Tangy & Sweet Tomato Dressing image

Wonderfully tangy, barely sweetened with raw honey, this easy tomato salad dressing is perfect drizzled over fresh greens, mixed into pasta salad, or used as a marinade for steak or chicken! Nothing mixes together more quickly than a homemade vinaigrette! Enjoy! Makes about 3 cups.

1/2 cup pure water
1/2 cup apple cider vinegar
1-1/2 cups extra virgin olive oil
4 tablespoons tomato paste
2 tablespoons raw honey (or to taste)
1 teaspoon ground black pepper
2-1/2 teaspoons sea salt
1 teaspoon prepared mustard

Steps:

  • Blend all ingredients thoroughly in high-powered blender such as the Vitamix.
  • Pour into glass jar or dressing container.
  • Refrigerate.

This is a delicious salad dressing that is easy to make. I normally have all the ingredients in my pantry. I like to serve this dressing over a tossed salad with strips of green bell peppers, ripe black olives, cherry tomatoes and a little grated mozzarella cheese.

1 (2/3 ounce) envelope Italian salad dressing mix (such as Good Seasons Zesty Italian)
1/4 cup white vinegar
1 (8 ounce) can tomato sauce
3/4 cup canola oil

Steps:

  • Mix all ingredients together.
  • Place in refrigerator for at least two hours before serving.
  • Pour over salad greens just before serving.

When late-season and bruised tomatoes show up at the market, stock up.

Yield Makes about 3 cups

Number Of Ingredients 6

3 pounds tomatoes
Kosher salt
1/2 cup olive oil
4 garlic cloves, crushed
4 small sprigs rosemary
2 tablespoons unsalted butter

Steps:

  • Slice a thin round off the bottom of each tomato. Starting at cut end, grate tomatoes on the largest holes of a grater over a medium bowl until all that's left is the flattened tomato skin and stem; discard. Season grated flesh with several generous pinches of salt.
  • Heat oil in a large skillet over medium. Cook garlic, tossing occasionally, until golden brown, about 3 minutes. Add rosemary and cook, tossing, just until fragrant and starting to brown around edges, about 1 minute. Reduce heat to medium-low, add tomatoes, and bring to a simmer. Cook, stirring often, until mixture is slightly thickened, 5-10 minutes. Remove from heat, add butter, and stir until melted. Taste and season with more salt as needed.
  • Sauce can be made 3 days ahead. Let cool; cover and chill.

Number Of Ingredients 7

1 cup garlic-infused olive oil
1/2 cup white balsamic vinegar (reduced by 1/3)
3 cloves garlic, sliced
2 large tomatoes, peeled, chopped and divided
3 tablespoons chopped fresh tarragon, divided
Kosher salt and freshly cracked black pepper
Tomato slices, for serving

Steps:

  • In a non-reactive bowl, whisk together the oil and vinegar until completely combined. Add the garlic, half the tomatoes and half the tarragon. Season with salt and pepper and stir to coat. Cover and chill 6 hours.
  • Strain the mixture through a fine sieve and discard the solids. Stir in the remaining tomatoes and tarragon. Serve over slices of fresh tomato.
  • BYOC: Use your favorite herb here and tailor this dressing to the meal or your family's favorite flavors... fresh thyme oregano, basil, chervil, parsley, anything goes! Try serving this sweet and tangy dressing tossed with fresh baby spinach, a baby mesclun mix or even butter lettuce and blue cheese.
