Just like the Mexican Restaurants around here. I like my green sauce creamy, the tomatillos in this recipe keep the avocado from going brown for a couple days in the fridge. It doesn't usually last that long!

1/2 lb tomatillo, about 5 large ones
1/2 cup onion, roughly chopped
2 tablespoons fresh cilantro
1 teaspoon fresh jalapeno pepper, seeded and roughly chopped
1/2 teaspoon salt, more to taste
1/3 cup sour cream
2 ripe avocados, peeled, seeded and roughly chopped

Steps:

  • Remove husks and stems from tomatillos. Place whole tomatillos in a sauce pan, cover with water and bring to a boil. Boil 5 minutes or until easily pierced with a fork. Drain the water and allow to cool.
  • Place tomatillos, onion, cilantro, jalapeno, and salt in a food processor or blender. Blend until smooth.
  • Stir in sour cream and avocado and blend again until smooth.

1 Tbs. red-wine vinegar
1/2 tsp. coarse salt
1/4 tsp. red-pepper flakes
1/2 cup extra-virgin olive oil, plus more for storing

Steps:

  • 1. Pulse garlic in a food processor until coarsely chopped. Add herbs, vinegar, salt, and pepper flakes, and pulse until herbs are finely chopped. 2. With the motor running, slowly add oil via the feeding tube, stopping to scrape down sides of bowl if necessary. Once oil is incorporated, pulse a few more times until sauce resembles a uniform, thin paste. 3. Transfer to a small container with a tight-fitting lid. Before sealing, drizzle a thin layer of oil over sauce to prevent discoloration. Sauce can be refrigerated up to 1 week. (The garlic flavor becomes more robust the longer it sits.) 1/2 white onion, peeled and coarsely chopped
2 garlic cloves, unpeeled
2 serrano or jalapeno chiles, stems removed
14 whole tomatillos, peeled and simmered in water for 5 minutes
1/4 cup unsalted roasted peanuts
2 teaspoons coarse salt
1/2 cup chicken broth

Steps:

  • Preheat the broiler. Place the onion, garlic, and chiles on a baking sheet. Broil for 4 minutes, or until charred and blistered. Discard the garlic skin. Place the onion, garlic, and chiles in a blender jar with the tomatillos, peanuts, salt, and broth. Blend until smooth.

This is about as primitive as it gets. Take some garlic, capers, anchovy, and parsley, and smash it up in a molcajete. Add a little oil and vinegar, possibly a pinch of salt and pepper, and you have maybe the world's greatest grilled meat condiment. nI guessed at these amounts as this is not a recipe that requires precise measurements; do everything to taste.

1 packed cup basil leaves
1/2 packed cup parsley leaves and tender stems
1/2 packed cup chopped chives
2 garlic cloves, peeled and smashed
Pinch of black pepper
1/4 cup plain Greek yogurt or sour cream
1/3 cup extra-virgin olive oil
1 1/2 teaspoons finely grated lemon zest
1/4 teaspoon kosher salt (Diamond Crystal), plus more to taste

Steps:

  • Place herbs, garlic and pepper in a food processor or blender, and pulse to combine, stopping to scrape down the sides of the container if necessary.
  • Add yogurt and purée until smooth. (This may take a minute or so; scrape down the sides of the container as needed.) With the motor running, gradually drizzle in the olive oil. Pulse in lemon zest and salt. Taste and add more salt if needed.
  • Use immediately or refrigerate in an airtight container for up to 5 days. Spoon over grilled or roasted chicken, seafood (especially shrimp and salmon), sausages, steaks, lamb chops and vegetables. Use as a marinade for chicken, lamb or pork; as a dressing for starchy salads with beans, potatoes or grains, or for hearty vegetable salads, like those with cucumbers or blanched and sliced sugar snap peas or green beans. Serve as a dip for crudité or chips. Spread in roast beef, lamb or pork sandwiches.

1 small peeled onion, coarsely chopped
2 medium cloves garlic, peeled and coarsely chopped
1 good-sized bunch Italian parsley, large stems removed (about 2 to 2 1/2 cups)
2 tablespoons drained, brined capers
1/3 cup olive oil and more for consistency
Small pinch of dried red pepper flakes
Few drops of lemon juice
Sea salt
Bread soaked in milk (optional and to taste)

Steps:

  • Scrape onion and garlic into a food processor. Add parsley, capers, olive oil, pepper flakes and lemon juice.
  • Process in bursts, stirring occasionally and adding more oil if necessary. Do not overblend. Add salt to taste. If garlic is too powerful, you can add a little bread soaked in milk to tame sauce. Serve on side.
