GLUTEN-FREE TURTLE BROWNIES
Gluten free brownie mix marries with the classic turtle trio of chocolate, caramel and nuts for a decadent treat.

Steps:
- Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom of (8- or 9-inch) square pan. In medium bowl, stir together brownie mix, butter and eggs until blended. Spread 2/3 of batter in pan. Bake 10 minutes.
- Meanwhile, in medium microwavable bowl, microwave caramels and whipping cream uncovered on High 1 to 2 minutes, stirring every 30 seconds, until smooth. Drizzle caramel evenly over partially baked brownie. Sprinkle with half the chocolate chips and half the pecans. Drop remaining brownie batter by small spoonfuls onto caramel layer. Sprinkle with remaining chocolate chips and pecans.
- Bake 20 to 25 minutes longer or until top of brownie looks dry. Cool completely before cutting. Cut into squares, 4 rows by 4 rows.

- Melt the chopped chocolate and butter in a stainless steel bowl placed over a saucepan of simmering water. Remove from heat and set aside while you make the brownie batter.
- Meanwhile, in the bowl of your electric mixer, beat the eggs and sugars until smooth. Beat in the vanilla extract and then the melted chocolate mixture. Scrape down the sides of the bowl and, on low speed, beat in the flour, xanthan gum & salt.
- Pour into the prepared pan and bake for about 20 minutes, or just until the brownies are barely firm to the touch. Remove from oven and place on a wire rack.
- Place the unwrapped caramels and cream in a saucepan and melt, over low heat (stirring frequently), until smooth.

- Preheat oven to 350 F. Line an 8x8" square baking pan with parchment paper, leaving a slight overhang for easier removal.
- In a large heat-safe bowl, heat chocolate and coconut oil on high power in microwave in 30-second increments until melted, stirring in between.
- Whisk in coconut sugar until smooth then beat in vanilla and eggs, one at a time. Whisk in baking powder, cocoa powder and slowly fold in the flour until just combined.
- Spread half of the batter into the prepared pan and set aside other half. Bake in preheated oven for 15 minutes.
