Oats and Honey Granola Pie image

Enjoy the old-fashioned flavors of oats, brown sugar and walnuts in a pie filling that goes together in minutes.

1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
1/2 cup LAND O LAKES® Butter
1/2 cup packed brown sugar
3/4 cup corn syrup
1/8 teaspoon salt
1 teaspoon vanilla
3 LAND O LAKES® Eggs, lightly beaten
4 Nature Valley™ Oats 'n Honey crunchy granola bars (2 pouches from 8.9-oz. box), crushed (3/4 cup)*
1/2 cup Fisher® Chef's Naturals® chopped walnuts
1/4 cup quick-cooking or old-fashioned oats
1/4 cup Hershey's® semi-sweet or milk chocolate baking chips
Whipped cream or ice cream, if desired

Steps:

  • Heat oven to 350°F. Place pie crust in 9-inch glass pie plate as directed on box for One-Crust Filled Pie.
  • In large microwavable bowl, microwave butter on High 50 to 60 seconds or until melted. Stir in brown sugar and corn syrup until blended. Beat in salt, vanilla and eggs. Stir crushed granola bars, walnuts, oats and baking chips into brown sugar mixture. Pour into crust-lined pan.
  • Bake 40 to 50 minutes or until filling is set and crust is golden brown. During last 15 to 20 minutes of baking, cover crust edge with strips of foil to prevent excessive browning. Cool at least 30 minutes before serving. Serve warm, at room temperature or chilled with whipped cream or ice cream. Cover and refrigerate any remaining pie.

I made this pie for the first time when I hosted Thanksgiving last year. Everyone loved it. This recipe is definately a keeper!

Number Of Ingredients 14

1 cup flour
1/3 cup shortening
1/2 teaspoon salt
7 tablespoons water (give or take depending consistency of dough)
1/2 cup butter
1/2 cup brown sugar
3/4 cup corn syrup
3 eggs
1 teaspoon vanilla
1/8 teaspoon salt
4 nature valley crunchy granola bars (Crushed)
1/2 cup oatmeal
1/2 cup walnuts
1/4 cup chocolate chips

Steps:

  • Crust: Cut Shortening into Flour in a large mixing bowl.
  • Add Salt.
  • Add Water 1 Tablespoon at a time while kneading until you've reached desired consistency (not too stiff or sticky).
  • You can use your own pie crust recipe or a store bought crust if you like.
  • Pie Filling: In a saucepan, melt butter.
  • Add brown sugar and corn syrup and stir until sugar is completely dissolved. (DO NOT BOIL!).
  • Remove from heat and set aside.
  • In a mixing bowl beat eggs, vanilla and salt for about 30 seconds.
  • Add sugar mixture, granola bars, oatmeal and walnuts and stir everything together.
  • Add chocolate chips last so they don't melt.
  • Pour filling into pie crust.
  • Bake at 350 degrees for 45 minutes.

This sweet-and-spiced granola is meant to be eaten for dessert. Cinnamon-sugar pita chips mimic golden brown pie crust, and apple chips add just the right touch of tart and sweet. Eat plain, with a spoon, or sprinkle over vanilla ice cream for twist on pie a la mode.

4 tablespoons unsalted butter, melted
1/2 teaspoon kosher salt
1 3/4 cups old-fashioned rolled oats
1 1/2 cups cinnamon-sugar pita chips, crushed into 1/4-inch pieces
3 tablespoons packed light brown sugar
3 tablespoons pure maple syrup
1 teaspoon pure vanilla extract
1/2 teaspoon apple pie spice
1 cup apple chips, crushed

Steps:

  • Position an oven rack in the center of the oven, and preheat to 325 degrees F. Whisk together the butter, brown sugar, maple syrup, vanilla, apple pie spice and salt in a large bowl. Add the oats, and toss until evenly coated. Spread out on a rimmed baking sheet.
  • Bake the mixture until golden and toasted, 30 to 35 minutes, stirring about halfway through. Let cool completely on the baking sheet. Stir in the pita chips and apple chips. (The granola can be stored in an airtight container at room temperature for up to 5 days.)

1 premade deep-dish frozen pie crust
3 (12-ounce) bags frozen mixed berries, thawed (recommended: Dole)
1 lemon, zested and juiced
1 cup sugar
3 tablespoons instant tapioca
3/4 cup flour
1/4 cup packed brown sugar
4 tablespoons cold butter, cubed
1 cup granola
1 (8-ounce) container whipped topping
2 tablespoons maple syrup

Steps:

  • Preheat the oven to 375 degrees F. Place a rack in the bottom third of the oven. Put the pie shell on a baking sheet lined with parchment paper.
  • In a large bowl, combine the berries with the lemon zest and juice, the sugar and instant tapioca. Stir together to completely combine and set aside.
  • In a medium bowl, mix together the flour and brown sugar. Using a fork or a pastry cutter, cut in the butter until the mixture resembles coarse crumbs. Mix in the granola.
  • Pour the berry mixture into the pie crust and top with the granola crumb topping. Bake until the inside of the pie is bubbling and the top is golden brown, 45 to 50 minutes. (If the top browns too quickly, cover loosely with aluminum foil.) Remove from the oven and cool at least 1 hour on a wire cooling rack before serving.
  • Combine the whipped topping and maple syrup and mix until well blended. Serve with the pie.

  • Preheat oven to 350 degrees F (175 degrees C). Spread oats onto a 10x15-inch jelly roll pan.

5 cups granola
¾ cup coconut oil, melted
1 tablespoon coconut oil, solid
1 cup strawberry, sliced, plus more for garnish
1 cup blackberry
1 cup raspberry, plus more for garnish
1 cup blueberry
½ cup organic sugar
½ cup water, + 3 tablespoons, divided
2 tablespoons lemon juice
3 tablespoons cornstarch

Steps:

  • Add the granola to a food processor and process until fine crumbs form.
  • Add the melted coconut oil and pulse to combine.
  • Grease a 9-inch (23 cm) pie dish with the solid coconut oil.
  • Pour the granola mixture into the dish and press the crumbs firmly with the bottom of a measuring cup, making sure to cover the bottom and sides of the dish evenly. Place the pie dish into the refrigerator to firm up for an hour.
  • Meanwhile, combine the strawberries, blackberries, raspberries, blueberries, sugar, ½ cup (120 ml) water, and the lemon juice in a medium saucepan. Cook for 4-5 minutes. or until the sugar is dissolved and the berries begin to release their juices, creating a loose, deep red mixture.
  • In a small bowl, mix the cornstarch and remaining 3 tablespoons of water into a smooth paste. Add the cornstarch mixture to the berries and cook for another 2 minutes, until the filling thickens. Remove from the heat and let cool for 5 minutes.
  • Remove the chilled pie crust from the refrigerator and pour in the berry compote. Spread the filling evenly.
  • Chill the pie in the refrigerator for at least for 1 hour before serving.
  • Garnish with fresh berries to your taste.
