GRILLED CHEESE WITH EVERYTHING BAGEL SEASONING
Steps:
- Mix together the cream cheese and scallions until well combined.
- Melt the butter in a large skillet over medium heat. Add the bread slices and toast until lightly browned on one side; remove to a cutting board, toasted-side up (the toasted sides will become the insides of your sandwich). Spread all four slices with scallion cream cheese, then sprinkle with Everything Bagel Seasoning. Top two of the slices with mozzarella, sliced tomato and red onion. Press the capers into the cream cheese on the other two slices. Form sandwiches.
- Add a bit more butter to the skillet if it seems dry. Place the sandwiches in the skillet, cover with a lid and cook until toasted on the bottom, 3 to 5 minutes. Flip the sandwiches and cook, covered, until toasted on the reverse side and the mozzarella is melted, about another 2 minutes. Sprinkle with a pinch of salt, cut in half and serve.
- Mix together the sesame seeds, poppy seeds, dried minced garlic, dried minced onion and salt.
AWESOME GRILLED CHEESE SANDWICHES
My husband and I were sick of frying grilled cheeses on the stove because you have so many pieces of bread to use, and you have to stand there for a long time if you feed up to six people like we do. So we came up with this idea.

- Preheat oven to 450 degrees F (230 degrees C).
- Butter one side of 9 slices of bread, and place butter-side down on a baking sheet. Arrange cheese on each slice of bread. Spread butter on 9 remaining slices of bread, and place them buttered-side up on top of the cheese.
- Bake in preheated oven for 6 to 8 minutes. Flip the sandwiches, and bake an additional 6 to 8 minutes, or until golden brown.

GRILLED CHEESE BAGELS
Steps:
- Open the bagel, cut off the corners of the cheese. Put one slice on the bagel, top with the tomato pieces. Top with the second piece of cheese. Top with the top of the bagel. Preheat a cast iron pan. When it gets really hot, spray with a bit of cooking spray and put the bagel in. Put something heavy on top and let it sit for 1-2 minutes, on MED-HIGH heat. Carefully turn over and let it cook for another minute or so until cheese melts and bagel gets browned. Remove. Let sit for 5 minutes or so. Cut in half. Put in a piece of tin foil and wrap up. Put in insulated lunch box.
EINSTEIN BROS BAGELS ULTIMATE TOASTED CHEESE SANDWICH
Calling all cheese fanatics! Do you love cheese? I think I may have the sandwich for you. My local Einstein Brothers used to have this on their menu - if I recall correctly, it was around the year 2001. Back then, this sandwich cost about $6 or so, so I figured out how to make these for myself at home. This glorious sandwich has since been pulled from the menu, probably because the fat content is enough to induce an instant heart attack! Ha ha, just kidding of course. Anyway, I love this sandwich (in moderation) and it's very easy to make using a sandwich maker,grill or skillet. Bon appetit!

Steps:
- Lightly butter each slice of bread and place, butter side down on a plate.
- Spread 1 tablespoon of chive and onion cream cheese on each slice.
- Top one piece of bread with slice of tomato. Layer with Swiss, cheddar, provolone and pepper jack cheese.
- Top with second slice of tomato. Place second slice of bread on top so that buttered side faces out.
- Place in lightly oiled skillet and grill on medium heat until lightly browned.
- Turn over, and lightly brown the other side.
- Cut in half and enjoy with a dill pickle!
- These can also be made with a sandwich/panini maker or placed under the broiler until cheese is melted.

Set aside bagel tops., On the bottom of each bagel, place a slice of ham and cheddar cheese. Broil 3-4 minutes longer or until cheese is melted., Meanwhile, spread bagel tops with cream cheese; sprinkle with salt and pepper. Layer bottom halves with tomato and avocado. Replace tops.

- Place a double layer of paper towels on a plate and add the bacon to a medium-sized sauté pan. Place the pan over medium heat and sauté the bacon until it's crisp, about 7 minutes. Transfer it to the paper towel-lined plate to drain. Crumble the bacon, add it to a small mixing bowl and set aside.
