FRESH GRILLED CORN ON THE COB

Learn the best method for grilling corn on the cob. The husks remain intact to hold in the moisture and keep the corn from burning.

4 to 6 corn on the cob with the husks intact
1/4 cup/120 mL butter
2 to 3 tablespoons/30 to 45 mL herbs of choice (parsley, thyme, tarragon , basil, oregano, dill , etc.)

Steps:

  • Gather the ingredients.
  • Leaving the husks on, only remove the silk.
  • Soak in water for at least 15 to 20 minutes.
  • Mix the fresh herbs to the softened butter and reserve.
  • Remove from water and pull down husks carefully without removing.
  • Coat the corn with the herbal butter .
  • Put the husks back up covering the corn and tie with a thin piece of husk at the top.
  • Place on a heated grill for about 15 minutes, turning often. Once corn kernels are tender, remove from heat and serve.
  • Enjoy!

  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium heat for gas).
  • If grilling with husk on: Oil grill rack; grill corn (covered only if using a gas grill), turning, until tender, 20-30 minutes. Let stand until cool enough to handle but still warm, 5-10 minutes.
  • If grilling without husk: Oil rack; grill corn (covered only if using a gas grill), turning, until browned and tender, about 10 minutes.

2 teaspoons butter
2 teaspoons garlic powder
4 teaspoons minced garlic
salt and ground black pepper to taste
1 cup chopped whole kernel corn

Steps:

  • Preheat an outdoor grill for high heat.
  • Lay two ears of corn each on two separate pieces of aluminum foil large enough to wrap the ears completely. Place 1 teaspoon butter, 1 teaspoon garlic powder, and 2 teaspoons minced garlic on top of each bundle of corn. Season with salt and pepper. Tightly wrap the corn in the foil.
  • Cook on preheated grill for 10 minutes; turn. Continue to cook another 10 to 14 minutes.

6 medium ears sweet corn
1/2 cup sour cream
1/4 cup grated Parmesan cheese
1 tablespoon lime juice
1/2 teaspoon chili powder
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Carefully peel back corn husks to within 1 in. of bottoms; remove silk. Rewrap corn in husks; secure with kitchen string. Rinse corn under water, moistening husks. Grill corn, covered, over medium heat 20-25 minutes or until tender, turning often., In a small bowl, mix remaining ingredients until blended. Cut string from corn and peel back husks. Spread corn with sour cream mixture.

1/4 cup melted butter or 1/4 cup olive oil
1 tablespoon cilantro
1 garlic clove, minced
2 teaspoons chili powder
1/2 teaspoon salt
2/3 cup mayonnaise
1/4 cup fresh lime juice
3/4 cup grated romano cheese
lime wedge, for garnish

Steps:

  • Preheat an outdoor grill to medium-high heat. Alternatively preheat the broiler to low, and line a baking sheet with parchment paper or aluminum foil.
  • Brush the corn with melted butter or olive oil. Grill the corn until hot and lightly charred all over, 7 to 10 minutes, depending on the temperature of the grill. Alternatively, broil the corn ears 6-inches from the heat source until charred spots appear, about 10 minutes. Flip the corn and broil for an additional 10 minutes.
  • While the corn is charred, mix the cilantro, garlic, chile powder, salt, mayonnaise, and lime juice.
  • Spread the mayonnaise mixture evenly over the corn, and sprinkle with Romano cheese. If desired, return the corn to the grill or broiler for just a few minutes. Serve warm with lime wedges.

1/2 teaspoon celery seed
3 cups canned corn niblets, drained if canned but you can use fresh or 3 cups frozen corn, as well
1/4 cup finely chopped green bell pepper
1/4 cup finely chopped sweet onion
1/4 cup chopped drained pimiento
1 small jalapeno, seeded, finely minced

Steps:

  • Combine vinegar, brown sugar, cornstarch, salt, pepper, mustard seeds and celery seeds in a saucepan, and mix well.
  • Bring to a boil, then reduce heat, and simmer for 2 minutes, stirring occasionally.
  • Remove from heat.
  • Stir in corn, green pepper, onion, pimento, and jalapeño.
  • Let stand until cool.
  • Chill covered until serving time.
