GRANDMA DOLORES' IRISH SODA BREAD
I got this recipe from my grandmother, who is part Irish. I have always loved this soda bread recipe and make it every year for St. Patrick's Day. Even though the seeds are listed as optional, I consider them a key flavor. If you can't find them, it will taste be tasty bread, but I much prefer the caraway flavor in there.

Steps:
- Place lemon juice into the bottom of a glass measuring cup and pour in enough milk to fill to the 1 cup mark-Do not stir!
- Leave milk on your counter for 1 hour- during this time, measure out all of your other ingredients, but wait to set out the butter until the last 15 minutes.
- Preheat oven to 350F and grease a round cake pan or pie plate.
- Sift together flour, baking soda, baking powder, sugar, and salt.
- Using a pastry blender or two knives, cut in the butter chunks until evenly mixed in and mixture looks grainy.
- Stir in dried fruits and caraway seeds.
- Pour the milk mixture into the bowl and stir with a wooden spoon until all ingredients are moistened- don't overmix.
- Dough will still be tacky at this point but will pick up more flour while kneading.
- Sprinkle some flour onto a flat surface and scape dough onto the floured surface; flour your hands and knead the dough gently until it forms a ball- no more than 2 minutes or you will toughen the dough, and it may be less than that depending upon the humidity of the day.
- (As long as it forms a ball, it can still be little sticky- this is different from yeast bread.) Place dough ball into prepared pan and flatten slightly into a thick disk.
- Using a serrated knife, make a deep cross in the surface of the bread.
- Bake until golden brown and until bread sounds hollow on the bottom when rapped, about 35-45 minutes.

- Preheat oven to 350 degrees F. Sift together flour, baking powder, salt and sugar in large bowl.
- Mix in raisins and caraway seeds (optional). Melt shortening. Beat eggs and combine with milk.
- Mix liquids with dry mixture. Knead on well-floured surface. Shape into a round loaf and place in floured iron skillet.
- Mark an "X" (lightly score) across the top using a sharp knife. Bake at 350 degrees for 50 minutes. Cool on wire rack.

- Adjust an oven rack to the upper-middle position and preheat oven to 400°.
- Line a baking sheet with parchment paper or spray generously with vegetable oil spray.
- Whisk the flours, sugar, baking soda, cream of tartar, and salt together in a large bowl.
- Work 2 tablespoons of the butter into the dry ingredients with a fork until the texture resembles coarse crumbs.
- Stir in the buttermilk (and raisins, if using) with a fork just until the dough begins to come together.
- Turn out onto a lightly floured counter.
- Knead just until the dough becomes cohesive and bumpy; about 30 seconds (do not knead until smooth).
- Pat the dough into a 6-inch round about 2 inches thick.
- Place on the prepared baking sheet.
- Cut an X into the top of the loaf using a serrated knife or clean razor blade.
- Bake until the loaf is golden brown and a skewer inserted into the center comes out with just a few crumbs attached, about 40 to 45 minutes.
- Remove the loaf from the oven and transfer to a wire rack.
- Melt the remaining 1 tablespoon butter and brush over the top.
- Let the loaf cool for 1 hour.

MRS. SHARP'S IRISH SODA BREAD
This is a delicious recipe I found in the book "Mrs. Sharp's Traditions." This is a dense, subtly flavored bread that is wonderful as part of breakfast or a quick snack. It's also a snap to prepare!

- Mix together flour, soda, salt, and sugar.
- Add sour milk and stir together with a wooden spoon. The dough should be thick and sticky, but not too wet.
- Turn dough onto a floured surface and form with hands into a round loaf. Place the loaf into a cast-iron frying pan or heavy round casserole dish that has been greased with butter. Score the top in the form of a cross with a wet knife (dig in at least an inch).
- Bake at 350 degrees for 40 minutes. Bread should cool for an hour before serving (but I like to eat it while it's still warm!).
- Note: If the loaf is made with whole-meal wheat flour, it is known as brown bread; if made with unbleached white flour, it's Irish soda bread. Authentic Irish soda bread is made with sour milk, not buttermilk, or milk soured by adding vinegar or lemon juice. To sour milk, simply leave it out overnight.
BRIAN BROPHY'S IRISH SODA BREAD
This is the very best Irish Soda Bread. The recipe was given to me by my friend, Brian Brophy, with an assist from Mean Chef who gave me the technique for making it light and airy.

- Preheat oven to 350°F.
- Mix dry ingredients in a large bowl.
- Toss mixture with hands or wire whisk to make it light and airy.
- Put dry mixture and butter into a food processor and pulse a few times until butter is the size of peas Return to bowl and add raisins and/or caraway seeds if using.
- Beat eggs in a separate bowl, add buttermilk and blend well.
- Pour egg mixture, a little at a time, into dry mixture.
- Blend well with a spoon or spatula.
- Don't overmix.
- Dough should be heavy, but not too wet.
- If too dry, add a little more buttermilk.
- Dust hands with flour and mold dough into a round.
- Place dough into a greased 9" round pan.
- Dust top generously with flour.
- Cut a deep cross into the dough.
- This will prevent the bread from cracking, and it looks traditional.
- Bake at 350°F for one hour, or until well browned and center is not doughy.
- Cool on rack, and serve warm w/butter and jam.

- Butter a 9-inch round cake pan.
- Sift together the dry ingredients.
