4 tablespoons unflavored gelatin
1 cup cold water
1 1/2 cups boiling water
4 cups granulated sugar
1/2 teaspoon orange extract or 1/2 teaspoon peppermint extract, etc
3 -4 drops desired food coloring
granulated sugar

Steps:

  • In a large sauce pan, soften gelatin in cold water 5 minutes.
  • Stir in boiling water until gelatin is dissolved.
  • Stir in sugar and bring mixture to a boil on medium-high heat.
  • Boil to 280 degrees on a candy thermometer about 25 minutes, stirring constantly. (You can also test the candy by dropping a small amount of candy into cold water. The candy is ready when it separates into hard threads that aren't brittle.)
  • Pour mixture into two foil lined and greased 8 x 8 inch pans.
  • To each pan add 1/2 teaspoon desired favouring and desired food color (if you want clear gumdrops, do not add color).
  • Stir until combined.
  • Refridgerate pans overnight.
  • Lift foil from the pan and remove from from the sides of the candy.
  • Using a knife dipped in hot water, cut gelatin mixture into 1-inch cubes.
  • Roll each cube in granulated sugar until well coated and allow to sit at room temperature two days to crystallize.
  • Store in airtight containers.

3 envelopes unflavored gelatin
1-1/4 cups water, divided
1-1/2 cups sugar
1/4 to 1/2 teaspoon peppermint extract
4 drops each red and green food coloring
Additional sugar

Steps:

  • In a small bowl, sprinkle gelatin over 1/2 cup water; let stand 5 minutes. In a small saucepan, bring sugar and remaining 3/4 cup water to a boil over medium heat, stirring constantly. Add gelatin mixture; simmer and stir over low heat until gelatin is completely dissolved, about 5 minutes. Remove from heat; stir in extract., Divide mixture between 2 bowls; tint 1 red and the other green with food coloring. Transfer each to a greased 8x4-in. loaf pan; cool completely. Refrigerate, covered, until firm, about 3 hours., Loosen sides from pan with a knife; turn onto a sugared cutting board. Cut into 1/2-in. cubes; roll in additional sugar., Let stand, uncovered, at room temperature until all sides are dry, 3-4 hours, turning every hour.

Easy Gum Drop Cookies - fun cookies loaded with gumdrops, coconut and oatmeal they are sweet, delicious. A old-fashioned cookie that everyone loves!

1 cup brown sugar
1 cup white sugar
1 cup butter (softened)
2 large eggs
2 cups all purpose flour
2 cups oatmeal
1 cup coconut (shredded)
1 cup gum drops (plus more to top the cookies with if desired!)
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • Preheat the oven to 375 degrees.
  • In a large bowl, sift together the flour, salt, baking powder and baking soda, set aside.
  • In a separate bowl, cream butter, eggs, white sugar, brown sugar and vanilla.
  • Using a mixer, slowly incorporate the flour mixture in a couple of batches into the creamed mixture until completely mixed.
  • Stir in the coconut, oatmeal and gumdrops.
  • Drop dough onto ungreased cookie sheet.
  • Optional: Dot the top of the cookie dough with additional gumdrop pieces before baking.
  • Remove from oven, allow to rest on baking sheet for five minutes before removing and placing on wire rack.

1/2 cup unsalted butter
1/2 cup margarine
1 cup sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups quick-cooking oatmeal
1 cup flaked coconut
1 cup pecans, coarsely chopped
1 cup gumdrop, cut into pieces

Steps:

  • Cream the butter, margarine and sugar together.
  • Add vanilla and the eggs one at a time until well blended.
  • Sift the flour, baking powder, baking soda and salt together and add to egg mixture.
  • Stir until mixed well.
  • By hand, stir in the coconut flakes, chopped pecans, oatmeal and sliced gumdrops until just mixed.
  • Refrigerate the dough until it is thoroughly chilled (at least 3 hours).
  • (Chilling the dough will help the cookies keep their shape).
  • Once the dough is chilled, preheat the oven to 350°F.
  • Take a heaping tablespoon of dough and roll into a ball about the size of a walnut.
  • Place on a greased or parchment lined cookie sheet about 6 inches apart.
  • Bake for about 10 minutes or until light brown.

20 graham crackers, regular, cinnamon (individual squares) or 20 chocolate
3/4 cup butter (6 ounces)
1 cup brown sugar
1 teaspoon vanilla
1/2 cup chopped pecans, walnuts or 1/2 cup almonds

Steps:

  • Line a jelly roll pan (10x15-inch) with foil;
  • Arrange graham crackers in the pan in a single layer to cover pan.
  • Combine butter and sugar in a heavy medium saucepan; bring to a boil over medium heat, stirring occasionally.
  • Boil for 2 minutes until the consistency of carmel; stir in vanilla and chopped nuts.
  • Drizzle the hot mixture over crackers and spread evenly.
  • Bake 10 minutes at 300°.
  • Remove at once from pan to flat surface to cool.
  • When cool, break into smaller pieces.

My mom made these cookies quite often, and I always enjoyed eating these. She used the spiced gumdrops when making these cookies for Christmas (for that traditional seasonal peppermint taste), then she used regular gumdrops the rest of the year. Omit the black gumdrops though...they can give the the dough an unappetizing dark green tint. There are several variations of this cookie already posted on RecipeZaar, but this is the exact quantities and ingredients of my mom's recipe for this particular cookie. My mom used to make a batch of these cookies for our birthday parties, and then wrapped a stack of 3 cookies in cellophane, then tied it with pretty curling ribbon which she put in treat bags that our friends took home with them at the end of the party. Whatever was left over went into our school lunch bags for an extra special treat.
