Steps:

  • In an oven-proof frying pan, lightly fry the mushrooms in butter , then remove from the heat and set aside
  • Whisk the eggs with the seasoning and the milk, then heat some butter in the pan and add the egg mixture to it
  • When the base of the omelette is turning golden,scatter the mushrooms and parsley over the omelette
  • Place the omelette under the grill for 2 minutes until the egg has set, fold over and then serve for a delicious breakfast!

Mushroom, Tomato and Onion Omelet with Home Fries and Bacon image

6 slices bacon
4 Yukon Gold potatoes
1 clove garlic
Kosher salt
1 medium onion
4 cremini mushrooms
2 Roma tomatoes
Extra-virgin olive oil
4 eggs
1/2 cup shredded fontina cheese
Chopped fresh chives, for garnish
4 slices pumpernickel bread, toasted

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the bacon on a baking sheet and bake to the desired crispness, 12 to 15 minutes.
  • Meanwhile, quarter the potatoes and place them and the garlic in a medium pot with cold water to cover; add salt. Bring to a boil over high heat, then lower the heat and simmer until potatoes are fully cooked and soft, about 15 minutes. Drain well.
  • While potatoes are cooking, start on the omelet filling: Cut the onion into small dice; you'll need 1/2 cup. Remove and discard the stems from the mushrooms, then thinly slice the caps. Seed the tomatoes and cut into small dice.
  • In a skillet over medium heat, sweat half of the onions, seasoned with salt, in some olive oil until translucent and soft, about 5 minutes. Add the mushrooms, season with salt, and continue cooking until slightly soft, another 5 minutes. Add the tomatoes; cook for 3 to 4 more minutes. Add salt to taste.
  • Whisk the eggs together with 2 tablespoons water and 1/2 teaspoon salt until fluffy. Set aside.
  • Heat a cast-iron skillet over medium-high heat; add olive oil to coat the pan. Add the remaining 1/4 cup diced onions and cook for 2 minutes. Add the potatoes; cook until golden brown and crispy, about 6 minutes.
  • Place a nonstick skillet over medium heat; add olive oil to coat. Add the egg mixture and cook until set, frequently moving the edges away from the pan with a rubber spatula. Sprinkle with a layer of shredded fontina, add the filling to the middle, and fold the omelet. Cook until the cheese has melted, another minute or two.
  • Arrange all--bacon, home fries and omelet--on a serving platter, sprinkle with fresh chives, and serve with pumpernickel toast on the side.

Kosher salt
Olive oil
One 6-to-8-ounce ham steak, cut into 1/4-inch cubes
4 cremini mushrooms, sliced
2 ounces fontina cheese, shredded
2 ounces Gruyere, shredded
Chives, for garnish

Steps:

  • Whisk the eggs together with a splash of cool water in a medium bowl until light and fluffy. Season with a pinch of salt. Set aside.
  • Add olive oil to lightly coat a medium nonstick pan over medium-high heat. Add the ham and cook until it begins to brown on all sides, about 4 minutes. Remove the ham from the pan and set aside. Add the mushrooms to the pan in an even layer; season with a pinch of salt. Cook until they begin to brown and wilt slightly, 2 to 3 minutes on each side. Remove the mushrooms from the pan. Wipe the pan down with a paper towel. Return the pan to medium heat and add olive oil to coat. Add the eggs and cook until just set, frequently moving the edges from the pan with a rubber spatula. Sprinkle with some of the fontina and Gruyere, then add the ham and mushrooms and another layer of the cheeses. Roll the omelet to the opposite side of the pan, tilting as you go and roll onto a plate. Garnish with chives. Serve!

  • Heat half the butter in a small nonstick skillet over medium-high heat. Cook mushrooms, undisturbed, until they begin to release their liquid, about 2 minutes; season with salt and pepper, and stir. Cook until golden brown, about 2 minutes more. Transfer mushrooms to a small bowl; stir in microgreens.
  • Whisk eggs in a medium bowl until well combined; season with salt and pepper. Wipe skillet clean with paper towels. Melt remaining butter over medium heat, swirling to coat bottom of pan. 4 portabella mushrooms (large)
1/4 cup reduced-fat cheddar cheese
4 teaspoons green onions, chopped
4 teaspoons red bell peppers, chopped
4 eggs
1/2 cup egg substitute

Steps:

  • Preheat grill to medium.
  • Remove stems from mushrooms and scrape gills with a spoon.
  • Place 1 T cheese and 1 t each of the onion and bell pepper into each mushroom cap. Season with salt and pepper to taste.
  • In a small bowl, beat eggs and egg substitute, adding salt or pepper to taste.
  • Place mushroom caps on the grill and fill each with the egg mixture.
  • Grill, covered, 25 minutes or until the eggs are set. Serve immediately.

1/4 teaspoon salt
2 tablespoons vegetable oil
1 sweet red pepper, chopped
2 cups sliced mushrooms
1 tablespoon fresh thyme, chopped or 1/2 teaspoon dried thyme
1/4 teaspoon pepper
2 green onions, sliced
2/3 cup cheddar cheese, shredded

Steps:

  • Line bottom of 13 x 9 inch metal cake pan with parchment or waxed paper; grease paper and sides of pan.
  • Set aside.
  • In bowl, whisk together eggs, milk and salt, pour into prepared pan.
  • Bake in 400f degree oven for 10 minutes or until centre is firm when touched.
  • Meanwhile, in nonstick frypan, heat oil over medium high heat; cook red pepper, mushrooms, thyme and pepper, stirring often, for 5 minutes or until mushroom liquid has evaporated.
  • Stir in onions.
  • Invert egg onto work surface; peel off paper.
  • Sprinkle with half of the cheese; spread mushroom mixture over top.
  • Starting at narrow end, roll up jello roll style.
  • Return omelette roll to cake pan; sprinkle with remaining cheese.
  • Broil for 3 to 5 minutes or until cheese is bubbly.
  • Slice crosswise to serve.

  • Crack two eggs into a bowl, and add the salt, pepper, and water. For a lighter omelette, use 4 egg whites instead. The water will evaporate when you fry the eggs, and help make them fluffier in the end.
  • Beat the eggs with a fork until they turn frothy. If you are using whole eggs (instead of whites), make sure that you break the yolks up. You won't be scrambling the eggs once you add them into the frying pan.
  • Heat the rest of the butter in the frying pan over medium-high heat. The butter will start to sizzle and foam. Don't add the eggs yet. Instead, wait until the foam starts to disappear.
  • Tilt pan to coat the bottom with oil, then add the eggs. Once you have the eggs on the pain, continue tilting the pan around until the entire bottom is evenly covered with the egg mixture.
  • Let the omelette cook until the edges turn firm, then pull the edges away from the sides of the frying pan. This will happen after only a few seconds. Pulling the edges of the omelette away from the pan will allow the raw egg mixture to flow onto the hot pan and cook.
  • Let the omelette cook for about 1 minutes. As it continues to cook, it will turn opaque and set. Don't "scramble" the omelette during this time, or you will get scrambled eggs instead.
  • Add the mushroom mixture when the omelette still has some raw egg on top. Only cover half of the omelette with the mushroom mixture; you will be folding the omelette in half.
  • Fold the omelette in half. Use your spatula to gently separate the edges of the omelette from the frying pan. Then, slip the spatula under the bare side of the omelette, and flip it over onto the mushroom side.
  • Slide the omelette onto a plate and serve it immediately. If you'd like, you an garnish the omelette with some chopped chives, parsley, or grated cheese.
