GLUTEN-FREE CHEESE STUFFED BREAD ROLLS

Steps:
- Preheat oven to 350 degrees and line a baking sheet with a silicon baking mat or parchment paper.
- Mix pizza dough according to package directions, with apple cider vinegar, water, and 2 tbsp oil. Divide dough into 18 pieces.
- Slice string cheese into 18 pieces. Place a piece of cheese in the center of each piece of dough and roll into a ball. Place on baking sheet and brush the tops with remaining olive oil. Sprinkle with Italian seasoning and parmesan cheese.
- Bake for 10-15 minutes, or until slightly browned on top.
- Serve warm with optional dipping sauce (i.e. marinara or pesto) and enjoy!

- Preheat oven to 425˚F (220˚C).
- Melt mozzarella and cream cheese together in the microwave for 1 minute, stirring every 20 seconds, or until fully melted.
- Combine almond (or coconut) flour, baking powder, garlic powder, Italian seasoning, and egg. Mix well, then stir in the melted mozzarella until fully incorporated. Stir in cheddar, then shape into a ball, cover, and chill for 30 minutes in the refrigerator.
- Dust a cutting board with a handful of almond (or coconut) flour. Cut dough into 4 even pieces and roll each piece into a ball. Cut each ball in half and place cut side down on a greased baking sheet.
- Bake for 10-12 minutes, or until golden brown.
- Assemble with desired sandwich toppings.

GLUTEN-FREE MOZZARELLA STICKS
Baked mozzarella sticks that are crispy on the outside and gooey inside. Even though they're not fried, with this recipe, they get crunchy without the mozzarella running out. The trick is in the dredging process and ingredients. Extra egg whites and light-as-air rice flour create a lighter coating. Quadruple-dipping creates a crispy outer coating usually absent from gluten free foods. Serve with your favorite dipping sauce.

- Cut mozzarella cheese into 4x1-inch sticks.
- Place rice flour into a shallow dish. Whisk egg whites and egg together in another shallow dish. Mix bread crumbs with oregano, salt, pepper, garlic powder, onion powder, and turmeric in a third dish.
- Dredge one mozzarella stick through the rice flour, making sure to cover all four sides and the ends. Tap off excess flour, then dip stick into the egg mixture; turn with a fork to coat completely. Drain off any excess egg. Dredge thoroughly through the rice flour and eggs again. Shake off excess, then roll into the bread crumb mixture. Dip once more into the eggs and coat with bread crumbs again, covering the ends to prevent the cheese from melting and leaking through. Place stick on a freezer-safe plate. Repeat process for each mozzarella stick.
- Cover the plate of mozzarella sticks with plastic wrap and freeze for 30 minutes. Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper. Set the timer for another thirty minutes.
- Fill an oil sprayer with olive oil. Remove sticks from freezer and arrange on the prepared baking sheet; spray tops with olive oil.
- Bake in the preheated oven for 5 minutes. Remove from oven and close oven door; turn sticks over and spray with oil. Continue baking for 5 minutes more. Continue turning, spraying, and baking the remaining two sides, about 10 minutes more.

- Preheat the oven to 500F. Lightly grease or line a baking tray with parchment paper and set aside.
- Lightly sprinkle flour over a cutting board, then use a rolling pin to roll out the first ball of dough until it's about 1/2″ thick. Transfer to the baking sheet. Repeat with other ball of dough, but keep it on the cutting board for now.
- Spread a layer of pesto evenly over the base layer of dough, leaving a 1/2″ edge around the rim. Place the second circle of dough on top, lining the edges up as much as possible. Use your fingers to "pinch the two ends together
- Place a small round object in the center of the dough to prevent cutting all the way through out. Use a sharp knife or pizza cutter to cut the dough into 16 equal pieces. I find it's easiest to do this by first cutting the dough into quarters, then each fourth into 4 more even pieces.
- Create 8 pairs of two adjacent strips of dough. Holding one strip in each hand, twist the strips outward from each other 2-3 times, then join them together at the end and pinch the "tip." Repeat with the remaining strips of dough - see the blog post video or photos for more help.
- Brush the top of the dough with oil, then place on the top rack of the oven and bake for 13 to 15 minutes, until fluffy and golden on top. Serve immediately and enjoy warm; leftovers can be stored in an airtight container at room temperature for up to 5 days, or frozen and reheated as necessary.
PESTO AND MOZZARELLA FRENCH BREAD PIZZA
Basil is the classic choice for this alternative to red sauce, but blend in any tender, flavorful herbs or greens like parsley, spinach, or arugula depending on what you have around. This pesto recipe doubles easily and freezes well, too: Transfer the finished pesto to an ice cube tray and freeze until firm. Pop the frozen pesto into a resealable bag, and keep it in the freezer for up to three months. Defrost whenever a pasta or pizza craving calls, though you can certainly use store-bought pesto to make things even easier. Fresh mozzarella creates excellent cheese pulls, but feel free to play around with other soft cheeses: A crumbling of feta or goat cheese would make delicious variations.

- Make the pesto: Heat the oven to 450 degrees with a rack in the middle position. Combine basil, 1 garlic clove and pine nuts in a food processor, and pulse until finely chopped. With the machine running, stream in the olive oil. Scrape down the sides of the bowl, add Parmesan and salt, and pulse to combine.
- Prepare the pizza: Combine the 1/4 cup olive oil and grated garlic in a small pot over medium. Cook, swirling occasionally, until the garlic starts to sizzle (but doesn't begin to brown), 2 to 4 minutes. Remove from heat.
- Place the French bread cut side up on a baking sheet. Brush cut sides with garlic oil. Bake until edges are golden, 5 to 7 minutes.
- Spread the pesto over the two halves all the way to the edges and top with the cheese. Return to the oven and bake until the cheese is evenly melted, about 5 minutes. Increase heat to broil and broil (watch carefully!) until the cheese is bubbly and browned in spots, 1 to 2 minutes more. Let cool 5 minutes before slicing and serving. Top with red-pepper flakes, oregano and more Parmesan, if you like.
GRILLED STUFFED FRENCH BREAD

- Heat half the oil in a small pan and cook the onion and chopped mushroom stalks for 5-8 mins until soft. Tip into a bowl, allow to cool slightly, then add the mascarpone, lemon zest, pesto, mozzarella and seasoning.
- Heat oven to 200C/180C fan/gas 6. Grease a small roasting tin and add the whole mushrooms, upside-down, in a single layer. Divide the stuffing between the mushrooms, spreading out to fill the middle of each one. Top each with crumbs and a grind of black pepper, then bake for 25-30 mins until the mushrooms are tender and the topping is crisp.
- Meanwhile, make the dressing. Whisk the remaining oil with the lemon juice and some seasoning. Dress the rocket leaves and tomatoes just before serving with the stuffed mushrooms and garlic bread, if you like.
