4 , large poblano chile kimmy, , roasted and peeled

1 tablespoon vegetable oil
1/2 teaspoon salt, or to taste

Steps:

  • 1. Prepare the chiles. Then, cut out the stem end section of the chiles. Discard the stems and cut the chiles open. Remove the seeds and veins. Rinse the chiles, blot with paper towels, and cut into thin strips (about 2 inches × 1/4 inch). 2. Heat the oil in a medium skillet over medium heat and cook the chile strips until shiny and heated through, about 1 to 2 minutes. Season with salt.From "1,000 Mexican Recipes." I was making Chilie Rellenos and some of the chilies were coming apart in strips, so rather than throw them away - i battered and fried them - everyone LOVED them!! We make them about once a week now!

12 fresh roasted green chilies, peeled and seeded
2 cups flour
1 teaspoon salt
1/2 teaspoon pepper
2 eggs, beaten
2/3 cup milk
oil (for frying)

Steps:

  • Pull apart green chilies into about 3/4" to 1" wide strips.
  • Set aside.
  • In medium bowl, mix flour, salt and pepper- set aside.
  • In separate bowl, mix eggs and milk.
  • Heat oil to med-high heat.
  • Dip chilies into flour mixture, egg mixture and again in flour mixture- fry until golden brown.
  • Serve with ranch dressing or a cheese sauce.

PORK GREEN CHILE

A simple and, in my opinion, authentic version, this recipe comes down at least 3 or 4 generations of my family. You will know it's done when the sauce has a medium thickness. Remember, the longer it cooks, the better it will taste. You can serve smothered over burritos or with warm tortillas, beans and/or fried potatoes. Also delicious with fried eggs (Huevos rancheros). Substitute 4 or 5 chopped roasted chiles for green chiles and jalapenos if you prefer.

2 tablespoons vegetable oil
1 ½ pounds cubed pork stew meat
2 tablespoons all-purpose flour
1 (4.5 ounce) can diced green chile peppers, drained
½ (3.5 ounce) can chopped jalapeno peppers
½ medium onion, chopped
5 tablespoons tomato sauce
3 ½ cups water
onion salt to taste
garlic salt to taste
salt and black pepper to taste

Steps:

  • Heat oil in a large cast iron skillet over medium-high heat. Stir in cubed pork, and cook until nicely browned and cooked through, about 15 minutes. Remove skillet from heat, and allow to cool briefly.
  • Sprinkle flour over pork. With a wooden spoon, stir pork to coat, scraping the bottom of the skillet to loosen browned bits. Add chile peppers, jalapenos, and onions. Stir in tomato sauce and water. Season to taste with onion salt, garlic salt, and salt and pepper.
  • Return skillet to medium heat. Bring to a simmer, cover, and cook 30 minutes, stirring occasionally. Remove cover, and cook 10 minutes more.

This was a favorite among our guests at the bed and breakfast where I cooked for many years. If you wish, add sautéed onions or diced tomatoes to the mix. I sometimes serve this dish with pinto or black beans and a warmed flour tortilla. This dish also lends itself well to be served with a side of chorizo sausage or any other breakfast meat of your liking.

1 corn tortilla, cut into thin strips
3 tablespoons chopped green chile peppers

  • Heat butter in a skillet over medium heat; cook and stir tortilla strips and green chile peppers until strips are softened, 2 to 3 minutes. Add eggs and Cheddar cheese; cook and stir until eggs are cooked through, 3 to 4 minutes.

I was given this recipe from a co-worker. Her family really enjoys this recipe. Putting it here for safe keeping for our family to try for brunch.

6 flour tortillas
1 (24 ounce) jar salsa
1 lb monterey jack cheese, grated
5 eggs, beaten
1 (4 ounce) can green chilies, diced
2 cups milk
1 teaspoon salt
1/4 teaspoon cumin
1/4 teaspoon chili powder

Steps:

  • Grease 13 by 9 inch baking dish.
  • Cover bottom of pan with 3 of the tortillas cut to cover bottom of dish, not overlapping.
  • Alternate layers of 1/3 of salsa spread over tortillas and 1/3 of cheese and repeat twice adding last layer of last 3 cut tortillas with addition of last 1/3 of salsa and cheese.
  • Combine eggs, chiles, milk and seasonings. Pour over the top of strata. Refrigerate at least 45 minutes.
  • Bake @ 350 degrees for 35 minutes.
