Makes 1 1/2 to 2 quarts. From "Simply Delicious"- a cookbook of Herberger's Employee Family Recipes. Submitted by Nanette Grove of Moorhead, Minnesota (where I go to school!)

Number Of Ingredients 10

2 tablespoons wyler's chicken flavor instant bouillon or 6 chicken bouillon cubes
2 cups cheddar cheese, shredded
2 (10 ounce) packages frozen cauliflower or 1 small fresh cauliflower
2 cups water
1/3 cup butter
2 cups milk
green onions or parsley, chopped
1/2 cup onion, chopped
1/2 cup flour, unsifted
1/8-1/4 teaspoon ground nutmeg

Steps:

  • In medium saucepan, cook cauliflower in 1 cup water until tender.
  • Reserve 1 cup cooked flowerettes.
  • In blender or food processor, blend remaining cauliflower and liquid; set aside.
  • In large heavy saucepan, cook onion in butter until tender; stir in flour.
  • Gradually add remaining 1 cup water, milk and bouillon, stirring until well blended and thickened.
  • Add cheese, pureed cauliflower, reserved flowerettes and nutmeg.
  • Cook and stir until cheese melts and mixture is hot (do not boil).
  • Serve garnished with green onion or parsley.

2 tablespoons cumin seeds
2 teaspoons yellow mustard seeds
2 teaspoons fenugreek seeds
1/2 tablespoon oil
1 onion, peeled and finely chopped
1 red pepper, diced
2 teaspoons minced ginger
2 teaspoons ground turmeric
1 teaspoon minced garlic
1/2 large green chili pepper, deseeded and chopped
400 ml coconut cream
1 cup chicken, or
1 cup vegetable stock
1/2 cup ground almonds
1 small cauliflower, cut into small florets
1 lime, grated rind and juice
1/2 teaspoon caster sugar
salt
pepper

Steps:

  • In a heavy-based frying pan, dry roast the cumin, mustard and fenugreek seeds, until the mustard seeds start to pop and then remove from the heat and set aside.
  • Heat the oil in a large saucepan and gently cook the onion, pepper, ginger, garlic, and chilis until tender but not brown.
  • Stir in turmeric and roasted seeds with the coconut cream, stock, ground almonds, and cauliflower. Simmer gently for 12-15 minutes or until cauliflower is tender. Stir regularly. Season with lime rind, juice, sugar, salt and pepper.
  • Serve hot.

Line a baking sheet with parchment paper or a silicon mat, and place the cauliflower in an even layer on top. Roast for 30 to 35 minutes until lightly blackened and very tender, stirring once.
  • In a large pot or Dutch oven, heat 2 tablespoons olive oil over medium high heat. Saute the onion and carrot until the onion is translucent, about 5 minutes. Add 6 cups vegetable both and the cumin, coriander, ginger, turmeric, cinnamon, and black pepper, and bring it to a boil. Simmer for 10 to 15 minutes while the cauliflower roasts.
