GRAPEFRUIT MOUSSE



Grapefruit Mousse image

This is something a little different it is not very sweet but very refreshing. You would have to like grapefruit to enjoy this. The cooking time includes refrigeration time.

2 red grapefruits
4 sheets gelatin
1 lime
1/2 cup Quark or 1/2 cup ricotta cheese
2 -3 tablespoons honey
1 cup whipping cream
2 tablespoons vanilla sugar
3 tablespoons water
3 egg whites

Steps:

  • Peel or cut the skin off one grapefruit so that there is none of the white inner skin on the fruit.
  • Then section the grapefruit and take the meat out of eat individual section, discard the membrane ( try to take out in one piece if possible), put on a small plate and set aside.
  • Soften the geletin in a bowl of cold water.
  • Wash the lime well under hot water.
  • With a zester try to zest long thin stips off the skin off the lime (or use a knife, to be used to decorate the dish).
  • Juice the lime and the second grapefuit into a medium bowl.
  • Add the quark and honey and mix well.
  • Whip the cream and vanilla sugar, fold into the cheese mixture.
  • Take the softened gelatin out of the water and put into a small pot with 3 tbsps water and heat until gelatin is desolved.
  • Pour the gelatin into the grapefruit cream mixture stir well.
  • Then refrigerate for 10-15 minute to slightly gelled.
  • In the meantime beat the egg whites to form stiff peaks.
  • Take the grapefruit cream out of the fridge and fold the egg white foam into the mixture.
  • Rinse 4 jelly molds or coffee cups with cold water.
  • Pour the mixture into jelly molds.
  • Put the molds into the fridge for 4 hours until set.
  • To serve, demold the mousse onto serving dishes and decorate with the set aside grapefruit and lime zest.
  • Enjoy.

2 hearts romaine lettuce
2 cups jarred citrus salad of orange and grapefruit sections, drained - fresh oranges and grapefruits may also be used but to supreme fruit (method below*) takes extra time
2 tablespoons marmalade
2 tablespoons white wine or cider vinegar
1/3 cup extra-virgin olive oil
Salt and pepper
2 tablespoons chopped or snipped chives

Steps:

  • Chop lettuce. Arrange lettuce on platter and top with pieces of grapefruit and orange.
  • *To supreme fresh oranges and/or grapefruits instead, cut off ends then remove skin in strips working all the way around the fruit from top to bottom. Cut along the side of the membrane to remove the sections of the citrus fruit.
  • Combine marmalade with 2 splashes of vinegar and stream in extra-virgin olive oil. Pour dressing over the salad and season with salt and pepper. Garnish platter with chopped or snipped chives.

  • Cut the peel and pith from 1 pink grapefruit with a paring knife, then cut into segments and chop. Whip 1 1/2 cups heavy cream with 6 tablespoons sugar and 1 tablespoon Campari until soft peaks form. Fold in the grapefruit. Divide among bowls.

  • Preheat broiler.

John's Citrus Fish, Savoy Cabbage and Couscous with Peas and Chives image

3 tablespoons extra-virgin olive oil, divided, plus extra for drizzling
3 tablespoons butter, divided
1 small savoy cabbage, 1 1/4 pounds, quartered then shredded
2 cups chicken stock
Salt and pepper
2 grapefruits or 4 oranges, grated zest from 1 grapefruit or 2 oranges
4 (8-ounce) red snapper fillets, skin scored
1 large shallot, thinly sliced
1/2 cup dry white wine
1 1/2 cups couscous
1 cup green peas
2 tablespoons chopped or snipped fresh chives, 10 to 12 blades

Steps:

  • Heat a large skillet over medium-high heat with 1 tablespoon extra-virgin olive oil, 1 turn of the pan and 1 tablespoon butter. When butter melts into oil, add the cabbage and cook 2 to 3 minutes to wilt it down a bit. Season with salt and pepper and add 1/2 cup chicken stock to the skillet. Reduce heat to medium low and cook 10 minutes, stirring occasionally.
  • Cut ends off citrus, either grapefruit or oranges. Stand the citrus upright and trim away peel in strips with a small sharp knife cutting from top to bottom, spinning the citrus around as you work. Once cleaned of skins, cut the sections of the fruit away from the membranes.
  • Season the fish with salt and pepper and grapefruit or orange zest. Heat a nonstick skillet over medium-high heat with 1 tablespoon extra-virgin olive oil, 1 turn of the pan. When oil ripples, add fish. Cook fish 3 to 4 minutes on each side, skin side down first. Skin should be crisp and flesh should be opaque. Remove fish to a platter and cover with foil to keep warm. Return pan to stove top and add another tablespoon extra-virgin olive oil, 1 turn of the pan, and the shallots. Cook shallots 2 minutes then add the citrus to the pan and warm through a minute. Add white wine and reduce 1 minute then add a tablespoon of butter. Turn off heat. Shake pan to combine butter with citrus.
  • While the sauce is working, bring 1 1/2 cups chicken stock, 1 tablespoon butter and a drizzle of olive oil to a boil in a medium pot with a tight fitting lid. When stock boils, add couscous, peas and chives to pot. Turn off heat, stir and set lid in place. Let stand 5 minutes then uncover and fluff with a fork. Transfer to a serving dish.
  • Place cabbage in a serving dish. Uncover fish. Pour citrus and sauce over fish and serve.

1 grapefruit, juice and zest of, four 4-inch strips peel
6 tablespoons sugar
2 large egg yolks
1 cup marshmallow cream
1 cup heavy cream
1 tablespoon honey

Steps:

  • In a small saucepan, bring the grapefruit juice, 2 peel strips and the sugar to a boil, stirring, until the sugar is dissolved and the liquid is reduced by half, 8 minutes. Remove from the heat.
  • In a medium bowl, whisk the egg yolks, then whisk in half of the hot grapefruit syrup, pouring in a slow, steady stream. Whisk the yolks into the remaining grapefruit syrup and cook, whisking, over low heat just until thickened, 2 to 3 minutes. Immediately strain into a small bowl set in a larger bowl of ice water and let cool. Discard the peel strips.
  • In a medium bowl, stir the marshmallow cream until smooth, then fold into the grapefruit mixture.
  • Using an electric mixer, whip the heavy cream and honey on high speed until soft peaks form, 2 to 3 minutes. Fold the whipped cream into the grapefruit-marshmallow mixture.
  • Spoon the mousse into dessert cups and refrigerate for 2 hours. Cut the remaining 2 peel strips into slivers and sprinkle on the mousse before serving.
