'Grands-peres au sirop d'erable', or 'Grandfathers in maple syrup' are dessert dumplings that are cooked in maple syrup and are a French Canadian classic. Here is my grandmother's recipe. Dumplings can be served warm or cold.

1 ½ cups all-purpose flour
½ cup white sugar
2 tablespoons baking powder
½ teaspoon salt
¼ cup margarine
1 cup milk
1 cup maple syrup
1 cup water

Steps:

  • Combine flour, sugar, baking powder, and salt in a bowl. Rub in margarine until mixture is crumbly. Add milk and mix until a smooth dough forms.
  • Combine maple syrup and water in a large saucepan over medium-high heat and bring to a boil. Scoop dough into dumplings using an ice cream scoop and drop gently into the boiling syrup. Reduce heat to low and simmer, keeping saucepan covered, until dumplings are cooked but not gooey and syrup has thickened, 10 to 15 minutes.

2 Granny Smith apples - peeled, cored and quartered
1 (8 ounce) can refrigerated crescent rolls
⅛ teaspoon ground cinnamon
½ cup butter
¾ cup white sugar
1 cup orange juice
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Wrap each apple piece in one crescent roll. Place seam side down in an 8x8 baking dish and sprinkle with cinnamon.
  • In medium saucepan, combine butter, sugar, and orange juice; bring to a boil. Remove from heat and stir in vanilla. Pour over rolls.
  • Bake for 30 minutes, or until pastry is golden and apples are tender. Spoon sauce over rolls when serving.

3 teaspoons baking powder
1/4 cup shortening
3/4 cup 2% milk
2 cups maple syrup
1/2 cup water
Optional toppings: vanilla ice cream, maple ice cream or whipped cream

Steps:

  • Preheat oven to 400°. In a large bowl, combine flour and baking powder. Cut in shortening until crumbly. Gradually add milk, tossing with a fork until dough forms a ball; set aside., In a small saucepan, bring syrup and water to a boil. Carefully pour into an 11x7-in. baking dish. Drop dough by tablespoonfuls into syrup mixture., Bake, uncovered, until a toothpick inserted in a dumpling comes out clean, 22-28 minutes. If desired, serve warm with ice cream or whipped cream.

2 tablespoons baking powder
1/2 teaspoon salt
1 1/2 cups flour
1/4 cup shortening
1 cup milk
1 1/2 cups maple syrup
1 cup water

Steps:

  • Preparation of the grandfathers : Mix sugar, baking powder, salt and flour. Incorporate shortening. Add milk and mix until the dough is homogeneous.
  • Syrup preparation : In a big casserole, bring to boil the maple syrup and water. With an ice cream spoon, do balls with the dough and put in the casserole. Cover and let simmer for 15 minutes but don't remove the cover during the cooking time.

1 3/4 cups maple syrup (do not use imitation syrup)
1 1/4 cups water
1 1/2 cups flour
4 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
4 tablespoons unsalted butter, frozen
3/4 cup milk

Steps:

  • Bring syrup and water to a boil in a 6 qt Dutch oven over medium-high heat.
  • While the syrup/water is rising to a boil, whisk flour, baking powder, and salt in a bowl. Set aside.
  • Grate butter on large holes of a box grater into flour and toss to coat. Add milk and stir with a fork until dough forms.
  • When syrup mixture reaches a boil, use a spoon to drop large clumps of dough into syrup.
  • Cover pot and simmer until dumplings are cooked through (10-15 minutes). Spoon dumplings and sauce into 6 bowls and serve.

1 3/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon freshly grated nutmeg
2 tablespoons cold unsalted butter, cut into bits
1 cup well-shaken buttermilk
2 cups pure maple syrup (preferably Grade B or dark amber)
2 cups water
Garnish: freshly grated nutmeg
Accompaniment: plain whole-milk yogurt or sour cream

Steps:

  • Sift together flour, baking powder and soda, salt, and nutmeg into a bowl. Blend in butter with a pastry blender or your fingertips until mixture resembles coarse meal. Add buttermilk and stir with a fork just until dough is evenly moistened (do not overmix).
  • Bring syrup and water to a boil in a 4-quart pot at least 10 inches wide. Drop 8 1/2-cup measures of dough into syrup, leaving spaces to allow dumplings to expand. Gently simmer over moderately low heat, covered, until tops of dumplings are dry to the touch, 15 to 20 minutes. Serve warm.

1/4 cup red cinnamon candies
1/4 teaspoon ground cinnamon

DUMPLINGS:
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2/3 cup shortening
2/3 cup cold whole milk
6 small baking apples, peeled and cored
3 tablespoons butter
1 large egg white, beaten
1 tablespoon sugar
Half-and-half cream, optional

Steps:

  • Combine all sauce ingredients in a medium saucepan. Bring to a full rolling boil, stirring occasionally. Set aside. , For dumplings, combine flour, baking powder and salt in a large bowl. Using a fork or pastry blender, cut in shortening until mixture resembles coarse crumbs. Sprinkle in milk, mixing lightly with a fork until a soft dough forms. Shape into a ball. , On a lightly floured surface, roll dough to an 18x12-in. rectangle. Cut into six squares. Place an apple in the center of each square; dot with butter.
