Healthy Oatmeal Cookie Bars (Vegan and Gluten-Free!) image

Easy and healthy oatmeal cookie bars made with just 5 simple ingredients! Soft, chewy and gooey in one, they are vegan, gluten-free and ready in 12 minutes!

4 cups gluten free rolled oats (can use standard rolled oats, if not gluten-free)
1 cup almond butter (can substitute for any nut or seed butter of choice)
1/4 cup maple syrup (* See notes)
1 1/2 cups mashed bananas (** See notes)
1/2-1 cup chocolate chips (use 1 cup for the full chocolate flavor! )

Steps:

  • Preheat the oven to 180C/350F. Line an 8 x 8-inch square pan with parchment paper, reserving 1-2 inches of parchment paper over the sides, for easily removal.
  • In a large mixing bowl, add all your ingredients, except for the chocolate chips, and mix well. Using a rubber spatula, fold through the chocolate chips, reserving a few to top the cookie bars with.
  • Transfer the batter into the lined pan, adding extra chocolate chips on top. Bake for 15-17 minutes, or until just beginning to go golden around the pan.
  • Remove from the oven and let sit for 10 minutes, before transferring to a wire rack to cool completely.

1 stick butter (1/2 cup), melted
1 egg
1/2 cup granulated sugar
1/2 cup brown sugar
1 teaspoon vanilla extract
1/2 cup brown rice flour
1/3 cup potato starch
1/3 cup gluten free oat flour
1/4 cup tapioca starch
1 teaspoon cinnamon
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon xanthan gum
1/2 teaspoon salt
3/4 cup gluten-free old fashioned oats
2/3 cup raisins
1 tablespoon apple juice (optional)
4-5 shakes cinnamon (optional)
1/4 cup chopped pecans or walnuts

Steps:

  • Preheat oven to 375 degrees. Line an 8x8 baking pan with foil and grease with cooking spray. Set aside.
  • Melt butter and allow to cool slightly. In a large mixing bowl, combine melted butter, egg, granulated sugar, brown sugar, and vanilla extract. Beat until smooth, scraping down the sides of the bowl.
  • In a separate smaller mixing bowl, sift together brown rice flour, potato starch, oat flour, tapioca starch, 1 teaspoon of cinnamon, baking soda, baking powder, xanthan gum, and salt. Add dry ingredients to egg mixture and mix on low until combined. Beat an additional minute on medium speed.
  • Using a spatula or wooden spoon, stir in oats, raisins, and chopped pecans. Scoop dough into baking pan and smooth evenly across pan with spatula.
  • Bake at 375 degrees for 25 minutes until golden brown. Set on cooling rack to completely cool. Once cooled, lift foil from pan and cut block into 16 squares.
  • Store in an airtight container at room temperature for up to 4 days or in the freezer for up to 3 months.

1 egg yolk
1/2 teaspoon vanilla
1 cup gluten-free flour blend, (such as Bob's 1:1 baking flour, Pamela's Artisan Blend, or Namaste Perfect Flour Blend)
1 teaspoon baking powder
1/4 teaspoon salt
1 cup gluten-free rolled oats
1 cup semi-sweet chocolate chips, (plus some extra to sprinkle on top if desired)

Steps:

  • Preheat oven to 375°F. Line a 9-inch square pan with parchment paper. Lightly grease pan as well.
  • Cream together the butter and sugars.
  • Blend in the egg and vanilla.
  • Whisk together the dry ingredients and then blend into the creamed mixture.
  • Stir in the oats and chocolate chips until just combined.
  • Spread evenly into the pan. Sprinkle a few extra chocolate chips on top and press them into the dough.
  • Bake at 375°F for 25-30 minutes. The bars should be golden brown on top and a toothpick inserted in the center should come out clean.

  • Preheat oven to 350 degrees. In a blender, process 1 1/2 cups oats into a fine meal. Whisk together ground oats, cornstarch, cinnamon, baking powder, and salt.

¾ cup semisweet chocolate chips
