GRAIN-FREE HAZELNUT BROWNIES - PALEO BROWNIES

- Preheat the oven to 350F. Grease an 8-inch metal baking pan; set aside.
- In a large microwave safe bowl, heat oil and 4 oz. of chocolate chunks for 30 seconds at a time until melted (about 60 seconds total). You can also heat the oil and chocolate over a pan of boiling water to melt it.
- Add sugar, vanilla extract, and eggs and mix until well incorporated.
- Stir in the hazelnut and almond flours just until combined.
- Add the remaining 3/4 cup of chocolate chunks and stir until combined.
- Spoon the brownie batter into the pan and spread until even.
- Bake for 32-34 minutes or until the center is set.
- Remove from the oven and cool completely before cutting.
- Store leftovers covered at room temperature for up to 4 days.

EASY GRAIN-FREE ALMOND FLOUR BROWNIES
I love a one-dish baking recipe, to cut down on mess and clean-up! Unlike some gluten-free or grain-free baked goods, these have a pleasant texture as well. Experiment by adding your choice of nuts, flavored chocolate chips, and different flavor extracts. Top with icing if you wish. At Christmas, crushed candy canes and 1 1/2 teaspoons mint extract make for a nice holiday treat.

- Preheat oven to 325 degrees F (165 degrees C). Grease one 8-inch cake pan and dust with almond flour.
- Whisk almond flour, honey, walnuts, cocoa powder, eggs, coconut oil, and vanilla extract together in a large bowl. Pour into prepared pan and smooth top.
- Bake in the preheated oven until the center is set and edges pull away from sides of the pan, 20 to 25 minutes. A toothpick inserted into the center should be clean or have a few moist crumbs attached.

- In a small food processor, add the Hazelnut Meal, cocoa powder, baking soda, baking powder and salt and process until the meal breaks down and becomes lighter, and closer to the texture of flour. This only takes a minute or so. Set aside.

- Two Methods: Blender or Mixing. For a Blender: Add all ingredients to a high powered blender in the order of the ingredients. Mix on low speed just until combined, about 7-10 seconds, scraping down the sides if needed. With a Mixing Bowl & Mixer: Add melted butter or ghee, maple sugar, vanilla and cocoa powder to a large mixing bowl. With a handheld mixer, mix on low speed just until combined, about 3 seconds. Add the eggs and mix on low speed just until combined, about 3 seconds. Add the cassava flour and sea salt and mix on low speed just until combined, about 15 seconds, scraping down the sides as needed.
- Pour brownie batter into greased baking dish and bake in preheated oven for 20 to 30 minutes, until a toothpick inserted in the center comes out with only a few moist crumbs and the top is uniform and not liquid in the middle. - Preheat oven to 325º F. In a medium bowl, combine eggs and coconut sugar. Using a hand mixer or stand mixer, beat on high until light and fluffy, about 3-5 minutes. Mixture will have increased in volume and will be sticky, rather than thin or runny. Stir in almond flour, coconut flour, dark cocoa powder, cooled liquid coffee, and vanilla extract. Stir until combined.
- In a medium, microwave-safe bowl, combine 1 cup chocolate chips and coconut oil. Microwave in 60-seconds bursts, stirring very well in between each round, until the chocolate has just melted. Stir until completely smooth, then pour into the brownie batter. Stir well to combine.
- Line a 9x9" baking pan with parchment paper. Pour brownie batter into the prepared pan, making sure batter fills all corners evenly. Bake 35-40 minutes, or until a toothpick inserted into the center of the brownies comes out with moist crumbs. The toothpick should not be coated in batter, but it should not be clean, either. When you see moist crumbs, remove from the oven and let cool completely on the counter or on a wire rack. When cool, lift out of the baking pan using the sides of the parchment paper. Cut into 9 equal squares.
