This is an easy method for grilling corn on the cob. The corn will be very tasty and tender.

6 ears corn
6 tablespoons butter, softened
salt and pepper to taste

Steps:

  • Preheat an outdoor grill for high heat and lightly oil grate.
  • Peel back corn husks and remove silk. Place 1 tablespoon butter, salt and pepper on each piece of corn. Close husks.
  • Wrap each ear of corn tightly in aluminum foil. Place on the prepared grill. Cook approximately 30 minutes, turning occasionally, until corn is tender.

8 ears corn
Kosher salt
BBQ Butter, recipe follows
Herb Butter, recipe follows
2 tablespoons canola oil
1/2 small red onion, chopped
2 cloves garlic, chopped
2 teaspoons Spanish paprika
1/2 teaspoon cayenne powder
1 teaspoon toasted cumin seeds
1 tablespoon ancho chili powder
1/2 cup water
1 1/2 sticks unsalted butter, slightly softened
1 teaspoon Worcestershire sauce
Salt and freshly ground black pepper
2 sticks unsalted butter, at room temperature
1/4 cup chopped fresh herbs (basil, chives or tarragon)
1 teaspoon kosher salt
Freshly ground black pepper

Steps:

  • Heat the grill to medium.
  • Pull the outer husks down the ear to the base. Strip away the silk from each ear of corn by hand. Fold husks back into place, and place the ears of corn in a large bowl of cold water with 1 tablespoon of salt for 10 minutes.
  • Remove corn from water and shake off excess. Place the corn on the grill, close the cover and grill for 15 to 20 minutes, turning every 5 minutes, or until kernels are tender when pierced with a paring knife. Remove the husks and eat on the cob or remove the kernels. Serve with the BBQ Butter and/or Herb Butter. Spread over the corn while hot.
  • Heat the oil in a medium saute pan over high heat until almost smoking. Add the onion and cook until soft, 2 to 3 minutes. Add the garlic and cook for 30 seconds. Add the paprika, cayenne, cumin and ancho powder and cook for 1 minute. Add 1/2 cup of water and cook until the mixture becomes thickened and the water reduces. Let cool slightly.
  • Place the butter in a food processor, add the spice mixture and Worcestershire sauce and process until smooth. Season with salt and pepper, scrape the mixture into a small bowl, cover and refrigerate for at least 30 minutes to allow the flavors to meld. Bring to room temperature before serving.
  • Combine in a food processor and process until smooth.

4 ears sweet corn
ice cold water

Steps:

  • Gently peel husks back to within 2 inches of the base.
  • Remove silk and smooth husks back into place, completely covering kernels.
  • Fill a sink with ice water and soak corn for 30 minutes.
  • Drain and shake off excess water.
  • The cold water stop the sugars in the corn from turning to starch.
  • Preheat grill.
  • Generously oil the grill to prevent sticking.
  • Grill directly over medium to medium-hot coals 5 inches from the heat, turning occasionally, until tender-- 15 minutes.
  • Open carefully and brush on melted butter and season with salt or Check out my herbed butter.

8 large ears sweet corn in husks
6 tablespoons butter, softened
1 tablespoon minced fresh parsley
1 to 2 teaspoons chili powder
1 teaspoon garlic salt
1/2 to 1 teaspoon ground cumin

Steps:

  • Place corn in a stockpot; cover with cold water. Soak 20 minutes., Mix remaining ingredients. Drain corn; carefully peel back husks to within 1 in. of bottoms and remove silk. Spread corn with butter mixture; rewrap in husks and secure with kitchen string., Grill corn, covered, over medium heat until tender, 25-30 minutes, turning often. 1/2 cup extra virgin olive oil
2 tablespoons melted butter
1 tablespoon dried parsley (or more)
salt
pepper

Steps:

  • Carefully unwrap ears of corn and remove silks.
  • Combine olive oil, butter, parsley, salt, and pepper in small bowl.
  • With pastry brush, apply mixture to each ear of corn generously.
  • Wrap corn back up with husks and then wrap in heavy duty aluminum foil.
  • Grill at about 250 to 300 degrees for 1 to 1 1/2 hours until done to your taste.
