Strawberry Chicken Salad with Poppy Seed Dressing image

A quick, light, and flavorful lunch or dinner salad that's ready in just 15 minutes!

3 cups fresh baby spinach
3 cups chopped Romaine lettuce
2 cups sliced strawberries
1 stalk celery, thinly sliced
1 avocado, diced
⅓ cup crumbled feta cheese
½ cup slivered almonds, toasted and salted
3-4 cups cooked, shredded or sliced chicken (such as the meat from a store-bought rotisserie chicken)
½ cup Brianna's Poppy Seed dressing, or more or less to taste

Steps:

  • In a large bowl or platter, or on individual plates, arrange spinach and Romaine.
  • Top with strawberries, celery, feta, almonds and chicken.
  • Drizzle with poppy seed dressing, to taste. Serve immediately.

1 package (5 ounces) spring mix salad greens
1 small red onion, thinly sliced and separated into rings
1/2 cup cubed fresh pineapple
2 packages (6 ounces each) ready-to-use grilled chicken breast strips
2 medium tomatoes, seeded and chopped
1 medium cucumber, chopped
1 pint fresh strawberries, sliced
3/4 cup crumbled blue cheese
3/4 cup raspberry vinaigrette

Steps:

  • Place salad greens in a large shallow bowl. In rows, arrange the onion, pineapple, chicken, tomatoes, cucumber and strawberries. Sprinkle with blue cheese. Drizzle with vinaigrette.

1 teaspoon honey
2 teaspoons poppy seeds
2 cups chopped, cooked chicken
¾ cup sliced fresh strawberries

2 stalks green onions, chopped
2 tablespoons chopped fresh parsley
salt and ground black pepper to taste

Steps:

  • Mix mayonnaise, lemon juice, honey, and poppy seeds together in a medium bowl. Add chicken, strawberries, pecans, celery, green onions, parsley; toss to combine. Season with salt and pepper.

This wonderful summer salad that is a meal all in one with grilled chicken, strawberries, avocado, spinach, and romaine lettuce topped with a sweet poppy seed dressing.

½ cup olive oil
¼ cup cider vinegar
2 tablespoons honey
2 teaspoons white sugar
1 ½ teaspoons poppy seeds
½ teaspoon salt
½ teaspoon ground dry mustard
½ teaspoon grated onion
¼ cup Italian-style salad dressing
3 tablespoons teriyaki sauce
2 medium boneless chicken breasts
2 cups baby spinach, torn into bite-sized pieces
2 cups torn romaine lettuce
2 cups hulled and sliced strawberries
1 ripe but firm avocado, pitted and sliced into bite-sized pieces
½ cup toasted pecans

Steps:

  • Combine olive oil, vinegar, honey, sugar, poppy seeds, salt, mustard, and grated onion in a blender. Transfer dressing to a bowl or jar and refrigerate at least 1 hour before serving.
  • Combine Italian dressing and teriyaki sauce in a sealable container and add chicken. Seal and marinate at least 30 minutes to 1 hour before grilling.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Remove chicken from marinade and grill until juices run clear, 5 to 8 minutes per side. Remove from heat, let cool about 10 minutes, and cut into bite-sized pieces.
  • Toss grilled chicken, spinach, and romaine lettuce together in a large serving bowl. Gently stir in strawberries and avocado. Refrigerate until ready to serve.
  • Top salad with dressing and pecans when serving.

DRESSING:
1/2 cup honey
1/2 cup red wine vinegar
4 teaspoons soy sauce
1 garlic clove, minced
1/2 teaspoon ground ginger
1/4 teaspoon salt
Dash pepper
SALAD:
1 pound boneless skinless chicken breasts, cut into strips
1 tablespoon canola oil
1 teaspoon butter
8 cups torn mixed salad greens
1 pint fresh strawberries, sliced
1/4 cup chopped walnuts
Additional whole strawberries, optional

Steps:

  • In a small bowl, combine the dressing ingredients. In a large skillet, cook and stir chicken in oil and butter until no longer pink. Add 1/2 cup salad dressing; cook 1 minute longer. , Place the salad greens in a serving bowl. Top with chicken, sliced strawberries and walnuts. Garnish with whole strawberries if desired. This salad will go well with almost any meal and give an exotic touch to it. It is also a perfect "stand-alone" meal or for buffet or garden parties and it is not much work.

4 tablespoons orange juice
1 tablespoon olive oil
1 tablespoon lemon juice
2 teaspoons sugar
1/4 cup soy sauce
2 green onions, sliced into small pieces
1 garlic clove, minced
12 ounces boneless skinless chicken breasts
4 cups spinach leaves
1 (11 ounce) can mandarin oranges, drained
1 cup strawberry, sliced

Steps:

  • Dressing.
  • Combine half of the orange juice, oil, lemon juice, and sugar in a screw-top jar. Cover and shake well. Chill dressing until serving time.
  • Marinade.
  • Combine soy sauce, green onions, rest of the orange juice, and garlic. Place chicken in a plastic bag set into a shallow dish. Add marinade; seal bag. Turn chicken to coat well. Chill for at least 2 hours or up to 24 hours, turning chicken occasionally. Remove chicken from bag, reserving marinade.
  • Chicken.
  • Grill chicken on an uncovered grill directly over medium coals for 5 minutes. Brush chicken with marinade; turn chicken and brush with marinade. Grill for 7 to 10 minutes more or until chicken is tender and no longer pink. Cool slightly; slice chicken breasts.
  • Serving.
  • Line 4 individual salad plates with spinach leaves. Arrange oranges, strawberries, and chicken breast slices on spinach-lined plates. Shake dressing; drizzle over salads.
