This comes from a rich German heritage. Grandma always made the best "apfel" kuchen. Her recipes were always simple, but tasted great!

4 -5 cups baking apples, Granny Smith (or other)
1 1/4 cups white flour
1 teaspoon baking powder
2 teaspoons sugar
1/2 teaspoon salt
1/2 cup unsalted butter
1 egg
2 tablespoons milk
2 tablespoons unsalted butter
3/4 cup sugar
1 1/2 tablespoons white flour
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350°F.
  • Mix 1 1/4 cup flour, baking powder, 2 tsp sugar, and salt and sift once.
  • Cut 1/2 cup butter into dry mix with a pastry blender to pea size.
  • In a small bowl, beat egg with 2 T milk and add to dry mix.
  • Mix thoroughly and pat dough into a greased or oiled 9x13-inch baking dish.
  • Pare and core apples.
  • Cut into thin wedge slices and place on dough in rows until covered. We would cover the thin end of one apple with the thick end of the other.
  • Dot apples with 2 T butter and mix 3/4 cup sugar, 1 1/2 Tbs flour and cinnamon together.
  • Spread dry topping over dotted apples, and bake in oven for 30-45 minutes, until golden brown.

Peaches and custard baked to a chewy, gooey perfection on a tender cookie crust. Can be made all year with canned peaches. Delicious hot with ice cream or alone cold.

2 cups all-purpose flour
¼ teaspoon baking powder
½ teaspoon salt
1 cup white sugar, divided
½ cup butter
6 fresh peaches - peeled, pitted and halved
1 teaspoon ground cinnamon
2 egg yolks
1 cup heavy cream

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Sift the flour, baking powder, salt and 2 tablespoons of sugar into a large bowl. Cut in butter by pinching between your fingers until the mixture resembles coarse cornmeal. Press into the bottom and up the sides of a 9x13 inch baking dish. Place the peach halves cut side up on top of the crust in a nice pattern. Mix together the remaining sugar and cinnamon; sprinkle over the peach halves.
  • Bake for 15 minutes in the preheated oven. While the peaches are baking, whisk together the egg yolks and cream in a medium bowl. Pour over the peaches after the 15 minutes are up.
  • Reduce the oven's temperature to 350 degrees F (175 degrees C). Return the dish to the oven, and bake for 30 to 40 minutes, until golden brown.

Freezes well, and totally makes me feel 7 again... My timing for the baking of the kuchen may not be accurate - my grandparents had a very old oven that they baked them in...

1 (1/4 ounce) package yeast
1/2 cup warm water
2 tablespoons sugar
4 eggs, beaten
3/4 cup sugar
1 cup warm water
1 cup warm milk
1 teaspoon salt
1/2 cup melted butter
6 1/2-7 cups flour
cinnamon (for sprinkling)
sugar (for sprinkling)
4 eggs, beaten
1/2 cup sugar
1 teaspoon vanilla
1 pinch salt
1/4 cup flour
1 pint sweet cream
4 cups apple pie filling, crushed
2 cups sour cream
2 cups brown sugar
1 pinch salt
1 teaspoon vanilla
4 eggs, beaten

Steps:

  • KUCHEN: Dissolve yeast in 1/2 cup warm water and 2 tbsp sugar. Beat eggs 6 to 8 minutes.
  • Add sugar and beat again. Add yeast. Mix salt with milk and water. Add half of the flour and mix well with big spoon. Add melted butter and mix well. Then add the rest of the flour to make a soft dough.
  • Let rise 1 1/2 hours. Punch down. Let rise 1 hour.
  • Roll out dough quite thin, and divide between 14 small tin pie plates.
  • After topping is on the kuchen, sprinkle with cinnamon and sugar and bake at 350 for about 45 minutes or until done.
  • CUSTARD: Beat eggs, add remaining ingredients and mix well. Apple slices or crushed apples can be put on top of custard if you like.
  • APPLE: Beat eggs, add remaining ingredients and mix well and pour in the middle of the kuchen.
