Greek Tahini & Honey Ice Cream image

COOKING TIME IS COOLING TIME. This is a Greek recipe for a Lenten desert. During the Lenten season, it meets the criterion of an Orthodox-Christian fasting diet - no meat or meat by-products, no eggs, no milk! According to Peter Minakis, in his popular Greek cooking blog Kalafogas, "If you love sesame Halva, you're going to enjoy this rich dairy-free ice cream that's easy to make and satisfying."

2 cups almond milk
1 tablespoon vanilla extract
1 cup tahini paste (ensure the tahini in the jar is mixed well before using)
1/2 cup icing sugar
1/2 cup honey
1 fluid ounce Amaretto (almond liqueur)

Steps:

  • Pour all of the ingredients into a large bowl and stir well with a wooden spoon. Taste and adjust flavoring accordingly.
  • Cover and refrigerate for at least 4 hours or overnight.
  • Assemble your ice cream maker and pour the chilled mixture into the frozen bowl and process for 25 minutes.
  • Put the ice cream into covered container and place in the freezer for at least 2 hours to set.
  • Serve drizzled with honey and sprinkled lightly with sesame seeds.

If you have never tried tahini ice cream, you are in for a taste treat that is right on trend.

2 (14 ounce) cans full-fat coconut milk, chilled overnight
1 cup sliced strawberries, divided
¼ cup tahini
5 pitted dates, soaked in hot water for 30 minutes and drained
1 teaspoon almond extract
¼ cup sliced almonds
¼ cup sliced fresh strawberries
1 tablespoon sesame seeds

Steps:

  • Freeze the base of your ice cream maker for at least 12 hours.
  • Combine coconut milk, 1/2 cup strawberries, tahini, dates, and almond extract in a high-speed blender. Blend until strawberries are broken down and mixture is combined, about 1 minute. Pour mixture into an ice cream maker and churn according to manufacturer's directions, 5 to 10 minutes.
  • As mixture starts to thicken, add remaining 1/2 strawberries and sliced almonds. Continue mixing until thickened, 10 to 20 minutes more.
  • Serve immediately as soft-serve ice cream garnished with additional strawberries and sesame seeds. Alternatively, place ice cream in the freezer for 1 to 2 hours to firm up.

This dessert is adapted from the Perfect Greek collection of 100 essential recipes. It's so easy to throw together in the ice cream freezer and has a wonderful creamy mouthfeel and summer fresh tart taste. The whole family loved it. Note: times indicated are for prep time only and do not consider the freezing time, as it varies, depending on method used.

Number Of Ingredients 4

4 1/4 cups Greek yogurt
2/3 cup heavy cream
2/3 cup caster sugar (superfine sugar)
6 tablespoons lemon juice

Steps:

  • Mix the ingredients and pour into a the container of an ice cream maker. Follow manufacturer recommendations for freezing. Place in into freezer and allow to rest at least 2 hours before serving.
  • Alternately, pour the mixture into a shallow freezer container and freeze, uncovered, for 1 - 2 hours, or until the mixture begins to set around the edges. Turn the mixture into a bowl and, with a fork, stir until smooth. Return to the freezer container, cover, and freeze for another 2 - 3 hours, until firm.
