SEARED DUCK BREAST WITH GRAPE SAUCE
Steps:
- Using a sharp paring knife, score the fat in the duck breasts a couple times in two directions to create a crosshatch pattern. Cut through the fat but not into the meat of the breast. Salt the breasts and let sit outside the refrigerator for 10 to 15 minutes to allow them to come to room temperature.
- Add about 1 tablespoon olive oil to a large saute pan. Place the duck in the pan skin-side down. Bring the pan to a medium heat and cook the duck breasts low and slow to allow the fat to render and so the skin can get nice and crispy. As the fat renders out of the duck, pour or spoon it out of the pan and SAVE IT for another purpose. (It's yummy!) Cook the duck for 8 to 9 minutes on the skin side. Turn the duck over and cook the duck for 2 to 3 minutes on the flesh side. Remove the duck from the pan, cover with foil and let rest for about 10 minutes.
- Add the grapes to the pan with the bacon and bring the pan to a medium heat. Cook the grapes until they split and let out their juices and the bacon is crisp.
- Spoon half the grapes out of the pan and reserve. Add the port and vinegar to the pan, season with salt and reduce the port by half. Add the chicken stock and reduce it by half. Add in the reserved grapes. Taste and re-season if needed.
- Slice the duck on a severe bias and serve garnished with the sauce.

- About one hour before cooking score the skin of the duck and season, set aside.
- Preheat the oven to 180c.
- Make the sauce.
- Finely chop the shallots. In a medium pan heat the oil and add the shallots, cook until softened. Add the grapes and cook until the fruits start to burst. Add the wine and the port and reduce by half then add the stock. Bring back to the boil and then strain through a fine sieve, reserve half the grapes and push the remainder through the sieve. Return the sauce to the pan and reduce until a syrupy consistency. Finish the sauce with the butter. Return the grapes to the sauce and keep warm.
- Cook the duck breast.
- Place the duck breast skin side down in a cold pan and heat until the fat renders and the skin starts to brown. Turn the duck breast over and place in the oven a cook for 8-9 minutes. Remove from the oven and rest for 5-7 minutes. Slice and serve with vegetables of your choice and the sauce on the side.

HONEY GLAZED DUCK IN GRAPEFRUIT AND GINGER SAUCE
Roast duck goes with anything tangy; my choice is grapefruit, with fruit segments served in a sauce made with fresh ginger.

Steps:
- Prick skin on each duck breast with a fork.
- Blend the honey and soy sauce to make a glaze and brusy over the fillets.
- Set them skin side up on a rack in a roasting tin.
- Chill until ready to cook.
- To make the sauce,slice away the outer peel and white pith from the grapefruit.
- With a sharp knife, cut into the fruits between the membrane to lift out the segments.
- Reserve the fruit and any juice in a bowl.
- Put the sugar into a dry pan.
- Set over a moderate heat and stir until the sugar melts and turns to caramel.
- Draw off the heat and add the fruit juice (Cover your hand as the mixture will boil up furiously with the addition of cold liquid) Replace the pan on the heat, if they are any lumps of caramel, stir over a low heat until they dissolve.
- Add the honey, soy sauce, lemon juice and ginger.
- Stir until the mixture simmers.
- Blend the cornstarch with 2 TBS cold water.
- Stir into the pan and cook, stirring until the sauce thickens and clears.
- Remove from heat.
- heat oven to 400*F.
- Set the duck fillets in the oven and roast for 35 to 40 minutes until the skins are golden and the flesh is still a little pink.
- Reheat the sauce,add the grapefruit pieces and any juices in the bowl.
- Slice each fillet lengthways into three, arrange on a heated platter and spoon over the grapefruit and ginger sauce.

Roast Gressingham Duck Breasts with a Vietnamese noodle and mango salad

Steps:
- Preparing the dressing
- Combine and mix all of the ingredients in a bowl and set aside.
- Cooking the noodles
- Cook the noodles (as per the packet instructions), before plunging into cold water and draining.
- Preparing the salad
- Combine and mix all of the salad ingredients, minus the noodles, lime wedges and coriander, in a bowl and set aside.
- Preparing and cooking the duck
- Pre-heat an oven to 200C/Gas mark 6. Score the skin on the duck breasts six to eight times with a sharp knife and season on both sides with salt. Place the duck breasts skin-side-down in a non-stick pan on a low to medium heat. Cook for six to eight minutes, or until the skin is golden brown and crispy, before pouring off any excess fat and flipping over the breast. Cook and seal the breast on this side for around 30 seconds before removing from the heat. Turn the breast back onto the skin-side and place into the pre-heated oven for around six minutes for medium rare duck. Remove the duck from the oven and leave to rest for five minutes.
- Putting everything together
- Set aside two tbsp of dressing (for garnishing later). Place the duck breasts and their juices into the remaining dressing and mix. Set aside for five minutes before removing the breasts from the dressing and placing them on a chopping board.
- Take the drained noodles and toss them with a little oil and lightly season. Add the dressing and salad and mix well before dividing onto serving plates. Finely slice the duck and place on top of the salad. Drizzle the remaining dressing on top and garnish with lime wedges and coriander.
