GLUTEN-FREE UPSIDE-DOWN PEAR CAKE RECIPE

Steps:
- Preheat an oven to 180°C (350°F).
- Grease and line the base of a 26cm (10.2 in) cake pan with baking paper.
- In a pan, melt the brown sugar and butter. Stir until combined, then put to the side.
- Layer the sliced pear in the cake tin in a spiral pattern. Pour the sugar mixture over the top of the sliced pears.
- In a mixer, add the butter and caster sugar. Beat until light and fluffy.
- Beat in the eggs one by one.
- Sift together the gluten-free plain flour, baking powder, spices, and almond meal. Gently mix into the wet ingredients while also slowly pouring in the milk.
- Pour cake batter into the prepared cake tin.
- Bake in the oven for 1 ½ hours.
- Allow to cool for 5 minutes in the cake tin.
- Remove from tin and allow to cool.
- Serve & Enjoy.

- Lightly grease a 11” cast iron pan. Cut a round of parchment paper to fit the bottom. Add 1 stick of butter to the pan and place in the preheating oven until melted. Sprinkle 1/3 cup of brown sugar into pan. Add pears, cut side down. Bake for about 20 minutes or until pears are tender. When the pears are tender, put back on the stove and heat until the sugar begins to turn amber. Remove from heat and add the cake batter immediately – directions below.
- In a bowl, whisk together brown sugar, AP flour, baking powder, baking soda, ground cinnamon and salt. In a liquid measuring cup, whisk together sour cream, heavy cream, eggs and vanilla extract. Add to dry ingredients and mix until just combined. Add cooled melted butter and stir until just combined. Pour over apple, spread to the sides of the pan and bake for about 30 minutes or until a toothpick comes out clean. Allow to cool for about 5 minutes. Flip onto a cutting board, drizzle cake with honey immediately. Serve warm with vanilla ice cream!
