If you're looking for a simple and flavor-packed recipe to grill, you must try this Balsamic Rosemary Grilled Chicken! Chicken soaks in a robust marinade of garlic, brown sugar, balsamic vinegar and rosemary before heading off to the grill. Serve as is with just about any side dish or slice to top of your favorite salad.

2 tablespoons dark brown sugar
4 cloves minced fresh garlic
1/4 teaspoon freshly ground black pepper
1 to 2 pinches red pepper flakes
1 tablespoon rosemary (leaves stripped and finely chopped)
1/2 cup balsamic vinegar
3 tablespoons low-sodium tamari
2 tablespoons extra light olive oil (or any light, flavorless oil)
1½ pounds thin-cut boneless, skinless chicken breasts

Steps:

  • In a medium bowl add the chicken (thin-cut breasts or even thigh meat will work).
  • In a smaller bowl whisk together the sugar, garlic, pepper, pepper flakes, rosemary, vinegar, tamari and olive oil until combined. Pour the marinade over the chicken and cover tightly with plastic wrap. Refrigerate for 1 to 2 hours or overnight.
  • Preheat your grill pan* on medium-high heat (stovetop) or your outdoor grill to 400-450°, adjusting the temperature as it cooks to avoid burning, grill for 3 to 4 minutes before turning and continuing to grill for an additional 3 to 4 minutes or until the chicken is fully cooked. You'll know the balsamic rosemary grilled chicken is ready to turn because the chicken will easily release itself from the grill grates. Allow the chicken to rest for a few minutes before serving or slicing.
  • If using a grill pan or outdoor grill, it would be a good idea to spray with olive oil spray before preheating. Please note that cooking times depend on the thickness and sized of your boneless skinless chicken breasts and that my cooking times are based on using thin-cut chicken breast halves.

3/4 cup balsamic vinegar
1/2 cup olive oil
1/4 cup rosemary leaves
3 tablespoons thinly sliced garlic
2 tablespoons lemon zest
1 tablespoon crushed red pepper flakes
8 chicken thighs
Salt and freshly ground black pepper

Steps:

  • In a medium bowl combine the balsamic vinegar, olive oil, rosemary, garlic, lemon zest and red pepper flakes. Whisk to combine and pour into a 1-gallon resealable food storage plastic bag. Put the chicken thighs in the bag and seal it. Turn to ensure that the chicken is evenly coated, then refrigerate, turning occasionally, for 2 to 4 hours.
  • Preheat a grill to medium-low and brush the grates lightly with an oil soaked cloth. Remove the chicken from the marinade and pat dry. Season the chicken well on all sides with salt and pepper, then place on the grill, skin side down. Cook the chicken about 8 to 10 minutes, turn and continue to cook an additional 8 to 10 minutes, or until the chicken is cooked through. Remove from the heat and serve while hot.

1 cup balsamic vinegar
½ cup olive oil
½ cup honey
2 tablespoons Dijon mustard
4 cloves garlic, minced
2 teaspoons dried basil
2 teaspoons salt
2 teaspoons ground black pepper
4 boneless, skinless chicken breasts

Steps:

  • Whisk together balsamic vinegar, olive oil, honey, Dijon mustard, garlic, basil, salt, and pepper in a small bowl.
  • Combine chicken and 1/2 of the marinade in a resealable plastic bag. Marinate chicken for 1 hour to overnight. Reserve the other 1/2 of the marinade until grilling.
  • Preheat an outdoor grill for medium-high heat, to approximately 400 degrees F (200 degrees C). Lightly oil the grate.
  • Remove chicken from marinade and discard used marinade.
  • Place chicken on the hot grill and baste with reserved marinade. Lower grill to medium and cook until chicken is no longer pink in the center and the juices run clear, 6 to 8 minutes per side. Baste with marinade on each side when flipping chicken. Chicken should reach an internal temperature of 165 degrees F (74 degrees C). Remove chicken from grill, cover, and let rest for 5 to 10 minutes before serving.

This recipe is one that I learned from a friend of mine. I think it's a tasty way to do chicken on the BBQ Grill. (Time to make does not include marinating time of 2-4 hours.)

6 boneless chicken breasts
3 sprigs fresh thyme
3 sprigs fresh rosemary
3 tablespoons olive oil
1/3 cup balsamic vinegar
1 teaspoon brown sugar
3 garlic cloves (smashed)
1 small onion (sliced thickly)

Steps:

  • Pierce the chicken breasts all over with a fork.
  • Pour the oil and vinegar into a large plastic zip-top bag.
  • Add in the brown sugar, the black pepper, the smashed garlic, the onion slices, and the sprigs of rosemary and thyme.
  • Seal bag, and "knead around" to mix well.
  • Put the chicken breasts into the bag with the marinade; reseal bag and knead it around to coat all the surfaces of the chicken. Place the bag into the refrigerator for 2-4 hours. (Occasionally knead bag).
  • When you have your coals ready on your BBQ grill, take out the sprigs of rosemary, and thyme and lay them directly on the top of the coals. Place chicken on an oiled grill rack over the heat. Grill 5-8 minutes per side, or until chicken is done.

4 boneless skinless chicken breasts
2 teaspoons herbes de provence
2 teaspoons Dijon mustard
1 teaspoon onion powder
1 teaspoon garlic powder
1/4 cup extra virgin olive oil
1 tablespoon balsamic vinegar
1 pinch salt
1 pinch pepper

Steps:

  • In a small bowl, combine herbes de Provence, Dijon, onion & garlic powder, evoo and balsamic vinegar. Mix to combine evenly. Season with salt and pepper.
  • Place chicken breasts into a zip-top plastic bag. Pour the marinade over the chicken. Seal the bag and shake gently to coat the chicken. Marinate in the refrigerator for about 20 minutes (you might want to turn the bag once during this time).
  • Preheat barbecue to medium.
  • Remove chicken from marinade and pat lightly with paper towel to remove excess moisture.
  • Place chicken directly over heat on a well-oiled grill. Cook for about 7-8 minutes per side, or until chicken is cooked through.
  • Remove chicken from heat and cover with foil for 5 minutes before serving.
