- In a large bowl, beat the applesauce, honey, eggs, oil and vanilla until well blended. Combine the rice flour, soy flour, ginger, cinnamon, baking powder, salt, baking soda, nutmeg, allspice and cloves; gradually beat into applesauce mixture until blended. Stir in the walnuts, apricots and orange zest., Transfer to an 8-in. square baking dish coated with cooking spray. Bake at 350° for 28-32 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Sprinkle with confectioners' sugar.

Grease the bottoms of two 8" round cake pans or one 9" x 13" pan., Beat the butter with half the cake mix, the minced ginger, and the spices., Add the molasses and one of the eggs, beating to combine., Add the remaining eggs one at a time, beating well after each addition., Add the milk alternately with the remaining cake mix, 1/3 of each at a time.
- Beat until smooth and scrape the bowl after each addition., Pour the batter into the prepared pans.
- Bake the layers for 40 to 45 minutes, or the sheet cake for 35 to 40 minutes until the cake is brown and firm on top.
- Its internal temperature should be between 210°F and 212°F., Remove the cake from the oven.
