GRANDMA'S MEATBALLS



Grandma's Meatballs image

This was always a favorite of mine while growing up. Loved to go to Grandma's when she was making this meatball dish. Never thought to get the recipe before she passed away. Lucky for me, while visiting my dad, I asked him about it, and he had me make them. Tasted just like I remembered. Add my cucumbers and sour cream recipe (also from Grandma), some mashed potatoes and string beans or corn on the side, and you have a great meal.

2 ½ pounds ground beef
½ cup chopped onion
2 large eggs, beaten
1 tablespoon chopped fresh parsley
¼ teaspoon garlic powder
1 pinch salt and ground black pepper to taste
½ cup all-purpose flour
1 tablespoon butter
1 tablespoon vegetable oil
1 large onion, sliced 1/4-inch thick
2 cups water

Steps:

  • Combine beef, chopped onion, eggs, parsley, garlic powder, salt, and pepper in a large bowl. Mix until well blended.
  • Form mixture into meatballs slightly larger than a golf ball.
  • Spread flour onto a plate and dredge meatballs in flour to lightly coat, shaking off excess.
  • Heat butter and oil in a large Dutch oven or deep-sided frying pan over medium heat. Add meatballs in batches and brown evenly, about 5 minutes per batch. Remove and drain on paper towels.
  • Add onion slices to to the pot and brown lightly, 5 to 7 minutes. Return meatballs to the pot and add water to partially cover. Reduce heat to low, cover, and let simmer for about 1 1/2 hours, adding more water if necessary.

2 teaspoons olive oil
1 medium onion, chopped
3 garlic cloves, minced
3/4 cup seasoned bread crumbs
1/2 cup grated Parmesan cheese
2 large eggs, lightly beaten
1 teaspoon each dried basil, oregano and parsley flakes
3/4 teaspoon salt
1 pound lean ground turkey
1 pound lean ground beef (90% lean)
Optional: Hot cooked pasta and pasta sauce

Steps:

  • Preheat oven to 375°. In a small skillet, heat oil over medium-high heat. Add onion; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer. Cool slightly., In a large bowl, combine bread crumbs, cheese, eggs, seasonings and onion mixture. Add turkey and beef; mix lightly but thoroughly. Shape into 1-1/2-in. balls., Place meatballs on a rack coated with cooking spray in a 15x10x1-in. baking pan. Bake until lightly browned and cooked through, 18-22 minutes. If desired, serve with pasta and pasta sauce.

¼ cup crushed saltine crackers
1 egg
1 (1 ounce) package dry onion soup mix
2 tablespoons vegetable oil
14 ounces apple jelly
13 ounces ketchup
½ cup red wine

Steps:

  • Mix together beef, crackers, egg, and onion soup mix in a bowl; shape into about 50 1-inch balls.
  • Heat oil in a non-stick skillet over medium-high heat. Brown meatballs in hot oil, about 2 minutes per side.
  • Stir apple jelly and ketchup together in a large pot over medium-high heat; cook and stir until the jelly melts and the mixture is smooth. 4 ounces dried bread crumbs
4 large eggs
4 ounces whole milk
6 ounces grated Romano
3 ounces grated Spanish onion
2 ounces finely diced fresh garlic
2 ounces finely chopped fresh Italian parsley leaves
2 ounces finely chopped fresh basil leaves

Steps:

  • Preheat oven to 350 degrees F. Spray a baking sheet with olive oil cooking spray.
  • Mix all ingredients thoroughly in large bowl. If mixture seems a little loose add more bread crumbs.

As long as I can remember, my Grandma Audrey made these meatballs on Christmas Eve. A few years back, she shared the recipe with me. These are great for any party, but at my house, Christmas Eve just wouldn't be the same without them! These can be made ahead, and just heated when ready to serve.

2 lbs ground beef
1 medium onion, minced
1 1/2 teaspoons garlic powder
1 teaspoon onion powder
1/4 cup parmesan cheese
salt and pepper
1/4 cup breadcrumbs (I like Italian flavor)
1/4 cup milk
1 egg
1 teaspoon oregano
1 pinch thyme
2 tablespoons A.1. Original Sauce (optional)
3 cups barbecue sauce (I use Famous Daves, or Ken Davis)

Steps:

  • Preheat oven to 375º.
  • Combine all ingredients except bbq sauce in a bowl, and form into smaller sized meatballs.
  • Place meatballs on a cookie sheet and bake 15-20 minutes, or until cooked through.
  • (time will depend on size of meatballs).
  • When cooked through, remove meatballs from cookie sheet and drain off excess grease.
  • Put meatballs and barbecue sauce in a crock pot, and stir to combine.
  • Keep on the"keep warm" setting.
