2 skinless, boneless chicken breast halves
1 red bell pepper, thinly sliced
2 sandwich rolls, split

Steps:

  • Grill or broil the chicken breasts and pineapple slices, brushing occasionally with honey mustard. Cook the chicken breasts until no longer pink in the center and the juices run clear. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Serve the chicken on sandwich rolls, topped with pineapple slices and red bell pepper rings.

2 bacon strips, halved
2 boneless skinless chicken breast halves (5 ounces each)
1 tablespoon olive oil
2 tablespoons barbecue sauce
2 pineapple slices
2 kaiser rolls, split
2 lettuce leaves, optional
2 slices provolone cheese

Steps:

  • In a small skillet, cook bacon over medium heat until crisp. Remove to paper towels. Flatten chicken to 3/8-in. thickness; brush both sides with oil. Grill, uncovered, over medium heat for 4 minutes. Turn; brush with barbecue sauce. Grill 3-4 minutes longer or until juices run clear., Meanwhile, place the pineapple and rolls cut side down on grill; cook for 3-4 minutes or until browned, turning the pineapple once. Place lettuce if desired on roll bottoms; top with chicken, cheese, bacon and pineapple. Replace roll tops.

1 tablespoon brown sugar
1/4 teaspoon ginger
1 tablespoon soy sauce
1 (8 ounce) can pineapple rings, in own juice, drained, reserving juice
2 whole boneless skinless chicken breasts, halved
4 kaiser rolls
8 spinach leaves, fresh
1 (8 ounce) bottle mustard, sweet & tangy

Steps:

  • MARINADE.In shallow dish or gallon zip-lock bag, combine brown sugar, ginger, soy sauce and reserved pineapple juice: mix well.
  • Place 1 chicken breast half, boned side up between to pieces of plastic wrap or waxed paper.
  • Working from center, gently pound chicken with rolling pin or flat side of meat mallet until about 1/45 inch thick.
  • Repeat with remaining chicken breast.
  • Place chicken breasts in marinade, turning to coat all sides.
  • Cover, refrigerate 45 minutes.
  • Drain chicken, reserving marinade.
  • Grill chicken breast on medium, 8 - 10 minutes or until chicken is fork tender and juices run clear. Turning once and brusing with marinage.
  • Place pineapple rings on grill when turning chicken, cook until thoroughly heated, turning once and brushing with marinade.
  • Cut rolls. On bottom half of each roll. layer spinach leaves, chicken breast half, pineapple ring and top with spinach leaves.
  • Serve with Mustard.

6 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
1 cup Hawaiian style marinade
6 pineapple rings
6 slices provolone cheese
6 onion rolls, split
6 tablespoons thousand island salad dressing
6 leaves romaine lettuce
6 slices tomato

Steps:

  • Place the chicken pieces into a large resealable bag and pour in the marinade. Marinate in the refrigerator for at least 1 hour or up to overnight.
  • Preheat a grill for medium-high heat. When hot, lightly oil the grate. Remove the chicken from the marinade and discard the marinade.
  • Grill the chicken pieces until cooked through, about 10 minutes, turning once. 5 minutes before they are done, place the pineapple rings on the grill and cook for a couple of minutes per side. Place the pineapple slices on top of the pieces of chicken and top with a slice of cheese. Close the lid to the grill and allow the cheese to melt for a minute. Toast the buns, if desired.
  • To assemble the sandwiches, place the chicken, pineapple and cheese onto the bottom buns. Top with lettuce and tomato. Spread the thousand island dressing onto the top buns and place onto the sandwiches.

This is such a good chicken sandwich, seasoned with teriyaki sauce.

