GRILLED ASIAN STEAK WITH CILANTRO BASIL CHIMICHURRI

- Asian Chimichurri: Pulse the cilantro, basil, mint, garlic, ginger, green onions, and jalapeno (without seeds) in food processor until coarsely chopped, pushing sides down as needed. Add olive oil, rice wine vinegar, fish sauce, toasted sesame oil and salt and pepper and continue to pulse until finely chopped and well combined. Taste and add desired amount of jalapeno seeds for additional heat (optional). Remove 2 tablespoons Chimichurri to a large resealable plastic bag. Refrigerate the remainder separately.
- Asian Marinade: To the Chimichurri in the plastic bag, whisk in all of the Asian Steak Marinade ingredients. Pierce steak all over with a fork and add to marinade. Massage marinade into steak and seal bag. Refrigerate 5 hours up to overnight, turning bag occasionally.
- Grill: When ready to grill, remove Chimichurri and steak from refrigerator to bring to room temperature (about 30-45 minutes). Grease and preheat grill to 400 degrees F. Sear roast for 3-5 minutes per side, cover, and turn heat down to 350 degrees F. Grill for 15 minutes, flip, cover, and cook an additional 10-20 minutes, depending on the size of your steak cut and how well done you want your steak. Watch closely that your temperature stays around 350 degrees F.
- Check for doneness with a meat thermometer inserted right in the middle of the steak. Thermometer should read: 135 degrees F for medium rare, 145 degrees F for medium. The outside of the roast will get quite dark with a charred crust which is exactly what you want with this cut of steak.
- Remove steak from grill, loosely tent with foil and let rest 10 minutes before slicing THINLY across the grain. Serve with Asian Chimichurri.

- Heat gas or charcoal grill. In food processor, place cilantro, onion, garlic, chile, lime juice, oil and 1/4 teaspoon of the salt. Cover; process until finely chopped. Blend in 2 to 3 teaspoons water to make sauce thinner, if desired. Transfer to small bowl; set aside until serving time.
- In small bowl, combine cumin, pepper and remaining 1 teaspoon salt; rub evenly over steaks. Place steaks on grill over medium heat. Cover grill; cook 7 to 10 minutes for medium-rare (145°F), turning once halfway through cooking.
- Serve 2 tablespoons chimichurri over each steak.

- Marinate the flank steak. Place you steak, olive oil, tamari (soy) sauce, garlic and pepper in a container and marinate for at least one hour or best overnight (Do not add salt to marinade but instead hold off and add this during the grilling of the steak as adding it while it is marinating will dry out the meat)
- Take your steak out of the refrigerator to come to room temperature, about a half hour before you are ready to grill your steak.
- Make your Thai Style Chimichurri sauce. In your food processor, add garlic, lemongrass, chili, Thai basil, cilantro (coriander roots and all), lime juice, olive oil and salt and pepper to taste. Blend until smooth, adjust seasoning as desired.
- Grill flank steaks until medium rare or about 6 minutes per side. Salt and pepper steaks during the grilling process on each side and also slather steaks with some of the Thai Style chimichurri sauce. Reserve half of the Thai Style chimichurri for serving on the side and dipping the steak. Let your flank steak rest covered for about 5 minutes. Slice against the grain thin.

- Zest all of the oranges to make approximately 4 tablespoons of zest. Add 2 tablespoons of the zest to a gallon freezer bag and 2 tablespoons to the bowl of a food processor for the chimichurri sauce. Squeeze the juice from 2 of the oranges into the gallon freezer bag and save the other orange for another use. Set 1 cup of the canola oil aside for the chimichurri to add later, and add the remaining 2 tablespoons of the canola oil to the freezer bag with 5 of the peeled garlic cloves roughly chopped or smashed. Add the other peeled and smashed garlic cloves to the food processor. Roughly chop the peeled and smashed ginger and add half to the marinade and half to the food processor along with the fresh herbs, rice wine vinegar, and sesame oil. To finish the chimichurri sauce, pulse the herb mixture while drizzling in the 1 cup of canola oil. Refrigerate until ready to use.
- To finish off the marinade, add the soy sauce and brown sugar to the gallon bag, seal the bag and massage the marinade together, add the steak, seal, and marinade at room temperature for 30 minutes or refrigerate up to 24 hours.
- Preheat the grill to high. Pull the steak from the marinade and allow to rest at room temperature for 30 minutes if refrigerated. Place the steak on the hot grill ad baste with the remaining marinade, cooking for for 5-7 minutes on each side for medium rare, or until steaks come to 125 degrees F. Transfer to a plate or cutting board and rest for 10 minutes.
- Going against the grain, cut the flank steak into thin slices and dress with the chimichurri sauce and serve.
