GRILLED BRIE HAM & PEAR SANDWICH
This delicious sandwich is a bit out of the ordinary and so easy to make. Within 15 minutes, you can enjoy it!

Steps:
- 1. Assemble sandwich by placing slices of brie followed by slices of pear on bread. Drizzle 1 tsp. of pomegranate molasses on top of the pear slices per sandwich; season with freshly ground black pepper. Place a couple of slices of ham on before adding a couple leaves of lettuce.
- 2. Generously spread mustard on the other bread slices and place face down on the lettuce. Spread butter on one side only.
- 3. In a panini press or skillet over medium heat, place sandwiches butter side down and put press on top, pressing down gently. If not using a panini press, place a heavy lid on top.
- 4. Grill for 2 minutes or until nicely brown. Remove press or lid and butter top slices before carefully flipping them over. Replace press or lid, gently press down again and grill for 2 minutes or until nicely browned. Serve immediately. Makes 3 sandwiches

CASH STORE'S GRILLED HAM, BRIE & PEAR SANDWICH
I had this at The Davenport Cash store, which is north of Santa Cruz, CA. While everyone's dish was good, they all wanted bites of mine! Luckily it was easy to duplicate at home. I've used other breads, but I think a quality white sandwich bread best lets the flavor shine through. I've also baked several (at about 400 degrees, til golden browned) and then cut into quarters for appetizers at a brunch.

- Preheat skillet.
- Butter each slice of bread. Place one slice butter side down, then spread with mayo.
- Layer ham, brie, then pear.
- Top with last slice of bread, butter side up.
- Brown SLOWLY, then flip to brown other side until brie is melted and ham is warm.

GRILLED PEAR & BRIE SANDWICH

- Set pan on stove and turn stove to medium-low heat. Generously butter two slices of bread and place in pan. Place thin slices on each slice of bread, covering entire slice. On ONE of the brie topped slices, LIGHTLY pepper brie. Sprinkle thyme onto brie. On top of the pepper & brie, place pears slices, covering entire slice of bread. LIGHTLY sprinkle salt onto pears. Flip brie only slice of bread on top of pear slice of bread. Grill, flipping every minute or two until bread is golden brown on both sides and brie is melted. Remove and slice in half and devour!

- Butter one side of each piece of bread with ½ tablespoon of butter each. Place two slices butter side down on a skillet. Spread the Brie pieces over the surface of the bread. Top with the arugula and then the pear slices. Drizzle ½ teaspoon of the honey over the pear slices on each sandwich. Place the reserved slices of bread, butter side up, on top of each sandwich.
- Bring the skillet over medium heat and cook for about 3 minutes until golden on the bottom. Flip the sandwiches (carefully! I used a spatula on either side to hold them together) and cook for another 2-3 minutes until golden on both sides.

- Lightly butter one side of each piece of bread with a tablespoon of butter. The buttered sides will be the outside of the sandwich.
- Layer the Brie, sliced pear and thyme on the unbuttered side of one piece of bread. Top with Gruyere cheese and the second slice of bread, making sure that the buttered side is facing out.
- Heat a small skillet over medium-low heat. Melt one tablespoon of butter and add the sandwich to the skillet. Cook for 2-3 minutes on one side, then flip. Cook for another 2-3 minutes or until the cheese is melted and the bread is golden and toasty. If the skillet appears dry when it's time to flip the sandwich flipping, add the last tablespoon of butter.
- Remove sandwich from heat and drizzle the top of the sandwich with honey just before serving.
