Gluten-Free Sweet Kale Chips with Honey image

The sweet and spicy duo of honey and Sriracha will have you hooked on these crispy kale chips.

1 bunch (8 oz) fresh curly green kale, ribs removed, leaves torn into 1- to 2-inch pieces (6 cups)
1 tablespoon coconut oil, melted
1 tablespoon honey
1/2 teaspoon Sriracha sauce
1/2 teaspoon salt

Steps:

  • Heat oven to 350°F. Move 2 oven racks evenly between top and bottom of oven. Spray 2 cookie sheets with cooking spray.
  • Wash and thoroughly dry kale. In large bowl, beat remaining ingredients with whisk. Add kale; massage with your hands until kale is evenly coated with oil mixture. Place in single layer on cookie sheets.
  • Bake both cookie sheets at the same time 6 minutes. Trade positions of cookie sheets in oven. Bake 6 to 9 minutes longer or until crisp and just beginning to brown. Cool on cookie sheets. Serve warm or completely cooled.

2 bunches dino kale, cut into 2-inch pieces
¼ cup olive oil
1 teaspoon sea salt
½ lemon, juiced
1 tablespoon honey

Steps:

  • Combine the kale pieces, olive oil, lemon juice, and sea salt in a resealable bag. Seal and massage the mixture for 3 minutes. The kale will be starting to break down a bit. Drizzle the honey over the mixture and again massage gently for another 3 minutes; the kale will now be half the bulk you started with.
  • Lay flat and even in a food dehydrator; cook at 115 degrees F (46 degrees C) until crispy, about 8 hours. Alternately, you can bake in an oven at 145 degrees F (65 degrees C) until crispy, 4 to 5 hours.
