As a military spouse living overseas, I got the chance to try many styles of cooking. Here's a Mediterranean-inspired recipe that we still love today. -Stacey Boyd, Springfield, Virginia

4 cod fillets (6 ounces each)
2 tablespoons olive oil
1/4 teaspoon salt
1/8 teaspoon pepper
1 small green pepper, cut into thin strips
1/2 small red onion, thinly sliced
1/4 cup pitted Greek olives, sliced
1 can (8 ounces) tomato sauce
1/4 cup crumbled feta cheese

Steps:

  • Preheat oven to 400°. Place cod in a greased 13x9-in. baking dish. Brush with oil; sprinkle with salt and pepper. Top with green pepper, onion and olives., Pour tomato sauce over top; sprinkle with cheese. Bake until fish just begins to flake easily with a fork, 15-20 minutes.

Delicious fish cakes made with cod, potatoes, onion, butter, and parsley! You can substitute salmon for cod if you would rather make salmon cakes.

2 large potatoes, peeled and halved
1 pound cod fillets, cubed
1 tablespoon butter
1 tablespoon grated onion
1 tablespoon chopped fresh parsley
1 egg
3 tablespoons oil for frying

Steps:

  • Place the potatoes in a large pot of water, bring the water to a boil. Let the potatoes cook until they are almost tender.
  • Add the fish to the pot and let the fish and potatoes cook until they are both soft. Drain well and transfer the potatoes and fish to a large mixing bowl.
  • Add butter, onion, parsley, and egg to the bowl; mash the mixture together. Mold the mixture into patties.
  • Heat oil in a large skillet over a medium-high heat. Fry the patties on both sides until golden brown. Drain on paper towels before serving.

1/2 pound boneless, skinless salt cod
1 cup grated calabaza (see note)
1 tablespoon chopped fresh thyme
2 scallions, green tops and 1 inch of the white, minced
1 small clove garlic, minced
1/3 cup flour
1/4 teaspoon baking powder
1 tablespoon butter, melted
1 egg
Freshly ground black pepper to taste
1 1/2 cups fine fresh bread crumbs
2 to 3 tablespoons corn oil
West Indian hot sauce (see note)

Steps:

  • Rinse the cod, place it in a glass bowl and add cold water to cover. Cover the bowl tightly and place in the refrigerator. Let the fish soak for 12 to 24 hours, or until it's softened, changing the water three or four times.
  • Rinse the cod again and place in a saucepan. Add boiling water to cover and let the fish steep over low heat until very soft, about 15 to 20 minutes. Drain well, then flake into small pieces into a bowl.
  • Add the calabaza, thyme, scallions and garlic and toss together to mix. Combine the flour and baking powder and add to the bowl, tossing again. Add the butter and the egg and mix with your hands until all the ingredients are well combined. Season with pepper to taste.
  • Divide the mixture into 8 patties, about the size of biscuits, and lay them into the bread crumbs to coat on both sides.
  • Heat the oil in a large heavy skillet over a medium-high flame until it sizzles. Gently lay the cakes into the oil and fry until crisp and browned on both sides, about 5 or 6 minutes total. Drain on paper towels and serve hot, with a spoonful of hot sauce alongside each one.

1 large russet potato
1/4 cup minced onion
1 teaspoon lemon juice
1 egg, beaten
1/2 teaspoon Old Bay Seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup all-purpose flour
2 cups vegetable oil
10 ounces beer batter frying mix, you can use Kittencal's Beer Battered Fish instead
1 1/4 cups chilled beer or 1 1/4 cups chilled water

Steps:

  • Cut potato in the middle, in 1/4 inch slices, saving the 4 biggest slices, soak in cold water.
  • Add fish, onions, lemon juice, egg, Old Bay, salt, and pepper, to a mixing bowl; stir well.
  • Shape mixture into patties.
  • Mix beer or water with beer batter mix or use recipe #69213.
  • Combine patty with a slice of potato.
  • Carefully dredge in flour and then in beer batter.
  • With a slotted metal spoon, slowly put in deep fryer of 2 cups vegetable oil.
  • Cook for about 3 minutes or until golden brown.
  • Drain on paper towels.

2 medium red onions, grated
4-5 spring onions, finely chopped
1/2 bunch of dill, finely chopped
1/2 bunch of parsley, finely chopped
1 can(s) beer
250 g self-rising flour
lots of freshly ground pepper
1 egg

Steps:

  • Cook time: 10 Min Prep time: 15 Min Serves: 6 1. Prepare the cod, in order to soak the salt out. Place it in a bowl filled with water and leave for 48h. Remember to change the water frequently. 2. Then flake the cod, removing the skin, and place it in a large bowl. Add the rest of the ingredients leaving the flour for last. (In case you're in a hurry or just don't want to add the egg, you can omit it). Mix well, cover and leave the mixture to rest and the different flavours to mingle for 20 minutes. 3. Wet a spoon in water, take a spoonful of the mix and carefully place in frying oil. Saute'/ fry for a couple of minutes until golden and crispy. Remove and place on kitchen paper to soak up any excess oil. Serve with garlic sauce.

Dredge patties in remaining 1/4 cup panko, pressing to coat.
  • Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add 4 patties to pan, and cook for 4 minutes on each side or until golden. Remove from pan, and drain on paper towels. Repeat procedure with remaining olive oil and patties. Drizzle with remaining 1 tablespoon juice.
  • To prepare sauce, combine canola mayonnaise and remaining ingredients. Serve sauce with cakes.