4 boneless chicken breasts (4-6 oz. each)
- teriyaki sauce
4 slices swiss cheese
4 slices pineapple
4 whole wheat buns
sliced red onion
jalapenos, fresh or pickled, optional
sliced tomato, lettuce, if desired

Steps:

  • 1. Cover chicken with teriyaki sauce and place in zip bag. Marinate in frig for at least 30 minutes or can for several hours. Heat grill; grill chicken 4-5 minutes on 1st side, flip, continue cooking. Add cheese, cook until cheese is melted. Remove and set aside. Place sliced pineapple on grill and heat until caramelized, about 2 minutes per side. Place on top of chicken and add to buns. Top with red onion, jalapenos, and other desired topping.

2 tablespoons taco sauce
2 teaspoons honey
1/4 cup mayonnaise
4 boneless skinless chicken breast halves
1/2 teaspoon seasoned salt
4 pineapple slices (from 8-oz. can)
4 (1/2-oz.) slices Monterey Jack cheese
4 kaiser rolls, split
4 lettuce leaves

Steps:

  • Heat gas or charcoal grill. In small bowl, combine taco sauce and honey; mix well. To make mayonnaise mixture for rolls, in another small bowl, combine mayonnaise and 2 teaspoons of the taco sauce mixture; blend well. Refrigerate until serving time.
  • Sprinkle chicken breast halves with seasoned salt. Brush chicken with about 1 tablespoon taco sauce mixture.
  • When grill is heated, place chicken on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 10 to 12 minutes or until chicken is fork-tender and juices run clear, turning once or twice and brushing occasionally with taco sauce mixture. Discard any remaining taco sauce mixture.
  • Top each chicken breast half with cheese slice to melt. Place pineapple slices on grill; cook 2 minutes. To toast rolls, place cut side down on grill during last 30 seconds of cooking time.
  • Spread mayonnaise mixture on bottom halves of rolls. Top each with lettuce, cheese-topped chicken, pineapple slice and top half of roll.

1 bottle (18 ounces) sweet and spicy barbecue sauce, divided
2 tablespoons honey mustard
1 can (8 ounces) unsweetened crushed pineapple, undrained
8 hamburger buns, split and toasted
Optional: Bibb lettuce leaves and thinly sliced red onion

Steps:

  • Place chicken breasts in a 4-quart slow cooker. Combine 1/4 cup barbecue sauce and mustard; pour over chicken. Cover and cook on low 2-1/2 to 3 hours or until chicken is tender., Remove chicken; discard liquid. Shred chicken with 2 forks; return to slow cooker. Add crushed pineapple and remaining barbecue sauce; cover and cook on high for 15 minutes., Serve on toasted buns with lettuce and onion if desired. Freeze option: Place shredded chicken in freezer containers. Cool and freeze. To use, partially thaw in refrigerator overnight.   • Prepare the creamy basil sauce by blitzing the basil, mayonnaise, and powdered garlic in the bowl of a small food processor, or with an immersion blender, until smooth. Set sauce aside.
  • Heat grill to medium to medium-high heat. Make sure grates are scrubbed clean and then oiled. (To oil the grates, add some vegetable oil to a small bowl. Then fold a heavy paper towel a few times to make a smaller square. With a tongs, grasp the folded paper towel and dip it into the oil until the paper towel is drenched. Then run the paper towel over the grates, repeating until all grill grates are thoroughly oiled.)
  • Place each chicken breast in a sealable plastic baggie and pound as thinly as you can without breaking up the breast. Rub a little olive oil over both sides of chicken breasts and then season fairly generously, to taste, with salt and pepper.
  • When grill is heated, place pineapple spears on hot grates for just a minute or two on each side, or until nicely charred. Remove to a plate and set aside. If desired, place the cut side of the bread rolls on the hot grates to grill them for a bit, too. Oil grill grates again and place chicken breasts on the grates. Grill for just 2 to 3 minutes per side, or until nicely charred. The chicken is thin, so be careful to not overcook. Grilling time will depend on size of individual chicken breasts, so this may take more or less time. Pull the chicken off the grill and let it rest for a couple minutes, and then slice each breast in half to best fit each half on a bun.
