These Ranger cookies made with Betty Crocker® Gluten Free chocolate chip cookie mix are loaded with Rice Chex® cereal and candies - a crunchy-chewy baked dessert for all ages.

1/2 cup creamy peanut butter
1/3 cup butter, softened
1 teaspoon gluten-free vanilla
2 eggs, beaten
1 box Betty Crocker™ Gluten Free chocolate chip cookie mix
2 cups Rice Chex™ cereal, crushed
1 cup gluten-free candy-coated chocolate candies

Steps:

  • Heat oven to 350°F. In large bowl, beat peanut butter, butter, vanilla and eggs with electric mixer on low speed until creamy. Add cookie mix, beating on low speed until blended. Stir in cereal and candies.
  • Onto ungreased cookie sheets, drop dough by tablespoonfuls 1 inch apart; flatten slightly. Bake 8 to 10 minutes or until lightly browned. Cool 1 minute; remove from cookie sheets to cooling racks.

1 cup brown sugar
1 cup granulated sugar
1 cup butter
2 large eggs
1 teaspoon vanilla extract
2 cups flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups oatmeal
1 cup coconut
2 cups Rice Krispies

Steps:

  • Preheat oven to 375°F.
  • In a small bowl, combine flour, baking powder, baking soda and salt; set aside.
  • In a large bowl, combine butter, brown sugar, sugar, and vanilla extract; beat until creamy.
  • Beat in eggs.
  • Gradually add flour mixture; mix well.
  • Stir in oatmeal, coconut, and Rice Krispie cereal; mix well.
  • Roll into small balls and flatten with hand.
  • Bake on ungreased cookie sheets for 10-12 minutes or till light brown.

1 cup butter, softened
1 cup brown sugar
1 cup white sugar
2 large eggs
1 ¾ teaspoons vanilla extract
2 cups all-purpose flour
2 ½ tablespoons all-purpose flour
¼ teaspoon salt
1 ½ teaspoons baking soda
¼ teaspoon baking powder
1 ¾ cups rolled oats
1 ¾ cups corn flake cereal
½ cup flaked coconut

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Beat butter, brown sugar, and white sugar together in a bowl until creamy.
  • Beat in eggs and vanilla extract until smooth.
  • In a separate bowl, whisk together both amounts of flour, salt, baking soda, and baking powder. Mix flour mixture into the liquid ingredients.
  • Gently mix rolled oats, corn flakes, and coconut into the dough until thoroughly combined.
  • Drop the dough by tablespoons onto baking sheets.
  • Bake in the preheated oven until the cookies are light golden brown, 10 to 12 minutes.
  • Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

½ Tablespoon Baking powder
½ Tablespoon Baking Soda
½ Tablespoon Cinnamon
⅔ teaspoon salt
1 cup butter (softened to room temp)
1 cup brown sugar
1 cup sugar
2 eggs
⅔ Tablespoon vanilla
1 cup butterscotch chips
1 cup milk chocolate chips
2 cups quick oats
1 cup sweetened coconut
¾ cup pecans (chopped)

Steps:

  • Heat oven to 350 degrees. In a bowl combine flour, baking powder, baking soda, cinnamon and salt. Set aside.
  • In a separate large bowl beat butter until smooth, and then add in brown sugar and sugar and mix well into the butter mixture.
  • Then add in eggs and vanilla.
  • Then add in the flour mixture from the other bowl into the creamy mixture and stir just until combined.
  • Fold in the butterscotch and chocolate chips, oats, coconut, and pecans.
  • Line your pan with parchment paper or a baking mat.
  • Roll dough into 1 1/2 inch balls and place on the lined pans.
  • Bake 9 to 11 minutes or until edges are lightly browned.
