GRILLED CHEESE AND PICKLED ONION SANDWICH

- Spread 3 tablespoons butter on 1 side of each slice of bread. Place bread, butter side down, in a large cast-iron skillet or griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere. In another bowl, mix together remaining 3 tablespoons butter, mayonnaise, Manchego cheese and onion powder., To assemble sandwiches, top toasted side of 4 bread slices with sliced Brie. Sprinkle cheddar cheese mixture evenly over Brie; add pickled onions. Top with remaining bread slices, toasted side facing inward. Spread the butter-mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.

- Heat oil in large skillet on medium-high heat. Add onions; cook and stir 5 min. or until golden brown. Cover; simmer on low heat 10 min., stirring occasionally Remove from heat. Stir in A.1.
- Place 1 cheese slice on each of 6 bread slices; cover with onions, then remaining cheese and bread slices. Spray outsides of sandwiches with cooking spray.

- In a large nonstick skillet coated with cooking spray, heat 1 tablespoon butter over medium-high heat. Add mushrooms and onion; cook and stir 4-5 minutes or until tender. Remove from pan. KRISTEN'S GRILLED CHEESE AND RED ONION SANDWICH
This recipe is my nephew's girlfriend's creation. I love onions and who doesn't love cheese? The combination is very tasty in my opinion. Only use red onions. I've tried it with regular and the flavor just isn't the same. Hope you like it. Note: The cheese slices are based on the approximate size as the Kraft slices.

- divide the cheese and onion slices on the buttered side of 2 slices.
- grind some fresh pepper over this.

FRENCH ONION GRILLED CHEESE

- Melt 1 tablespoon of the butter in a large sauté pan over medium heat. Add the onion and cook until the slices start to wilt and turn translucent, about 3 minutes. Add the onion soup mix, thyme and 2 tablespoons water. Turn the heat to low, then continue to cook, stirring and adding more water a tablespoon at a time if the mixture gets too dry, until the onions are very soft and golden brown, 5 to 10 more minutes.
- Melt 1 tablespoon butter in a saute pan over medium heat. Spread 1 teaspoon mustard onto one side of each slice of bread. Divide the Cheddar, Gruyere, caramelized onions and crispy onions between 2 of the slices of bread on top of the mustard. Top each with another slice of bread, mustard-side in, and lay the sandwiches in the pan. Cook, pressing down on top of the sandwiches, until the bottoms are golden brown, about 2 minutes. Add the remaining 1 tablespoon butter to the pan and flip the sandwiches, cooking until the cheese is melted and the bottoms are golden brown, about 3 more minutes. Cut in half and serve.
OVEN GRILLED "CHEESE" SANDWICHES WITH ARUGULA, RED ONION AND TOMATO
Steps:
- Preheat the oven to 500 degrees.
- Place a 10-inch nonstick pan with an ovenproof handle in the top third of the preheated oven. Allow the pan to heat for 3 to 5 minutes.
- Brush 1 of each of the bread slices with a slight coating of olive oil.
- Build the sandwiches by placing 2 slices of bread oil side down. Top each slice with half the cheese, spreading it evenly. Season with pepper and a few grains of salt. Top each sandwich with 1 of the remaining slices of bread, oil side up.
- Place the sandwiches in the heated pan and cook for 5 minutes. Turn them over and cook for 5 minutes more; remove the pan from the oven. Open the sandwiches and fill with the onion, tomato and arugula.
SWEET AND SPICY CARAMELIZED ONION & BBQ GRILLED CHEESE

- Melt 1 tbsp of butter in a skillet over medium heat. Add the sliced red onion and stir occasionally until color changes to slightly brown and taste is sweet, about 10-15 minutes. Remove onions from skillet and set aside.
- Spread 1 tablespoon of the remaining butter onto one side of each slice of bread.
- Divide barbecue sauce evenly among 4 of the slices and spread evenly opposite the butter side. Lay cheddar cheese on top of sauce. Divide caramelized onion among the sandwiches, then top with pepper jack. Finish assembly by placing remaining bread slices on top. - Place 2 sandwiches in the skillet and cook sandwiches two at a time, flipping when bread is golden brown on one side and cheese begins to melt. If cheese is not melting quickly enough, place a lid over the pan or use a heavy skillet to place on top and press the sandwiches down.

- Spread the mustard onto one side of each of the bread slices. Place the luncheon meat onto half of the bread slices, then top each with 2 slices of Cheddar cheese, sliced tomato, and onion. - Preheat a griddle to 300°F (or put a heavy-bottomed pan over medium-low to medium heat on the stove top.)
- Butter one side of each slice of bread, using half of the butter on each slice. Lay one slice of bread, butter side down on the hot griddle, immediately lay down one slice of the unwrapped Kraft Singles, top with as much of the sliced onion as you can get to stay on the bread, the other slice of unwrapped cheese and the last piece of bread, butter side up.
- Let it toast slowly until the under-side of the bottom piece of bread is a deep golden to rich brown, taking care not to let it burn. If necessary, you can reduce the heat to prevent scorching. Carefully flip the sandwich, using your hand to hold it together as the onions tend to make it fall apart a little more easily than the average grilled cheese.
- Toast the second side until it is a rich brown and the cheese is completely melted inside the sandwich. Transfer to a cutting board and cut it in half on the diagonal. Yes. It MUST be on a diagonal. Sandwiches just taste better that way.
