My Grandmother took this recipe to all the family functions. She only gives it out to her Grandkids when they get married. Can be made with different flavors of gelatin and pudding.

1 (18.25 ounce) package white cake mix
1 (3 ounce) package lime flavored Jell-O® mix
¾ cup boiling water
½ cup cold water
4 (1.3 ounce) envelopes whipped topping mix
1 (3 ounce) package instant lemon pudding mix
1 ½ cups milk

Steps:

  • Dissolve the gelatin in the boiling water. Mix in the cold water and set aside.
  • Mix and bake cake as directed for one 9x13 inch pan. Let cake cool for 20 to 25 minutes.
  • Poke holes in cake about 1 inch apart. Pour gelatin into holes and over the top of the cake. Refrigerate cake while making the topping.
  • Mix instant pudding, whipped topping mix and milk until stiff. Frost cake and store in refrigerator.

Great Grandma Pearl's Angel Food Cake with Peaches and Cream image

My great-grandmother Pearl was famous for her angel food cake. She would enter baking contests with this recipe and always took home the blue ribbon. Among her bounty of prizes? A KitchenAid stand mixer (which came in very handy for this recipe, considering she used to beat the egg whites by hand) and a new stove! Not to mention a mighty fine sash and a ribbon proclaiming her the queen of cakes.

2 cups egg whites (from about 16 large eggs)
2 teaspoons cream of tartar
1/2 teaspoon salt
2 1/2 cups sugar
2 cups cake flour
1 teaspoon pure vanilla extract
1 teaspoon almond extract
6 to 8 canned peach halves in syrup, cut into thin wedges, syrup reserved
Lightly sweetened whipped cream

Steps:

  • Preheat the oven to 325 degrees F.
  • In a standing electric mixer, beat the egg whites at medium speed until foamy. Add the cream of tartar and salt and beat until stiff peaks form. Beat in the sugar, a few tablespoons at a time, until smooth and glossy, about 4 minutes.
  • Transfer the egg whites to a large, wide bowl. Using a fine sieve, gradually sift the flour over the egg whites, gently folding in the flour with a spatula. Fold in the vanilla and almond extracts.
  • Scrape the batter into a 10-inch angel food cake pan. Using a table knife, slice through the cake batter several times to release any large air bubbles. Tap the cake pan once or twice on a flat surface. Bake in the center of the oven for 20 minutes. Increase the oven temperature to 350 degrees F and bake for about 35 minutes longer, until a toothpick inserted in the center comes out clean. Invert the pan onto the neck of a wine bottle and let cool completely.
  • To loosen the cake, run a thin-bladed knife around the side and tube of the pan. Unmold the cake and transfer to a platter. Cut the cake into wedges and drizzle with some of the reserved syrup. Serve with the sliced peaches and whipped cream.

This was the recipe my grandmother made at Christmas during WWII when supplies were rationed and not available for regular types of fruitcakes. It has been passed down and still made each year. This year, it seems especially appropriate.

1 cup white raisins
2 cups water
1/2 cup lard
1 3/4 cups white flour
1 tsp baking soda
1 tsp nutmeg
1 cup white sugar
1 tsp cinnamon
1 tsp cloves
Dash baking powder
1/2 tsp salt
1 egg

Steps:

  • Boil raisins in water for 10 minutes. Add lard. Let melt. Sift dry ingredients together and add to raisins/lard in pan. Add egg. Pour into greased loaf pans. Bake for 45 min to 1 hour at 350 degrees.

This is my grandma's recipe for German Chocolate Cake. This was all of us kid's favorite for birthdays. I made this for my husband on our first date on his birthday, and it's a tradition in our family now. We always use black walnuts, but you can use English walnuts. The hot water sounds weird, but that's the way my family has made it for years.

1 cup margarine, softened
2 cups sugar
2 eggs
1 cup buttermilk
2 1/2 cups flour
2 teaspoons baking soda
1/2 teaspoon salt

1/2 cup cocoa
1 cup boiling water
1 cup evaporated milk
1 cup sugar
3 egg yolks
1/4 lb margarine, softened
1 teaspoon imitation vanilla
1 1/3 cups coconut
1 1/2 cups black walnuts, chopped (you can use English walnuts if you prefer)

Steps:

  • I make this in either a greased and floured 9 x 12 inch pan or 2 9-inch round pans. For the 9 inch pans I also add wax paper cut to the pan size in the bottom of the pan.
  • I start checking for doneness after 40 minutes for a 9 x 12 pan, and 25 minutes for the 2 9-inch pans. When a toothpick inserted into the middle of the cake comes out clean it's done.
  • Cream margarine and sugar.
  • Add eggs, one at a time, and beat well.
  • Add buttermilk and dry ingredients.
  • Add boiling water and beat until mixed.
  • Bake in a preheated 350 degree oven for 45-55 minutes or until done.
  • For Icing- Combine milk, sugar, egg yolks, margarine and vanilla.
  • Cook and stir over medium heat until thickened, about 15 minutes.
  • Add coconut and nuts.
  • Beat until thick enough to spread.

