ITALIAN BURGERS WITH ROASTED TOMATOES AND CARAMELIZED ONIONS
Food Network Magazine asked readers: Can you make a better burger than Bobby Flay's Spanish Burger with Pickled Shallots? Tons of you tried to beat the chef's prosciutto-and-shallot-topped Spanish burger with your own elaborate creations - here is one of the winners.

- Make the aioli: Blend the mayonnaise, sun-dried tomatoes, garlic, fresh herbs and 1/4 teaspoon each salt and pepper in a mini food processor or blender until smooth. Transfer to a bowl and refrigerate until ready to use.
- Make the roasted tomatoes: Preheat the oven to 425 degrees F and line a baking sheet with parchment paper. Pat the tomatoes dry with paper towels and arrange on the prepared baking sheet; drizzle with the olive oil and sprinkle with the dried basil, oregano and 1/2 teaspoon each salt and pepper. Roast until the tomatoes start caramelizing, about 30 minutes.
- Meanwhile, make the caramelized onions: Melt the butter in a large skillet over medium heat. Add the onions and sugar and toss to coat. Cover and cook, stirring occasionally, until golden, about 20 minutes. Increase the heat to medium high and cook, stirring, until browned and caramelized, 15 to 20 more minutes; season with salt and pepper. Remove from the heat and set aside.
- Make the burgers: Preheat a grill to medium high and brush the grates with vegetable oil. Put the beef and sausage in a large bowl and combine with your hands. Form four 3/4-inch-thick patties; season with salt and pepper. Grill the burgers until the edges begin browning, 3 to 5 minutes, then flip and top each patty with a slice of cheese. Cover and cook until the cheese is melted and the burgers are done, 3 to 4 more minutes for medium.
- Lightly toast the buns on the grill. Spread the aioli on the top and bottom buns. Sandwich with the burgers, roasted tomatoes, caramelized onions and arugula.

- Mix ground beef, 1 can tomato sauce, egg, salt, and pepper in a bowl until combined. Form 6 patties and top each with an onion slice.
- Heat oil in a large skillet over medium-high heat. Place burgers in the skillet, onion-side down, and brown for 3 to 5 minutes. Turn burgers and drain any grease. Top each burger with a lemon slice.
- Combine remaining tomato sauce, Worcestershire sauce, sugar, chili powder, and mustard; pour over burgers. Cover and simmer until burgers are cooked through and sauce has thickened, at least 1 hour.

MOLTEN CHEESE-STUFFED BURGERS

- Heat the oil in a frying pan over a medium heat and fry the onion with a good pinch of salt for 15 mins until soft and translucent. Add the pancetta and cook for 5 mins more, then add the garlic and thyme, and cook for 2 mins. Remove from the heat and leave to cool for 15 mins.
- Tip the mince into a large bowl. Massage with your hands for 5 mins to tenderise the meat, then add the cooled onion mix, the breadcrumbs and egg yolk. Season generously. Divide evenly into four, weighing for accuracy, if you like. Mix the cheddar and mozzarella together. Form the beef portions into patties, patting each into a 10cm round. Divide the cheese mixture into four, and, in your hands, form each portion into a firm ball, then press into a roughly 4cm disc. Working one at a time, put a cheese disc into the centre of a beef patty, then bring the meat around the cheese to cover. Lightly pat with the palm of your hand to flatten slightly, then chill, covered, for at least 30 mins or up to 48 hrs.
- Make the sauce by whizzing the mayonnaise, mustard and herbs together in a small food processor. Stir through the gherkins, then cover and chill until ready to use.
- Light the barbecue. When the flames have died down, grill the burgers on each side for 4-5 mins until charred (if you don't have a barbecue, see tip, below). Wrap individually in foil and leave on the barbecue for 5-7 mins so the cheese centre melts.
- Grill the buns, cut-side down, for 1-2 mins until toasted. Spread all the cut sides with the sauce, then fill with the beef patties, lettuce, tomatoes and crispy onions.

