaining 1 ounce chocolate; stir until chocolate is melted and combined.
- Remove chocolate balls from freezer; place one ball in melted chocolate and gently move around with a fork to coat completely. Transfer to baking sheet lined with a silicone baking mat. Repeat for remaining chocolate balls.
- Dust chocolate rum balls with cocoa powder and serve.

- Place pecans and butter in a heavy skillet. Place over medium heat and cook stirring frequently until pecans are fragrant and golden brown. Remove from heat. Cool. Place toasted nuts in a blender jar and blend until crumbly and uniform. Add to mixing bowl.
- Add maple syrup, vanilla, and rum to the mixing bowl. Mix well until the crumbs are completely damp and a uniform mixture is formed. Wait 10 minutes.

- In a large bowl, combine crushed wafers, pecans, confectioners sugar and cocoa. Whisk together. Add honey, vanilla and rum and mix well until well combined and mixture sticks together when you press it together with your hands.
