GREEK CHICKEN
A very good light summer dish. I serve it with sliced tomatoes, feta cheese, and garlic bread.

Steps:
- In a glass dish, mix the olive oil, garlic, rosemary, thyme, oregano, and lemon juice. Place the chicken pieces in the mixture, cover, and marinate in the refrigerator 8 hours or overnight.
- Preheat grill for high heat.
- Lightly oil the grill grate. Place chicken on the grill, and discard the marinade. Cook chicken pieces up to 15 minutes per side, until juices run clear. Smaller pieces will not take as long.

- Preheat oven to 375°. In a large skillet, heat 1 tablespoon oil over medium heat. Add onion; cook and stir 3-4 minutes or until tender. Add garlic, thyme, rosemary and 1/2 teaspoon pepper; cook 1 minute longer. Remove from pan., In same pan, heat remaining oil over medium heat. Add potatoes; cook and stir until potatoes are lightly browned. Return onion mixture to pan; stir in tomatoes, green beans and olives. Cook 1 minute longer., Transfer to a greased 13x9-in. baking dish. Sprinkle chicken with salt and remaining pepper; place over top of potato mixture. Bake, covered, 40 minutes. Bake, uncovered, 10-15 minutes longer or until a thermometer reads 170°-175°. Sprinkle with feta and parsley. If desired, serve with orzo. To Make Ahead: Can be made a few hours in advance. Cover and refrigerate. Remove from the refrigerator 30 minutes before baking. Bake as directed.

ROASTED GREEK CHICKEN

- Preheat oven to 350 degrees F (175 degrees C).
- Place chicken legs in a deep, large baking dish. Massage 1 tablespoon olive oil onto each chicken leg. Squeeze lemon juice over the chicken. Arrange lemons around the chicken.
- Mix oregano, basil, garlic powder, salt, and pepper together in a bowl; sprinkle evenly over each chicken leg, flipping the chicken to season both sides.
- Cook chicken in the preheated oven until no longer pink at the bone and the juices run clear, about 1 hour 15 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

GRENADIAN STYLE BAKED CHICKEN
I took a great cooking class at a Whole Foods store. This is one of the great recipes I got that night. Enjoy!

Steps:
- Skin and clean chicken. Place chicken in a large baking pan.
- Mix all remaining ingredients and add to baking pan (with chicken). Be sure to mix well with chicken coating both upper and lower surfaces of the chicken.
- Cover baking pan and bake at 400 degrees for roughly 30 minutes.
- Flip each piece of chicken and continue to bake uncovered.
- Flip chicken one more time when most of the liquid has been reduced. At this point, baste the chicken as well.
- Continue cooking a short while longer until chicken has slightly browned on top.

GREEK STYLE BAKED CHICKEN
This is one of those quick tasty recipes which we enjoyed at a friends recently. It is very important that you do not overcook the chicken. I have also tried with with halibut and it tasted wonderful.

Steps:
- Prehead oven to 400 degrees.
- Use a well greased baking dish just big enough to fit the chicken breasts.
- Sprinkle chicken with freshly ground black pepper and set aside.
- In a bowl, toss together tomatoes, bell pepper, parsley, oregano, garlic and feta.
- Spoon over chicken and drizzle with olive oil.
- Bake 25 - 30 minutes or until chicken is no longer pink.
- P.S. More seasoning can be added to suit individual tastes.
