AUTHENTIC CHINESE PORK CHOW MEIN



Authentic Chinese Pork Chow Mein image

No need to order in chow mein when you can make it yourself, this is just as good if not even better than any Chinese restaurant or take-out -- if you prefer more flavor then add in more soy sauce --- if desired after the pork is finished browning you may add in fresh minced garlic and stir for 2 minutes, this is only optional --- you will love this!

1 1/2 lbs lean pork, thinly sliced
3 garlic cloves, chopped (optional)
1/4 cup cornstarch
2 teaspoons sugar
5 tablespoons soy sauce (divided, more is desired)
2 tablespoons vegetable oil
2 tablespoons shortening
1 3/4 cups water, divided
2 stalks celery, diced
1 large onion, chopped
1 tablespoon molasses (do NOT omit)
1 (8 ounce) can sliced water chestnuts
1 lb bean sprouts (or more)
1 (4 ounce) can mushrooms, drained
salt and pepper
1 bunch green onion (optional)
blanched almond, lightly toasted

Steps:

  • Cut meat into thin strips.
  • Combine 2 tbsp cornstarch with sugar, blend in 1 tbsp soy sauce and 2 tbsp oil; mix to blend.
  • Pour over pork strips; toss well to coat, marinade in mixture for 20 minutes.
  • In a wok or large saute pan heat 2 tablespoons shortening; brown the meat lightly on all sides in hot shortening (after browning the pork you may add in chopped garlic and saute for 2 minutes if desired).
  • Add remaining 4 tbsp soy sauce and 1-1/2 cups water; simmer, covered on low heat for 45 minutes.
  • Add in the celery and onions; simmer for 15 minutes more.
  • In a small bowl, blend in remaining cornstarch with 1/4 cup water; stir into meat mixture.
  • Add molasses, water chestnuts, bean sprouts and mushrooms; heat thoroughly.
  • Season with salt and pepper.
  • Garnish with chopped green onions and toasted almonds.

1 medium onion, sliced
2 cups celery, sliced diagonally
3 tablespoons vegetable oil
1 (6 ounce) can sliced mushrooms
1 (16 ounce) can bean sprouts, drained
2 tablespoons chopped pimiento
1 (10 ounce) can condensed chicken broth (1 1/4 c.)
1/4 cup soy sauce
3 tablespoons cornstarch
2 (3 ounce) cans chow mein noodles

Steps:

  • In a large skillet, cook and stir pork, onion and celery in oil until onion is tender.
  • Stir in mushrooms with liquid, bean sprouts, pimiento and chicken broth.
  • Blend soy sauce and cornstarch; stir into vegetable mixture.
  • Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Seve over chow mein noodles.

2 garlic cloves, minced
4 tablespoons soy sauce, divided
2 tablespoons cornstarch

1 cup thinly sliced celery
1 cup chopped onion
1 cup coarsely chopped cabbage

Hot cooked rice, optional

Steps:

  • Cut pork into 4x1/4-in. strips; place in a bowl. Add garlic and 2 tablespoons soy sauce. Cover and refrigerate for 2-4 hours., Meanwhile, combine the cornstarch, ginger, broth and remaining soy sauce until smooth; set aside. Heat oil in a large skillet or wok on high; stir-fry pork until no longer pink. , Remove and keep warm. Add carrots and celery; stir-fry for 3-4 minutes. Add the onion, cabbage and spinach; stir-fry for 2-3 minutes. Stir broth mixture; stir into skillet along with pork. Bring to a boil; cook and stir for 3-4 minutes or until thickened. 1 ½ cups chopped onion
¼ pound mushrooms, sliced

This is so yummy, I never make enough. Seasoned pork chops are smothered in a golden mushroom sauce and baked with fresh mushroom slices and onion.

6 pork chops
¼ teaspoon seasoned salt
¼ teaspoon freshly ground black pepper
1 onion, chopped
½ cup fresh sliced mushrooms
2 (10.75 ounce) cans condensed golden mushroom soup

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Rinse pork chops, pat dry, and season with seasoned salt and pepper. Place them in a 9x13 inch baking dish. In a separate small bowl, combine the onion, mushrooms and soup. Mix together well and spoon over the chops.
  • Cover, and bake at 375 degrees F (190 degrees C) for 45 minutes. Uncover, and bake for 15 more minutes. (Note: Time could be less or more depending on the thickness of the chops.) Pork chops are done when their internal temperature has reached 145 degrees F (63 degrees C).

1 large skinless chicken breast (approx. 175g), sliced into 1cm-thick strips
1 egg white
2-3 tbsp vegetable oil, plus 1 tsp for the marinade
1 shallot, finely chopped
4 garlic cloves, finely chopped
½ white onion (approx. 50g), thickly sliced
2 pieces dried shiitake mushrooms, rehydrated with ½ cup of warm water for 15 mins, then sliced into 1cm strips
1 carrot (approx. 80g), thickly sliced into ½ cm thick matchsticks
2 tbsp light soy sauce
1 tbsp cooking rice wine
½ tsp ground white pepper
1½ tsp chicken bouillon
1 tsp caster sugar
2 packs ready-cooked egg noodles (approx. 557g)
½ sweetheart cabbage (approx. 200g), thickly sliced
1 spring onion, cut into 2cm pieces
1 tbsp black vinegar or Worcestershire sauce

Steps:

  • Put the sliced chicken in a mixing bowl and add the egg white, 1 tsp salt and 1 tsp oil. Massage into the chicken to make sure it's thoroughly coated. Set aside.
  • Heat 2 tbsp vegetable oil in a large lidded wok or a deep frying pan set over a medium heat on your largest hob ring. Once the oil is slightly glistening, add the chopped shallot and stir until slightly golden in colour, about 3 mins. Add the chopped garlic and fry for 30 seconds.
  • Still on medium heat, add the marinated chicken to the wok. Keep stir-frying until 70% of the chicken has changed from opaque to white. It doesn't need to be fully cooked yet. If the chicken is sticking to the pan, add another 1 tbsp oil.
  • Add the onion, mushrooms and carrots and toss with the chicken. Using two spatulas makes this easier. Stir-fry for another 30 seconds, on medium heat.
  • Turn off the heat, then add the soy sauce, rice wine, white pepper, chicken bouillon, sugar and 150ml water. Stir gently then turn the heat back on to high.
  • Add the egg noodles and, using tongs, gently toss for about 15 seconds to make sure they're thoroughly coated with the sauce. Add the cabbage on top of the noodles without mixing it in, put a lid on and let it steam for 30 seconds. Remove the lid, then mix the softened cabbage in with the noodles for about 10 seconds. Replace the lid and steam for another 30 seconds.
  • Remove the lid and gently toss, being careful not to break the noodles. Add the chopped spring onion on top and splash in the 1 tbsp black vinegar or Worcestershire sauce on the wall of the wok, in a half circle motion. Give a final gentle toss to work in the spring onion. Serve straightaway on a platter.
