BASIC SWEET DOUGH

Basic Sweet Dough image

I have made plenty of sweet breads, and I always favored the Hungarian Coffee Cake and Swedish Tea Ring. This sweet dough recipe is my mother's, and this works out really well because it is an old recipe. I have also used others which were more recent and still turned out well, but this one is the best I have found. Use this recipe for the basis of your sweet breads.

Time 2h50m

Yield 48

Number Of Ingredients 9

1 cup milk
8 cups sifted all-purpose flour
1 ¼ cups cold water
2 (0.6 ounce) cakes compressed fresh yeast
2 teaspoons salt
½ cup white sugar
4 tablespoons shortening
2 eggs
2 tablespoons melted shortening

Steps:

  • Scald milk in a medium saucepan. Add cold water to scalded milk. Remove 1/4 cup liquid; mix yeast into liquid when cooled to lukewarm. To liquid in saucepan, add salt, sugar, shortening, and eggs. Add dissolved yeast to saucepan. Mix well.
  • Sift and measure the flour into a large bowl. Make a well in the flour, and pour the liquids into the well. Stir with a large wooden spoon until liquid disappears.
  • With one hand, mix dough in bowl using swinging rotary motion. Gradually form dough into smooth ball, then knead in bowl for 2 minutes. Brush top with melted shortening. Cover, and allow dough to rise at room temperature until doubled in bulk, about 2 hours.
  • Punch down dough. Use dough for any sweet bread recipe.

  • Add 1 cup of warm water, yeast and sugar to a small bowl to proof the yeast. To make sure your yeast is alive and kicking, it should start to bubble and foam in a few minutes. If it doesn't, your yeast is dead so try again.
  • While the yeast is proofing, add the remaining 1 cup of water, melted butter, flour and salt to the bowl of your stand mixer.
  • Once the yeast has proofed, add it to the stand mixer. Mix slowly with the kneading hook until it comes together. Once it has come together continue to knead for 5 minutes. The dough will stick to the bowl but shouldn't be so sticky it can't be worked with.
  • After the 5 minutes is up the dough is ready to rise! Before rising you need to decide how much dough you need. How do you make Playdough?
There are many ways to make playdough – using a stove-top or using a kettle with boiling water. Personally, we prefer the stove-top method. We find it’s easier to mix the ingredients in the pot. There are also no-cook playdough options but we also prefer this cooked playdough recipe. We find this recipe to last the longest and be the softest.
What can I use instead of flour to make Playdough?
You can usually substitute other flours, like almond and coconut, to make wheat-free playdough, if you find that a recipe with flour works best for you but still need it to be wheat-free. Playdough should be cheap and easy to make (which is part of the fun!) so don't get caught up in complicated recipes or expensive ingredients.
What is the best way to make cookie dough?
Directions. In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Divide dough in half, and shape into balls. Wrap in plastic, and refrigerate for 4 hours or overnight. Roll out dough on a floured counter. Don't over work it.