2 tablespoons lemon juice
1 1/2 cups flour
1 1/2 cups rolled oats
1 cup brown sugar

  • Date filling: Place water and dates in saucepan. Cover and cook on low heat for 15 minutes, stirring occasionally, until the filling is thickened and smooth. If the cooking mixture is too thick, add a little water.
  • Stir in the lemon juice. Set aside.

6 large eggs, at room temperature
3 cups all-purpose flour

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 10-inch tube pan.
  • Beat butter with an electric mixer until soft and creamy, scraping the sides of the bowl as you go, about 2 minutes. Gradually add in sugar on medium speed. Add eggs one at a time, beating after each addition until the yellow disappears from the previous one.

1 Tbsp. baking powder
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 cup butter, softened
2 cups sugar
1 tsp. vanilla
6 eggs

Steps:

  • Heat oven to 350ºF.
  • Mix flour and baking powder; set aside. Beat cream cheese, butter, sugar and vanilla in large bowl with mixer until blended. Add eggs, 1 at a time, beating after each until blended. Gradually beat in flour mixture on low speed until blended.
  • Pour into 12-cup fluted tube or 10-inch tube pan sprayed with cooking spray.
  • Bake 1 hour or until toothpick inserted near center comes out clean. Cool in pan 10 min. Loosen cake from sides of pan with knife. Invert cake onto wire rack; gently remove pan. Cool cake completely.

1 ½ cups sifted pastry flour
¼ teaspoon salt
¾ teaspoon baking soda
1 cup packed brown sugar

¾ pound pitted dates, diced
1 cup water
⅓ cup packed brown sugar
1 teaspoon lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine oats, pastry flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square baking pan.
  • In a small saucepan over medium heat, combine the dates, water, and 1/3 cup brown sugar. Bring to a boil, and cook until thickened. Stir in lemon juice, and remove from heat. Spread the filling over the base, and pat the remaining crumb mixture on top.

This delightful Christmas cake is traditionally rich, moist and full of flavour, it's probably as old as the hills! It came from my mother's old hand written recipe book written well before the last World War. Mum told me that she got it from her mother and even then it was called mums best Christmas cake - so we wonder just how many generations this goes back. If only recipes could talk what tales they could tell. The only alteration I have made to this cake is to cut the eggs down from 6 to 5 as eggs these days are so big compared to years ago. The ingredients were carefully saved over a few months as rationing was on for many years and this cake always took pride of place for afternoon tea on Christmas day. This cake is so well worth taking the time to make it, I have cut down the amount of eggs to 5 as eggs these days are so much larger than they used to be.

10 ounces currants
10 ounces sultanas
7 ounces raisins
5 ounces glace cherries
4 ounces blanched almonds
10 ounces margarine
10 ounces plain flour

1 pinch salt

Steps:

  • Warm margarine to room temperature Cream the sugars and margarine until smooth and creamy. Add one egg at a time mixing one tablespoon of the flour between each egg (this prevents curdling).
  • Blanche Almonds if necessary then add ALL the ingredients EXCEPT the remaining flour stirring well then add the remaining flour folding in well.
  • Line an 8-9 inch metal cake tin with greaseproof paper place the mixture in making a bit of a dip in the middle, by doing this the cake will come out more even.
  • Cook in a slow oven 150c for approx 3 hours check with a satay stick through the centre to see if its cooked then tip out onto a cake rack to cool.
  • I usually cook this in the early afternoon and leave overnight to cool completely, just to make sure that there is no heat in the centre as once you wrap it up if there is, it will sweat and can make the cake go mouldy.
  • Wrap in two layers of Foil and keep in a cupboard. at the start of December prick the top of the cake lightly and dribble over a tot of Brandy, reseal and turn over two weeks later.
  • Mums idea:.
  • Line the tin as usual but also wrap brown paper around the outside tying it tightly with some string leaving the level of the paper higher than the cake so if necessary you can put some paper over the top to stop it browning too much toward the end of cooking.
  • Cook this cake late October or Early November.
