Greek Yogurt Treat (High-Protein Breakfast) image

I made up this simple recipe about a year ago that I thought was similar to peanut butter and jam! Since then I have been hooked and haven't eaten any other type of yogurt since! I include this healthy choice about every second day as part of my breakfast as it is quite filling and I find very satisfying! This treat can be used as a great snack or dessert and is quite high in protein and low in sugar.

½ cup plain fat-free Greek yogurt
2 ounces fresh raspberries, or more to taste
1 tablespoon peanut butter
1 tablespoon flaxseed meal
¼ teaspoon ground cinnamon
3 drops dark chocolate liquid stevia

Steps:

  • Combine yogurt, raspberries, peanut butter, flaxseed meal, cinnamon, and stevia together in a bowl. Mash with a fork until thoroughly mixed.

½ cup fresh blueberries
½ cup sliced fresh strawberries
1 teaspoon white sugar
6 tablespoons granola, or as needed
1 (6 ounce) container nonfat vanilla Greek yogurt
1 teaspoon lemon zest

Steps:

  • Add blueberries and strawberries to a small bowl. Sprinkle with sugar; stir to coat the berries.
  • Place 2 tablespoons granola in the bottom of 2 parfait glasses. Spoon 2 tablespoons yogurt on top and sprinkle with 1/2 teaspoon lemon zest. Top with 1/3 of the berries. Repeat layers until the parfait glasses are full.
