Grandma's Chicken and Rice Casserole is one of those dishes the entire family will eat. This casserole is a perfect way to take leftover chicken, rice - and even hard-boiled eggs - and turn them into a whole new dish.

1 teaspoon butter
1 medium onion (diced)
1 cup celery (diced)
1 cup cooked chicken (diced)
1 10.5 oz. can cream of mushroom soup
1 cup rice (cooked)
3/4 cup mayonnaise
1 teaspoon lemon juice
3 hard-boiled eggs (diced)
3/4 cup cornflakes (crushed)

Steps:

  • In a skillet over medium heat, cook onion and celery in the butter until tender; do not brown.
  • Once the onion and celery are cooked, mix all ingredients together except cornflakes. Be sure to use cooked chicken and cooked rice!
  • Pour into a 2-quart baking dish that has been sprayed with non-stick cooking spray.
  • Sprinkle crushed cornflakes over top.
  • Bake at 375 degrees F for 30 minutes.

This chicken and rice casserole is one of my favorite recipes from my grandmother. It makes great leftover meals, too, perfect for someone with a busy lifestyle.

1 teaspoon butter
2 cups diced cooked chicken
1 (10.5 ounce) can condensed cream of chicken soup
1 cup cooked rice
1 cup diced celery
¾ cup creamy salad dressing (such as Miracle Whip®)
4 large hard-cooked eggs, chopped
1 tablespoon lemon juice
1 teaspoon minced onion
½ cup cornflake crumbs
½ cup slivered almonds

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 11x7-inch baking dish with butter.
  • Stir chicken, soup, rice, celery, salad dressing, eggs, lemon juice, and onion together in a large bowl. Pour into the prepared baking dish. Sprinkle with cornflake crumbs.
  • Bake in the preheated oven for 45 minutes. Sprinkle with almonds and bake until bubbly, about 15 minutes longer.

I found this light Mexican casserole posted on another site. If you use mild salsa, it can be a mild dish for those who don't like heat.

1 1/2 cups boneless skinless chicken breasts, cooked and diced
1 (10 3/4 ounce) can cream of chicken soup
1 cup salsa
2 cups rice, cooked and hot
1/3 cup low-fat cheddar cheese, shredded
6 tablespoons fat free sour cream
1 teaspoon parsley flakes, dried

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, combine chicken, soup, 1/2 cup salsa, and 2 tablespoons sour cream. Add parsley flakes, rice, and cheese. Mix well to combine.
  • Pour mixture into baking dish. Bake 20 minutes.
  • In a small bowl, combine remaining 1/2 cup salsa and 4 tablespoons sour cream.
  • Spread mixture evenly over top of casserole and continue baking 10 minutes.
  • Place baking dish on wire rack and let set for 2 to 3 minutes.

1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
1 tablespoon vegetable oil
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) tomato sauce
1 can (4 ounces) chopped green chilies
1-1/2 teaspoons chili powder
1 teaspoon onion powder
Tortilla chips or hot cooked rice
Shredded cheddar cheese

Steps:

  • In a large skillet, cook chicken in oil for 5-6 minutes or until no longer pink. Add corn, tomato sauce, chilies, chili powder and onion powder; bring to a boil. Reduce heat; cover and simmer for 10-12 minutes, stirring occasionally. Serve over tortilla chips or rice and sprinkle with cheese.

1 cup heavy cream, no substitutions

  • For the oven: Preheat oven to 375.
  • Place chicken in a 13 x 9 baking dish.
  • Combine all remaining ingredients, mix very well and pout over chicken. Turn once to coat all sides.
  • Cover w/ foil and bake at 375 for 30 minutes.
  • Remove cover and bake uncoveres for additional 20-25 minutes, or until chicken is done.
  • Crockpot: Place chicken in crockpot.
  • Mix everything else together and pour over chicken.
  • Cover and cook on low for about 7 hours or until done.

1 chicken thigh with skin

Steps:

  • Place rice, water, sesame oil, chicken bouillon, olive oil, green onion, garlic and ginger in a rice cooker. Stir, and then place chicken thigh on top. Turn on rice cooker.
  • When the rice is done, mix the rice so that the oil will be evenly mixed with the rice. Serve.
