30-Minute Lemony Pasta with Grilled Chicken image

Grilled poultry with a light and bright sauce makes this lemony pasta with chicken a surefire win for dinner. It's a simple but elegant 30-minute meal.

4 boneless, skinless chicken breasts (approx. 2-2.5 lbs.)
1/2 tsp salt
1/2 tsp freshly ground black pepper
16 ounces spaghetti
1/4 cup extra virgin olive oil
2 cloves garlic, minced
1 teaspoon chopped fresh parsley, or 1/2 teaspoon dried
1/2 teaspoon chopped fresh basil, or 1/4 teaspoon dried
1/2 cup fresh lemon juice
1/2 teaspoon lemon zest
1/4 cup grated parmesan, for serving

Steps:

  • Preheat grill or grill pan.
  • Sprinkle chicken with salt and pepper on all sides. Grill over medium-high heat until no longer pink inside, about 4-5 minutes on each side. Remove from grill and cover with aluminum foil. Set aside.
  • Meanwhile, cook pasta according to package directions.
  • While pasta is cooking, heat olive oil in a skillet over medium-high heat. Add garlic, parsley, and basil to the pan and cook for 30 seconds, stirring constantly. Pour lemon juice into skillet, and reduce heat to low. Simmer for 3 minutes.
  • Pour lemon and oil mixture into a large serving bowl. Drain the pasta, then add it to the serving bowl. Toss well, until pasta is coated.
  • Slice chicken into strips, add to the bowl, and toss again. Sprinkle with lemon zest. Serve immediately, with parmesan cheese sprinkled on top.

4-6 Chicken Breasts ((boneless, skinless))
1 Cup Olive Oil
2/3 Cup Lemon Juice
2 teaspoon Minced Garlic
1 Medium Onion (diced)
1/2 teaspoon Pepper
1/2 teaspoon Salt

Steps:

  • Whisk together olive oil, lemon juice, minced garlic, salt, and pepper. Add the diced onion.
  • Put chicken in a gallon sized bag with marinade. Allow to marinate overnight.
  • Place chicken on preheated grill and sprinkle with additional pepper. Cook for about 20 minutes on the grill or until no longer pink in center. **You can also grill additional lemon slices for garnish.**

For the Grilled Chicken:
For the Pasta: 4 ounces whole wheat thin spaghetti
1/2 teaspoon dried parsley
freshly grated lemon zest from 1 lemon
3-4 garlic cloves, minced
2 tablespoons extra-virgin olive oil
juice of 1 lemon (about 2-3 tablespoons)
salt & pepper, to taste
1 cup sugar snap peas
1/4 cup grated parmesan cheese
4 (4-ounce) chicken breasts, fat removed seasoning of choice (lemon pepper, Santa Maria seasoning, Johnny's Garlic Spread, etc.)

Steps:

  • Cook pasta according to package directions. Drain. While pasta is cooking, preheat grill (indoor or outdoor). Wash chicken breasts and pat dry with a paper towel. Season both sides of chicken breasts with your choice of seasoning (just about any herb goes well with lemon, so you're pretty safe here). Lightly oil the grill. Grill chicken for approximately 6-8 minutes on each side, or until juices run clear (or until meat reached 165 degrees). Remove from heat, cool slightly, and slice. Meanwhile (while pasta and chicken are cooking), heat oil in a large skillet over medium heat. Sauté parsley, lemon zest and garlic in oil until garlic is tender (be careful not to burn the garlic). Add the drained pasta to the skillet. Add the sugar snap peas and sprinkle with lemon juice and season with salt and pepper, to taste. Divide pasta among four plates. Top each plate with 1 tablespoon parmesan cheese and sliced chicken breast.

1 pound skinless, boneless chicken breasts, cut into strips

Steps:

  • Combine oil, lemon juice, garlic, onion powder, pepper, and salt in a large, gallon-sized, zip-top bag. Seal and shake well. Add chicken and shake again. Place in the refrigerator to marinate for at least 2 hours.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Place the chicken on the grill over indirect heat, baste with marinade, and cover. Grill for 10 minutes. Baste again, then turn over and baste the other side. Cover and continue to grill until no longer pink in the centers and juices run clear, about 10 minutes more.

3 tablespoons butter
2 tablespoons olive oil, or more as needed
1 small onion, chopped
2 cloves garlic, minced, or more to taste
2 ½ cups milk
3 cubes chicken bouillon
2 teaspoons dried oregano
¼ teaspoon salt
¼ teaspoon ground black pepper
1 cup cold water
2 tablespoons cornstarch
½ pound seasoned grilled chicken chunks
1 (16 ounce) package linguine pasta
¼ cup lemon juice
3 tablespoons chopped fresh parsley
1 teaspoon lemon zest
½ cup grated Parmesan cheese, or to taste

Steps:

  • Heat butter and olive oil together in a saucepan over medium heat; cook and stir onion and garlic until tender but not browned, about 5 minutes. Add milk, bouillon, oregano, salt, and pepper to onion mixture; bring to a boil. Reduce heat to medium and cook sauce for 5 minutes.
  • Whisk cold water and cornstarch together in a bowl until smooth. Mix cornstarch mixture and chicken into sauce; cook until heated through and thickened, about 5 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes; drain.
  • Turn heat under saucepan with sauce to low; add lemon juice, parsley, and lemon zest and cook until heated through, 1 to 2 minutes. Add pasta, toss to coat, and transfer to a serving bowl; top with Parmesan cheese.
