Steps:
- Add all the dry ingredients and sift.
- Beat the egg yolks and add them to the milk.
- Stir the liquid ingredients into the dry ones.
- Add your melted butter.
- Now add your cheese.
- Beat the egg whites until they are stiff and add them to the batter just before making.
- Preheat the waffle iron for 2 minutes.
- Add batter, cook and enjoy!

Steps:
- Combine flour, baking powder, salt.
- In a separate bowl beat egg YOLKS and then add milk and butter.
- Combine dry mixture with egg+milk+butter mixture. Beat until smooth.
- Beat egg whites until stiff, but not dry.Slowly add sugar, beating constantly.
- Mix 1/3 of beaten whites with batter then fold remaining whites in carefully.
- Pour around 3/4 cup of batter in waffle iron.

GRANDMOTHER GERMANOTTAS SALAMI PECORINO CHEESE WAFFLES
Steps:
- In a large bowl, combine flour, cornmeal, baking powder and sift together with whisk . Add herbs and cheese and toss. Fry salami in olive oil till crispy. Remove from oil and blot on towels to drain. Chop into a fine crumble. Reserve cooking oil for batter. Combine in second bowl milk, eggs, reserved oil, and beat well. Add wet ingredients to dry ingredients and carefully mix but do not over beat. Fold in crumbled salami. Preheat waffle iron, spray generously with cooking spray, place thinly sliced uncooked salami on waffle grates. Pour batter on grates and bake according to manufacturer's directions. Bake till golden and crisp. Serve with fried turkey or fried chicken. Makes 6 single waffles 
FETA CHEESE WAFFLES

Steps:
- Preheat a shallow waffle iron to its highest setting. Spray the iron on the top and bottom with cooking spray. Place the block of feta in the center of the waffle iron, then press until the feta melts and the waffle iron closes. Allow to cook until golden brown and crisp, 3 to 5 minutes. Mix together the tomatoes, olive oil, olives, parsley, oregano, garlic and lemon zest and pour into a food processor. Briefly pulse until the mixture looks coarse. Taste and season to your liking. Remember, feta is salty; do not over season with salt. Remove the feta waffle from the waffle iron and cut into 8 wedges. Place on a platter and serve with the tomato mixture.
