CHILE AND CHEESE BISCUIT CUPS
These simple, savory pull-apart biscuits get a spicy boost of flavor from shredded cheese and Old El Paso chopped green chiles. Pull them together with just 15 minutes of prep time, thanks to Bisquick mix.

Steps:
- Heat oven to 375°F. Spray 9 regular-size muffin cups with cooking spray.
- In medium bowl, stir together Bisquick mix and milk until soft dough forms. Shape heaping teaspoonfuls of dough into 27 balls; flatten each ball into flat round.
- In small bowl, mix chiles, cheese and taco seasoning mix.
- Place 1 dough round on work surface; top with about 1/2 teaspoon of chile mixture. Top with second dough round, another 1/2 teaspoon of chile mixture and third dough round. Place stack in muffin cup, edges facing toward bottom of cup; gently fan out edges. Repeat with remaining dough rounds and chile mixture.
- Bake 12 to 15 minutes or until golden brown. Serve warm.

GREEN CHILI CASSEROLE
This casserole is also great when made with fresh long green chiles. Makes a wonderful brunch dish, but we also have it for lunch quite often.

- Preheat oven to 350 degrees F (175 degrees C). Grease an 8x12 inch baking dish.
- Line the bottom of dish with green chiles. Sprinkle with 1/2 cup shredded cheese. Repeat layers twice more. In a medium bowl, whisk together milk and eggs. Season with salt and pepper. Pour egg mixture over chiles and cheese.
- Bake in preheated oven for 25 to 30 minutes, or until filling is set. Let stand 5 to 10 minutes before serving.

This is SO good and SO easy! The variations are also limitless. Not sure anymore where I found it. Better make two while you're at it, because it disappears before you can get any. :-)

Steps:
- Heat oven to 400°F.
- Lightly grease a cookie sheet.
- Separate the biscuits. Place one biscuit in the center and place the remaining 9 in a circle around it, edges slightly overlapping. Gently press them together. You should get about a ten inch circle(with pretty scalloped edges).
- Combine olive oil (you could use melted butter) and chili powder. Brush over the biscuits. Sprinkle with chilies and cheese.
- Bake for 12-15 minute until nice and golden brown.
- To serve; pull them apart.
- I have also used olive oil, chopped garlic, fresh minced rosemary and parmesan cheese.

- Separate dough into 10 biscuits.
- In small bowl, combine melted margarine& chili powder& brush over biscuits.

- Grill peppers, covered, over high heat until all sides are blistered and blackened, 8-10 minutes, turning as needed. Immediately place peppers in a small bowl; let stand, covered, 20 minutes. Reduce grill temperature to medium heat., Meanwhile, in a large bowl, combine beef, salt and pepper; mix lightly but thoroughly. Shape into six 3/4-in.-thick patties., Peel off and discard charred skin from peppers. Cut peppers lengthwise in half; carefully remove stems and seeds. - Preheat the oven to 350 degrees F (175 degrees C). Coat a 9 inch square baking dish (or similar size) with cooking spray.
- Make a deep cut into the side of each chicken breast half to form a pocket or 'purse'. Stuff 1/4 cup of cheese and about 1 tablespoon of the chilies onto each one. Close, and secure with a toothpick so that the cheese does not escape while in the oven. Place the stuffed chicken into the baking dish.