COPYCAT BURGER AND FRIES

- Cut potatoes in 1/2-inch wide strips. Place in a large bowl filled with warm water and soak for 20 minutes.
- Pour oil in a Dutch oven and heat over medium-high heat until it reaches 350 degrees F (175 degrees C). Line a rimmed baking sheet with paper towels and set a wire rack on top.
- Drain potatoes well and dry thoroughly with paper towels. Add 1/2 of the dried potatoes to the hot oil and cook, stirring often, until they soften slightly, about 3 minutes. Remove potatoes to the wire rack to drain. Repeat with remaining potatoes. Maintain oil temperature at 350 degrees F (175 degrees C) for finishing fries just before serving.
- Divide ground chuck into 4 portions and flatten to form 1/4-inch thick patties.
- Heat a large skillet over medium-high heat. Add burger patties to the hot skillet and cook undisturbed, until a brown crust has formed around the edges, 2 to 3 minutes. Flip, press down with a spatula to flatten, and cook for 2 more minutes. Flip again, press down once more, then top each patty with a slice of cheese; cook for 1 minute.
- While the burgers cook, spread mustard and ketchup on bottom halves of the buns. Drizzle hot sauce on the top halves of the buns, then spread mayonnaise over top. Layer with lettuce, tomato slices, pickles, and onions.
- Invert 1 patty onto a second patty so the cheese sides are touching. Repeat with remaining 2 patties. Place a stacked patty onto each top bun, and cover with a bottom bun, condiment-side down. Wrap burgers in foil.
- Return fries to the hot oil and cook until golden brown, 3 to 4 minutes. Drain on paper towels and sprinkle with salt. Serve immediately with burgers.

- Cut cheese into 16- 18 thin slices.
- In a bowl, combine ground beef and 1/4 C of the barbecue sauce.
- Mix until well combined.
- Divide the mixture into 8 or 10 equal amounts.
- Shape into patties.
- Place slices of cheese on the patties then place patties together so the cheese is in the center and pinch the edges shut. You should have 4 - 5 patties.
- These burgers can be cooked on the grill, under the broiler, baked or pan-fried.
- Once your burgers are done top with cheese.
- Serve on toasted hamburger buns with your choice of condiments and the remaining barbecue sauce.
BASIL BURGERS WITH SUN-DRIED TOMATO MAYONNAISE

GOOD BURGER
These aren't your everyday hamburgers. They taste a little different, but this is the only way I make them. Everyone loves these, and they are fairly simple to make. BIG GOOEY MESSY BURGERS
When my daughter was little she would always ask me to make"those big, gooey messy burgers" (most of us call them sloppy joes) however the tangy sweet flavor always gets huge reviews & recipe requests. GOOEY TOMATO BURGERS
This was one of my favorites growing up, and I still love it! Quick and pretty easy too! Its a fun recipe to play with too, sometimes I use mozzerella cheese, italian seasoning and add mushrooms for pizza burgers!

Steps:
- Divide ground beef into 8 flat patties.
- Put one slice of cheese each of four of the patties.
- Place the un-cheesed patties on top of the cheesed ones.
- Smash them closed, make sure they aren't too fat.
- Season the burgers however you want, garlic is a must.
- Place the four burgers in a skillet and brown a little while on each side.
- Once they are browned and holding together well, add both cans of sauce.
- Let the sauce and burgers simmer until cooked through.
- Its ok if some of the cheese oozes out, it flavors the sauce.
- Serve over cooked pasta or by itself.

- For the buns: Preheat oven to 325ºF, lightly butter muffin cups (a mini-muffin pan with 24 [1/8-cup] cups is recommended). Whisk together all dry ingredients. Whisk egg whites into dry ingredients until combined. Add oil in a slow stream, whisking constantly. Divide batter among muffin cups. Bake until pale golden and springy to the touch, 20 to 25 minutes. Cool in pan for 5 minutes. Remove buns and cool completely on a rack.
- For the tomato filling: Cut a shallow X in the bottom of each fresh tomato. Blanch in a saucepan of boiling water 30 seconds, then transfer to an ice bath. When cool, peel and seed tomatoes. Cut into 1/4 inch dice. Stir diced tomatoes together with sun-dried tomatoes, shallot, vinegar, and season with salt and pepper.
- Halve each bun horizontally, then fill sandwich with 1 teaspoon tomato filling, a basil leaf, and 1 teaspoon cheese filling. Buns can be baked 1 day ahead and kept in an airtight container at room temperature. Tomato and goat-cheese fillings can be made 1 day ahead and chilled.
