HISTORICAL RECIPE: CHRISTMAS PUDDING

Steps:
- Cream butter and brown sugar until smooth. Add in raisins, carrot, potato and egg. Stir in flour and baking soda.
- Grease 2 small glass bowls or one large bowl. Fill with pudding. Leave about an inch between the top of the pudding and the top of the bowl to give it room to rise.
- Cover the bowl with a piece of parchment, followed by a piece of tin foil, secured with string. My grandmother used a clean piece of muslin instead of the parchment.
- The pudding can be steamed in a double boiler, or you can place the pudding in a large pot, placing the pudding bowl on a small ramekin or mason jar ring to keep it off the bottom of the pot. Pour water in the bottom to no more than 1/3 of the way up the sides of the bowl.
- Steam the pudding for 2 - 3 hours, or until a toothpick comes out clean. My small puddings are usually done at 2 hours, with a large pudding taking the full three. Add additional hot water to your pot as necessary to keep your pot from boiling dry.
- Turn the pudding out onto a plate and serve hot with brown sugar sauce.
- Brown Sugar Sauce Instructions
- Melt butter in a saucepan. Whisk in brown sugar and continue to stir constantly until boiling. Boil for two minutes. Remove from the heat and whisk in milk and vanilla. Return to the heat and stir constantly until the mixture once again comes to the boil. Thin with more milk or cream if necessary. Serve warm.
GRAN'S HARD SAUCE FOR CHRISTMAS PUDDING
This is my grandmother's recipe that we use every year at Christmas to put over the Christmas pudding. It's very simple and oh so tasty. Please note that we have tried to half the recipe before and it doesn't seem to work out.

GRANDMA'S CHRISTMAS PUDDING
Grandma made this pudding for the holidays. I never cared for it, but my dad loved it! This takes two days, and will tie up your oven for 7-8 hours! NOTE: This uses beef suet as an ingredient. Don't know of any substitute for it.

Steps:
- Soak the sultanas, currants, figs, mixed peel, cherries and the apricots in the brandy in a bowl overnight if possible or for at least a few hrs (if you don't have time for this, place the fruit in a microwaveable bowl with the brandy and give it a quick blast in the microwave to plump up). In a larger bowl, mix the ginger and syrup, apples, orange juice and zest, eggs, suet, crumbs, sugar and flour. Using your fingers or a wooden spoon, mix in the soaked fruit and mixed spice.
- Butter 2 x 1.5-litre pudding basins and divide the mixture between them, filling almost to the rim. Smooth the tops and cover with 2 circles of greaseproof paper. Cover each pudding with a sheet of foil with a folded pleat down the centre, to allow the pudding to expand, and secure everything by tying it tightly with some string. Stand the puddings in a deep, large pan (or 2 if that's easier) on trivets or upturned saucers and pour boiling water around so it comes about a third of the way up. Cover the pan and steam the puddings for 5 hrs, topping up with more boiling water when necessary.
- Let the puddings cool down before removing the foil and greaseproof paper, then cover with cling film over the top and store in a cool, dry place if you aren't using them straight away. This is the time you can drizzle them with more booze in the run-up to Christmas if you have time. To reheat, steam the pudding for 1 hr more before turning out and flaming with hot brandy.

OLD FASHIONED DATE PUDDING
My mother-in-law always whipped up this old-fashioned dessert at Thanksgiving and Christmas. My husband and I enjoy the chewy dates and sweet thick syrup drizzled on top. It's impossible to resist a second helping.

Steps:
- Place everything but stout and eggs into your largest bowl and mix. Add stout and eggs, and stir everything together. Spoon into pudding basins - we used 1 x 2 litre, 1 x 1 litre and 1 x 500ml basins. Cover with pleated greaseproof paper and foil and secure with string.
- Lower the puds into saucepans with upturned saucers or scrunched-up bits of foil in the bottom (so the puds don't touch the bottom), then fill with water from the kettle until it comes halfway up the sides of the basins. Simmer the small pud for 1½ hrs, medium for 2½ hrs and large for 3½ hrs (topping up with water as necessary). Cool, then store in a cool, dry cupboard for up to 1 year.
- To serve, re-boil puds as above to heat through, 1½ hrs for small, 2½ hrs for medium and 3½ hrs for large (top up as necessary). Turn onto a plate, decorate, and serve.

- Grandma's Old Fashioned Cake Donuts. Having a special celebratory breakfast on Christmas always makes it a more memorable holiday. This recipe was shared by Michael Yeo who says, "This is a recipe handed down from my Grandma Thayer.
- Grandma's Cocktail Meatballs. Having a small slow cooker full of these meatballs makes for an easy appetizer that guests can help themselves to.
- Grandma's Hash Brown Casserole. Creamy, cheesy, and oh-so-satisfying, hash brown casserole is a classic grandmother dish around the holidays.
- Grandma's Gingersnap Cookies. A wintertime classic, gingersnap cookies are a must-have for Christmas gatherings. This melt-in-your-mouth recipe by Marie Ayers relies on a mixture of dark molasses, cinnamon, and (of course) ground ginger for a rich flavor.
- Grandma's Corn Bread Dressing. A staple for holiday dinners and potlucks, this cornbread dressing has Southern and savory notes that are sure to satisfy.
- Grandma's Ham. "This is an easy, delicious ham that my grandma has made every year for Christmas," Fawn says. "I got to make it for the first time last year for my family, and it is always wonderful and beautiful."
- Grandma's Carrot Cake. A relatively labor-intensive dessert, due to chopping nuts and grating veggies, carrot cakes are just fine if limited to special occasions only.
- Grandma Leach's Fruitcake. Whether you love it or love to hate it, fruitcake is a Christmas requirement. This recipe doesn't rely on traditional eggs, but instead uses applesauce and oil to ensure a moist cake.
- Grandma Edna's Christmas Cabbage. While cabbage might not be the first on your list of Christmas foods, this buttery and comforting casserole may change that.
- Grandma Me's Clove-Studded Leg of Lamb. Spiced with whole cloves and sweetened with apricot nectar, this bone-in leg of lamb tastes worthy of a Christmas feast.
