Best Ever Jalapeno Poppers image

This is a recipe I made by taking the best of three or four popper recipes and combining them to make something that tastes wonderful. A frequent request at my house, and at others. I usually make 100 and put them in the fridge. They don't last long. Adjust the amount of bacon bits and type of shredded cheese to taste. Increase the recipe as necessary! Lots of tests helps to best figure out the way you like it. Be sure to wear rubber gloves while seeding the jalapenos -- they will burn.

12 ounces cream cheese, softened
1 (8 ounce) package shredded Cheddar cheese
1 tablespoon bacon bits
12 ounces jalapeno peppers, seeded and halved
1 cup milk
1 cup all-purpose flour
1 cup dry bread crumbs
2 quarts oil for frying

Steps:

  • In a medium bowl, mix the cream cheese, Cheddar cheese and bacon bits. Spoon this mixture into the jalapeno pepper halves.
  • Put the milk and flour into two separate small bowls. Dip the stuffed jalapenos first into the milk then into the flour, making sure they are well coated with each. Allow the coated jalapenos to dry for about 10 minutes.
  • Dip the jalapenos in milk again and roll them through the breadcrumbs. Allow them to dry, then repeat to ensure the entire surface of the jalapeno is coated.
  • In a medium skillet, heat the oil to 365 degrees F ( 180 degrees C). Deep fry the coated jalapenos 2 to 3 minutes each, until golden brown. Remove and let drain on a paper towel.

1 (8 ounce) package cream cheese, softened
1 (8 ounce) package shredded sharp Cheddar cheese
¼ cup mayonnaise
15 fresh jalapeno peppers, halved lengthwise and seeded
2 eggs, beaten
½ tablespoon milk
1 ½ cups crushed corn flake cereal

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking sheet.
  • In a medium bowl, mix together cream cheese, sharp Cheddar cheese and mayonnaise. Stuff jalapeno halves with the mixture.
  • Whisk together eggs and milk in a small bowl. Place crushed corn flake cereal in a separate small bowl.
  • Dip each stuffed jalapeno half into the egg and milk mixture, then roll in corn flake cereal to coat.
  • Arrange in a single layer on the prepared baking sheet. Bake in the preheated oven 30 minutes, or until filling is bubbly and lightly browned.

Steps:

  • Preheat broiler to high. Combine first 6 ingredients in a medium bowl; stir well to combine. Arrange pepper halves on a jelly-roll pan; divide filling among peppers. Broil 7 minutes or until peppers are tender and beginning to brown. Sprinkle with bacon. Combine jelly and water in a microwave-safe bowl; microwave 30 seconds or until saucy. Drizzle evenly over peppers.

12 fresh jalapeno peppers
8 ounces soft fresh goat cheese (you may add a tsp of milk or so to make spreadable)
1/4 cup fresh spinach
1 avocado
1/4 lb ground turkey
2 tablespoons A.1. Original Sauce
12 slices bacon, cut in half

Steps:

  • Cut jalapeño peppers lengthwise and remove the seeds.
  • Chop the spinach into small pieces.
  • Brown the ground turkey and drain well. Pat dry with a paper towel.
  • In a separate bowl, mix the spinach, A1 sauce, ground turkey and goat cheese together.
  • Using a spoon, fill each jalapeno half with the cheese mixture.
  • Slice an avocado into thin strips and lay one over the cheese mixture.
  • Wrap a 1/2 piece of bacon around each half and secure with a toothpick.
  • Line them up on a cookie sheet an inch apart.
  • Bake at 425 for 15-20 minute.

  • Slice your jalapenos in half and spoon out the seeds and veins. Lay on a parchment lined baking tray.
  • Use a teaspoon to fill the jalapeno halves with the cheese mixture creating a bit of a mound. Then wrap each popper with an entire strip of bacon. In a small dish mix together the raw sugar and the boiling water. Use a pastry brush to dress the poppers.
  • Chill in the fridge for at least an hour (optional, but this does help the bacon dry out and get a bit more caramelized).
